Baked Apple Fritters
Today I'm going to show you how to make healthy apple fritters.
These baked apple fritters are better for you than traditional which is deep fried in oil.
It is healthier version, but still really soft and full of apple flavor.

BAKED APPLE FRITTERS RECIPE
(makes 15 fritters)
Ingredients:
1/2 cup ground oats or oat flour (50g)
1/2 cup spelt flour, or whole wheat flour (65g)
1/4 cup rice flour (35g)
1/4 cup tapioca or cornstarch (35g)
1 tsp cinnamon powder
2 tsp baking powder
1/4 tsp salt
3 tbsp maple syrup, agave or honey
2 tbsp unsweetened applesauce
1 tsp vanilla extract
1/2 cup Greek yogurt (110g)
1 egg
2 large apples, diced
NUTRITIONAL INFO (per fritter):
81 calories, fat 0.8g, carb 16.6g, protein 2.3g
Preparation:
In a bowl combine oat flour, spelt flour, rice flour, cornstarch, cinnamon, baking powder and salt.
In another bowl mix together sweetener of your choice, applesauce, vanilla extract, Greek yogurt and egg yolk.
Beat the egg white until stiff peaks form.
Pour the dry ingredients into the wet ingredients and mix just until combined. Gently fold in the egg white.
Peel and dice the apples, and gently stir into the batter. Let it sit in the fridge for 15 minutes.
Scoop the batter using a cookie scoop (2 tbsp size) and plop the batter onto a baking sheet lined with parchment paper. Do not flatten the tops.
Bake at 400F (200C) for 15 minutes. After 10 minutes of baking brush the fritters with some melted butter, and place back in the oven until slightly browned.
Serve with glass of cold milk or your favorite healthy drink.

- 1 Large Pink Lady Apple
- 1 Cup Self Rising Flour
- 2 tbsp white sugar
- 5,5 ounces of yogurt
Cinnamon Sugar
- 3 Tablespoons White Sugar
- 1/2 tsp Cinnamon
Peel and cut the apple into thin wedges.
To a large food processor add the apple and yogurt and process until the apple is completely shredded and well blended with the yogurt.
Add the yogurt apple mixture to the self rising flour and using a spatula mix until well combined but don't over mix.
Transfer this mixture into a piping bag fitted with a large round tip and snip off the end.
The donut dough/batter should look loose.( Check the video for consistency) If the batter looks too dry, you can add a splash of milk.
Transfer the mixture into a piping bag fitted with a round tip.
Bring the oil to 170 °C (340 °F) and fry the fritters in batches until golden.
Toss the fritters in the cinnamon sugar and drizzle the glaze on top.
Glaze
Mix together 4 tbsp of powdered sugar, 1/2 tsp vanilla and a splash of milk. For a thinner glaze add more milk. For a thicker glaze add less milk or more powdered sugar.
Tips:
You can make self rising flour yourself. You'll need 1 cup of flour, 1 1/2 tsp of baking powder and 1 /4 tsp of salt.

Easy and perfect for a delicious snack!
INGREDIENTS
1 apple
1 egg
A pinch of salt
25g (2 tbsp) of sugar
125g (1/2 cup) of vanilla yogurt
1 orange (zest)
40ml (3 tbsp) of vegetable oil
250g (2 cups) of flour
5g (1 tsp) of baking powder
Oil for frying
Sugar
Cinnamon
METHOD
In a bowl add the egg, salt, and sugar, and mix until the sugar dissolve. Add the vanilla yogurt, orange (zest), and oil and mix again.
Cut the apple into small chunks and add them to the mixture. Mix all and add the flour, and baking powder and mix until dough is created. Knead the dough with your hands to combine it all well.
Oil the hands and create the fritters. Add the fritters into deep hot oil and fry until they are golden brown.
Mix the sugar and cinnamon and coat each fritter.
