How To make Any Fruit Coffee Cake
4 c Apples, apricots, peaches, 1 ts Ground cinnamon
-chopped pineapple 1/4 ts Mace -or whole blueberries 1 c Butter 1 c Water 2 Eggs, slightly beaten
2 tb Lemon juice 1 c Milk
1 1/4 c Sugar 1 ts Vanilla
1/3 c Cornstarch 1/2 c Sugar
3 c All-purpose flour 1/2 c All-purpose flour
1 c Sugar 1/4 c Butter
1 tb Baking powder 1/2 c Walnuts, chopped
1 ts Salt
Preheat oven to 350 degrees. In a saucepan, combine choice of fruit and the water. Simmer, covered, about 5 minutes or until fruit is tender. Stir in lemon juice. Mix the 1 1/4 cups sugar and cornstarch; stir into fruit mixture. Cook and stir
until thickened and bubbly. Cool. In a mixing bowl, stir together the 3 cups flour, 1 cup sugar, baking powder, salt, cinnamon, and mace. Cut in the 1 cup butter until mixture resembles fine crumbs. Combine eggs, milk, and vanilla. Add to flour mixture, mixing until blended. Spread half of the batter into a greased 9x13 baking pan or two 8x8 baking pans.
Spread the cooled fruit mixture over the batter. Spoon the remaining batter in small mounds over the fruit mixture, spreading out as much as possible, Combine the 1/2 cup sugar and 1/2 cup flour; cut in the 1/4 cup butter until mixture resembles coarse crumbs. Stir in nuts. Sprinkle nut mixture over batter in pan. Bake 45-50 minutes for a 9x13 pan or 40-45 minutes for the two 8x8 pans, or until cake tests done. Cool. Classic Homemade Coffee Cake Recipe
This delicious easy-to-make classic homemade coffee cake recipe is the perfect sweet treat to serve up for breakfast or brunch. I make mine extra thick with extra streusel for the most delicious coffee cake ever.
Coffee cake has been around for generations and is said to have originated in Dresden, Germany. The Danish however was responsible for enhancing the cake to make it sweet and introduced eating it with coffee.
This simple to make cake is one of my favorite things to enjoy with coffee in the morning time as it can balance out the flavors of sweet cake with bitter coffee, much like how you enjoy beignets with chicory coffee.

Ingredients for this recipe:
For the Filling Layer:
• 1 cup packed light brown sugar
• ½ cup all-purpose flour
• 2 teaspoons ground cinnamon
For the Streusel:
• 1 stick of unsalted butter
• 3/4 cup all-purpose flour
• 1 1/2 cups packed light brown sugar
• 2 teaspoons ground cinnamon
• ¼ teaspoon sea salt
For the Cake Batter:
• 2 sticks unsalted butter
• 1 1/4 cups sugar
• 1 tablespoon vanilla
• 5 large eggs
• 3 ½ cups all-purpose flour
• 2 teaspoons baking powder
• 1 teaspoon salt
• 1 ½ cups whole milk

How to Make Coffee Cake - Moist Cake Recipe
Soft, fluffy cake with a gooey cinnamon center and golden, buttery crumble. 3 layers of decadence that pairs perfectly with coffee or tea and served as breakfast, snack or dessert.

Ingredients
1½ c unbleached flour
2 ts baking powder
½ ts fine salt
¼ c canola/veggie/coconut/grape seed oil
½ c brown sugar
1 ts vanilla extract
1 room temperature egg
¾ c whole or buttermilk
Filling
½ c brown sugar
1½ ts cinnamon
Crumble
⅓ c unbleached flour
½ c sugar
¼ ts fine salt
¼ c unsalted, softened butter
¾ ts cinnamon
Instructions
In the first bowl, sift together the flour, baking powder, and salt.
In the second bowl, whisk together the oil, sugar, vanilla, egg, and milk until foamy.
Slowly combine the 2 bowls {sprinkle the first/dry bowl in thirds into the second/wet bowl. Do not over mix}
In a greased cake pan, spoon in half the batter.
Sprinkle with the brown sugar and cinnamon mixture and spread the rest of the batter evenly on top.
To make the crumble, combine everything together {it's important that the butter be soft} and dot generously on top of the cake.
Bake at 350 for 17-21 minutes.
Cool and allow to set before slicing/serving.
