Apple Coffee Cake Recipe | The Sweetest Journey
Learn how to make soft coffee cake topped with apple.
Ingredients:
2 Tablespoons Butter (28g)
2 Large Granny Smith Apples, Peeled & Diced (About 2 Cups)
2 Cups All Purpose Flour (240g)
2 1/2 Teaspoons Baking Powder (12.5g)
1/2 Teaspoon Salt (3g)
1/2 Cup Butter, Softened (112g)
3/4 Cup Sugar (144g)
2 Large Eggs
2 Teaspoons Vanilla (10ml)
2/3 Cup Milk (160ml)
Streusel Topping Ingredients:
3/4 Cup Flour (90g)
1/2 Cup Chopped Pecans (56g)
1/4 Cup Packed Light Brown Sugar (48g)
1/8 Cup Granulated Sugar (24g)
1 Teaspoon Cinnamon (3g)
1/4 Teaspoon Salt (1.5g)
1/4 Cup Melted Butter (60ml)
Directions:
1. In a saucepan, melt the 2 tablespoons of butter. Add the apples and stir to combine. Cook over medium heat until the apples are tender. Remove from heat and cool completely.
2. To make the streusel topping, stir together all ingredients in a bowl, until well combined. Let stand until the streusel crumbles into pieces. Set aside.
3. In a bowl whisk together the flour, baking powder, and salt. Set aside. In a mixing bowl, beat the butter at medium speed until creamy. Gradually add sugar. Add eggs, one at a time, beating just until combined. Stir in the vanilla. Add the flour mixture, alternating with the milk. Beat at low speed just until well combined.
4. Prepare a 9 inch springform pan with butter and dust with flour. Spoon batter into pan and smooth over top. Top with apples, then sprinkle with the streusel topping. Bake in a preheated oven at 350F for 45 minutes, cover loosely with aluminum foil, then continue to bake 25 to 30 minutes or until center is set. Cool in pan in a wire rack 30 minutes, then remove the sides of the pan and cool completely.

Apple Coffee Cake with Streusel
Apple Coffee Cake is the best breakfast or brunch recipe for fall – an Apple Cinnamon Cake with crumb streusel on top! This easy crumb coffee cake recipe is SO good.

INGREDIENTS
APPLES:
1 tablespoon Challenge Unsalted Butter (14g)
2 Granny Smith Apples (200g when cut, about 2 cups)
2 tablespoons (25g) granulated sugar
½ teaspoon cinnamon
CAKE:
¼ cup Challenge Unsalted Butter (57g), melted
¾ cup (150g) granulated sugar
1 large egg
½ cup (119ml) milk
1 ½ cups (186g) all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon cinnamon
STREUSEL:
¼ cup Challenge Unsalted Butter (57g), melted
1 cup (200g) packed brown sugar
2 tablespoons (16g) all-purpose flour
2 teaspoons cinnamon
INSTRUCTIONS
Preheat oven to 350°. Spray a 9- or 10-inch round cake pan or 10-inch round pie plate, or 9-inch square pan with nonstick cooking spray.
Peel, core, and slice apples into bite sized pieces.
Melt butter in a large skillet over medium heat. Add apples, sugar, and cinnamon. Cook for about 3-4 minutes, until the apple just starts to turn opaque, but is still white. Remove from heat to cool.
Whisk flower, baking powder, salt, and cinnamon together in a medium bowl. Set aside.
Stir ¼ cup melted butter with granulated sugar and egg in a large bowl. Stir in milk. Stir dry ingredients into wet and stir until just combined. Pour into prepared pan.
Sprinkled cooled apples evenly over the top of the cake batter.
Make the crumb topping: stir together brown sugar, flour, cinnamon, and melted butter. Sprinkle over apples.
Bake for 30-35 minutes until a toothpick comes out clean.
Store covered in the refrigerator for up to 4 days or freeze for up to a month.

Fall Apple Coffee Cake Recipe - Glen And Friends Cooking - Apple Streusel Cake Recipe
Sometimes this is called an apple crumb cake recipe, or an apple streusel cake recipe; but most often around here it's called an apple coffee cake. Even though there is no coffee in a coffee cake; it's meant to be eaten with coffee or on a coffee break.
Ingredients
Crumb Topping
125 mL (½ cup) unsalted butter
375 mL (1½ cups) all-purpose flour
175 mL (¾ cup) brown sugar, packed
15 mL (1 Tbsp) ground cinnamon
1 mL (¼ tsp) coarse salt
Cake
375 mL (1½ cups) all-purpose flour
5 mL (1 tsp) baking powder
2 mL (½ tsp) baking soda
1 mL (¼ tsp) coarse salt
6 Tbsp unsalted butter, softened
125 mL (½ cup) granulated sugar
2 eggs
150 mL (⅔ cup) sour cream
15 mL (1 Tbsp) lemon juice
5 mL (1 tsp) vanilla extract
2 apples, peeled, cored, and diced
Method:
Make the crumb topping by melting the butter in a small pot over low heat.
Add the flour, brown sugar, cinnamon, and salt; stir to combine and set aside.
For the cake: preheat the oven to 180ºC (350ºF), and grease a 9-inch springform pan.
Combine the flour, baking powder, baking soda, and salt in a mixing bowl.
Cream the butter, and sugar together in a stand mixer.
Cream in the eggs, one at a time, mixing on low speed until smooth.
Then add the lemon juice, and vanilla.
Beat in the flour mixture and the sour cream in alternating additions.
Transfer about half of the batter to the springform pan and top with half the apple and half the crumb.
Layer on the rest of the batter and top with the remaining apples and crumb.
Bake for about 40 to 50 minutes, or until a tester comes out clean or with a few crumbs.

Caramel Apple Coffee Cake | Delish
The perfect excuse to eat cake for breakfast.
DIRECTIONS
1. Preheat oven to 350 degrees F. Butter and flour an 8 x 8” baking dish.
2. Make Batter: In a large bowl, combine 8 tablespoons of butter and sugar. Using a hand mixer, whip until light and fluffy. Add the egg and mix until smooth. Then add vanilla and sour cream and mix until evenly incorporated. Add 1 cup flour, baking soda, baking powder, cinnamon, and salt and mix until just combined. Fold in chopped apples.
3. Make Streusel Topping: In a medium bowl, combine remaining 4 tablespoons of butter with brown sugar and remaining 1/2 cup flour. Add a pinch of salt, if desired. Stir with a fork, or use your hands, to create large clumps.
4. Pour the batter into the prepared baking pan then top with streusel. Bake until the top is golden brown and a toothpick inserted into the middle of the cake comes out clean, 35 to 40 minutes. Drizzle with caramel sauce then let cool for about 10 minutes.
5. Serve warm or at room temperature.
