1 c Butter 1 c Sugar 2 Eggs 1 ts Vanilla 2 c Flour 1 ts Baking soda 1 ts Baking powder 1 c Sour cream (light or yogurt) 1/2 c Brown sugar 1/3 c Nuts 4 tb White sugar 1 ts Cinnamon 2 Apples, peeled & sliced Cream butter and sugar. Add eggs and vanilla. Add dry ingredients alternately with sour cream. Put half of batter in pan. Lay apple slices on batter and sprinkle 1/2 of topping over them. Add remaining batter and sprinkle topping on it. Bake in 350 oven 35-40 minutes.

Fall Apple Coffee Cake Recipe - Glen And Friends Cooking - Apple Streusel Cake Recipe Sometimes this is called an apple crumb cake recipe, or an apple streusel cake recipe; but most often around here it's called an apple coffee cake. Even though there is no coffee in a coffee cake; it's meant to be eaten with coffee or on a coffee break. Ingredients Crumb Topping 125 mL (½ cup) unsalted butter 375 mL (1½ cups) all-purpose flour 175 mL (¾ cup) brown sugar, packed 15 mL (1 Tbsp) ground cinnamon 1 mL (¼ tsp) coarse salt Cake 375 mL (1½ cups) all-purpose flour 5 mL (1 tsp) baking powder 2 mL (½ tsp) baking soda 1 mL (¼ tsp) coarse salt 6 Tbsp unsalted butter, softened 125 mL (½ cup) granulated sugar 2 eggs 150 mL (⅔ cup) sour cream 15 mL (1 Tbsp) lemon juice 5 mL (1 tsp) vanilla extract 2 apples, peeled, cored, and diced
Method: Make the crumb topping by melting the butter in a small pot over low heat. Add the flour, brown sugar, cinnamon, and salt; stir to combine and set aside. For the cake: preheat the oven to 180ºC (350ºF), and grease a 9-inch springform pan. Combine the flour, baking powder, baking soda, and salt in a mixing bowl. Cream the butter, and sugar together in a stand mixer. Cream in the eggs, one at a time, mixing on low speed until smooth. Then add the lemon juice, and vanilla. Beat in the flour mixture and the sour cream in alternating additions. Transfer about half of the batter to the springform pan and top with half the apple and half the crumb. Layer on the rest of the batter and top with the remaining apples and crumb. Bake for about 40 to 50 minutes, or until a tester comes out clean or with a few crumbs.

Caramel Apple Coffee Cake | Delish
The perfect excuse to eat cake for breakfast.
DIRECTIONS
1. Preheat oven to 350 degrees F. Butter and flour an 8 x 8” baking dish.
2. Make Batter: In a large bowl, combine 8 tablespoons of butter and sugar. Using a hand mixer, whip until light and fluffy. Add the egg and mix until smooth. Then add vanilla and sour cream and mix until evenly incorporated. Add 1 cup flour, baking soda, baking powder, cinnamon, and salt and mix until just combined. Fold in chopped apples.
3. Make Streusel Topping: In a medium bowl, combine remaining 4 tablespoons of butter with brown sugar and remaining 1/2 cup flour. Add a pinch of salt, if desired. Stir with a fork, or use your hands, to create large clumps.
4. Pour the batter into the prepared baking pan then top with streusel. Bake until the top is golden brown and a toothpick inserted into the middle of the cake comes out clean, 35 to 40 minutes. Drizzle with caramel sauce then let cool for about 10 minutes.
5. Serve warm or at room temperature.

A delicious cinnamon Apple Coffee Cake with a surprise layer of cream cheese filling, and a simple streusel crumb topping. Serve the cake with a side of coffee for breakfast, brunch, or even dessert.

Ingredients ???? ????Cake: ▢ 1/4 cup butter softened ▢ 3/4 cup light brown sugar ▢ 1 large egg ▢ 1/2 cup sour cream, or plain Greek yogurt ▢ 1 teaspoon vanilla extract ▢ 1 cup all-purpose flour ▢ 3/4 teaspoon ground cinnamon ▢ 1/2 teaspoon baking soda ▢ dash of salt ▢ 1 1/2 cups Granny Smith apples, peeled and diced
????Streusel Topping: ▢ 1/4 cup unsalted butter cold, diced ▢ 1/4 cup all-purpose flour ▢ 1/4 cup old-fashioned rolled oats ▢ 1/2 teaspoon baking powder ▢ 1/4 cup light brown sugar, packed ▢ 1 teaspoon ground cinnamon ▢ 1/4 cup chopped pecans, optional
???? Instructions ???? 1. Preheat oven to 350ºF and grease an 8x8 inch pan. 2. Streusel topping: Combine all the streusel topping ingredients in a small bowl. Mix with a fork, or your fingers, until the mixture resembles crumbs. Set aside. 3. Cake: In a large bowl beat together 1/4 cup butter and 3/4 cup brown sugar with an electric mixer until light and fluffy. Add egg, sour cream, and vanilla and mix to combine. 4. Stir flour, cinnamon, baking soda, and salt together in a bowl. Add to the butter mixture and stir to combine. 5. Fold apples into the batter. Pour batter into prepared baking dish and smooth into an even layer. 6. Cream cheese filling: Use electric mixers to mix together the cream cheese, sugar, and vanilla until smooth. Spread over the cake batter in the pan. 7. Sprinkle streusel topping over the cream cheese mixture. 8. Bake for 35 to 40 minutes. Cool in the pan for at least 10 minutes before serving.

LeGourmetTV Is Now Glen & Friends Cooking! Apples, cinnamon and orange juice give this Apple Bundt Coffee Cake a tangy flavour, and keep it super moist!
Ingredients: 2 cups (500 ml) apples - peeled, cored and diced 1 Tbsp (15 mL) sugar 1 tsp (5 mL) ground cinnamon 3 cups (750 mL) all-purpose flour 3 tsp (15 mL) baking powder pinch salt 2 cups (500 mL) sugar 1 cup (250 mL) vegetable oil ¼ cup (60 mL) orange juice 2½ tsp (12 mL) vanilla extract 4 eggs 1 cup (250 mL) chopped pecans (or walnuts) icing sugar for dusting
Method:
Preheat oven to 350ºF (170ºC). Grease a 10 inch Bundt or tube pan. In a medium bowl, combine the diced apples, 1 Tbsp white sugar and 1 tsp cinnamon; mix and set aside. Mix together the flour, baking powder and salt; set aside.
In a large bowl, combine 2 cups white sugar, oil, orange juice, vanilla and eggs. Whisk together until smooth. Stir in the flour mixture until smooth, then fold in the chopped pecans. Pour ⅓ of the batter into prepared pan, then sprinkle on ½ of the apple mixture. Repeat: more batter, more apples, more batter.
Bake for 55 to 60 minutes, or until the top springs back when lightly touched. Let cool in pan for 10 minutes, then turn out onto a wire rack and allow to cool completely. Sprinkle with icing sugar just before serving.
