How To make Apple Butter Cookies
1/4 c Butter or Margarine,
-softened 1 c Packed Brown Sugar
1 Egg
1/2 c Quick Cooking Oats
1/2 c Apple Butter
1 c All-purpose Flour
1/2 ts Baking Soda
1/2 ts Baking Powder
1/2 ts Salt
2 tb Milk
1/2 c Nuts, chopped
1/2 c Raisins
In a mixing bowl, cream butter and sugar. Beat in egg, oats, and apple butter. Combine dry ingredients; gradually add to creamed mixture along with the milk; beat until blended. Stir in nuts and raisins. Chill well. drop by teaspoonfuls onto a lightly greased cookie sheet. Bake at 350 degrees for 15 minutes. NOTE: Freeze baked cookies in tins or freezer bags for the months ahead. -----

Cookie Recipe:
1 1/2 Cup of butter browned
1 1/4 cup brown sugar
2 large eggs
1 1/2 tsp Baking Powder
1 tablespoon vanilla extract
3 cups of flour
roll cookies into a ball about 1 inch in diameter. Roll in a mixture of sugar and apple pie
spices. Flatten cookies with a glass and bake in a 350* oven for 8-10 mins until the outside looks golden brown and the middle looks a little under done.
Move to wire rack to cool completely. These can be stored in an airtight container for
up to 2 weeks.

1/4 cup unsalted butter, room temperature
1/2 cup apple butter (I made mine from scratch)
1 cup Dixie Crystals Extra Fine Granulated Sugar
1 egg
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 3/4 cups all-purpose flour*
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/2 cup Cinnamon Sugar
Preheat oven to 375°F.
Bake 13-15 minutes. Move baked cookies to wire rack to cool.

Small Batch Apple Butter:
1 1/2 pounds apples peeled, cored, and sliced
3 tablespoons granulated sugar
3 tablespoons brown sugar
1/2 tsp cinnamon
1/8 nutmeg
Pinch of allspice
1 tsp lemon juice
1/2 tsp vanilla extract
1. Place the peeled, cored, and sliced apples in to a slow cooker.
2. Add the remaining ingredients to the slow cooker and stir well.
3. Cover and cook on LOW for 8 hours or on HIGH for 4 hours, stirring occasionally.
4. After cooking, transfer the apples to a bowl and let cool before using a blender to puree until smooth.
6. Place in the refrigerator and enjoy!

Apple Butter Cookies:
3 cups all-purpose flour
2 tsp baking powder
1/8 tsp salt
3/4 cup butter, softened
1 1/4 cup granulated sugar AND 1/3 cup on the side
2 large eggs
1 tablespoon vanilla extract
1/2 apple butter
1/2 tsp cinnamon AND 1 tsp on the side
1. Whisk flour, baking powder, and salt in a medium bowl. Set aside.
2. Cream butter and 1 1/4 cups sugar in a mixer until fluffy. Mix in eggs, vanilla, 1/2 tsp cinnamon, and apple butter. Beat until just mixed.
3. Slowly add in flour mixture in parts and mix until just combined.
4. Chill dough for at least 4 hours.
5. Preheat oven to 350F and line a cookie sheet with parchment paper.
6. Combine 1/3 cup sugar and 1 tsp of cinnamon in a small bowl.
7. Scoop balls of cookie dough and roll in the cinnamon sugar mixture. Place on the cookie sheet.
8. Bake cookies for 11-12 minutes for slightly underdone or 13-14 minutes for fully done. Cool and enjoy!
