Carrot and Apple Pancakes #juicepulp #veganpancakes #veganpancake #veganbreakfast
Carrot & Apple Pancake Recipe
-Dry ingredients:
1 cup flour
1 TB sugar
1 TB baking powder
1/4 tsp baking soda
1/4 tsp cardamom powder
1 pinch salt
-Wet ingredients:
3/4 cup of non dairy milk
1/2 cup carrot & apple pulp or any fruit purée
1 TB vegan butter melted
1/2 lemon juiced
Oil for frying
Method: mix the dry ingredients then add the wet ingredients. Mix until just combined. Spray oil onto a frying pan. Allow it to heat up until medium low. You can test with a splash of water to see if it sizzles. Then spoon out the batter into the pan. I made 3 large pancakes. Once you see a lot of bubbles in the middle and dry edges flip and wait another 1-2 mins until you see the pancake rising and it’s easy to slide your spatula under. Then remove pancake from the heat and make additional pancakes until you’ve used all the batter. I served this with vegan butter and maple syrup. Enjoy!
