Mix together:
2 1/4 tsp active dry yeast
2 TBS warm water
Let sit for about 10 minutes until bubbles form on the top.
Mix together:
1 cup flour
1 cup sugar
1 cup milk
Add the yeast and stir. Leave out on your counter or somewhere where you will remember to do the rest of the steps. Do not store in refrigerator!!

You may well remember the Amish friendship bread your mom and her friends made and passed around to each other growing up, resulting in delicious sweet, baked confections that you would look forward to any time you saw the infamous starter in action. For those of you that aren’t familiar with Amish friendship bread, we’ll break it down for you: typically, this is a bread that’s based on an easy, sweet, sourdough starter.
What makes it a friendship bread is that you can easily make the starter, then, once it’s ready, pass it on to friends who can make their own friendship breads with starters they can also give to friends. It’s a tasty, beautiful reminder of the fact that food really can bring people together.

My Gluten Free Flour Mix
Today I am going to show you how to make Gluten Free Amish Friendship Bread!
I have 2 different versions of this bread, one is using a sourdough starter and instant vanilla pudding, and the other is made without!
Both versions are delicious! And both make 2 loaves of bread!
The story behind this bread is that you are given a starter in a plastic bag, along with instructions and the recipe. When it is time to make the bread, you divide up the starter and share with friends and family.
I chose to use my own sourdough starter. I also use Butter instead of Oil, and my own homemade instant pudding mix.
This recipe makes 2- 8x4 loaves or a bundt pan.

~Homemade Instant pudding mix:
3/4 cup Dry milk powder
3/4 cup Cornstarch
1 cup Coconut Sugar {1 cup White Sugar}
1 tsp Salt
Mix all ingredients. Store in an airtight container.
To make pudding:
Combine 1/2 cup of the mix with 2 cups Milk. Heat in a saucepan over medium heat. Bring to a boil. Continuously stirring until thickened. Remove from heat and stir in 1 tsp Vanilla or other flavoring.

~Other sourdough starter:
1 pkg. Active dry Yeast (not quick rising yeast)
2 1/2 cups warm Water (105-110 degrees)
2 cups Flour
1 Tbsp Sugar
Dissolve yeast in the water. Add in the flour and sugar. Stir well. Cover with cloth and let stand at room temperature for 5-10 days until the mixture has a fermented aroma. Stirring 2-3 times a day.
Once ready, divide the mixture into 1 cup portions in a gallon zip top plastic bag. Share or freeze for later use.
For the bread recipe use 1 cup.
~Instructions for the starter you are given or share with others:
(These instructions are for using regular flour. I have not tried this method with GF flour)
Do not use a metal spoon or bowl
Do not refrigerate
If air is in the bag, let it out
The batter with thicken, bubble and ferment
Day 1- Place bag on counter and do nothing
Day 2-5- Squeeze the bag several times
Day 6- Add 1 cup Flour, 1 cup Sugar, and 1 cup Milk. Squeeze the bag several times.
Day 7-9- Squeeze the bag several times
Day 10- In a large bowl, combine the starter with 1 cup Flour, 1 cup Sugar, and 1 cup Milk. Mix well with a wooden or plastic spoon. Pour four-1 cup starters into one-gallon zip top plastic bags. Give away to friends or family with instructions and recipe.
** I have not made the 'other' sourdough starter using GF flour. I have only used my GF sourdough starter for this bread.
~ GF Amish Bread with sourdough starter and pudding:
Cinnamon Sugar- for coating pans and dusting top of bread:
1/2 cup Coconut Sugar {1/2 cup White Sugar}
1 tsp Cinnamon
For the Bread:
2 cups GF Flour
1/2 tsp Salt
1/2 tsp Baking Soda
2 tsp Cinnamon
1 cup Butter
1/2 cup Honey {1 cup Sugar}
4 Eggs
1 1/2 cups Sourdough Starter
2 tsp Vanilla
1/2 cup dry Pudding mix OR 1 large box instant Vanilla Pudding
1/2 cup Milk
Oven 325 F. Grease 2- 8x4 loaf pans. Dust the pans with some the cinnamon/sugar mixture. Bake for 1 hour or until a toothpick comes out clean. Cool completely in pans.
~GF Amish Bread without sourdough and pudding:

How to Make Amish Friendship Bread

Regardless of your religious affiliations, you can enjoy delicious Amish Friendship Bread and strengthen your friendships at the same time.
Step 1: Get starter
Make an Amish Friendship Bread starter, or get one from another baker.
Step 2: Knead the starter and add ingredients
Knead the bag of starter once a day on the second, third, fourth, and fifth days after you make or get it. On the sixth day, open the bag and add 1 cup each of the flour, sugar, and milk. Then reseal the bag and knead it to mix everything together.
Step 3: Knead again
Knead the mixture in the bag twice a day on the seventh, eighth, and ninth days. On the 10th day, transfer the mixture to a ceramic, wooden, or plastic bowl and add another cup each of flour, sugar, and milk. Mix it up with a non-metal utensil and divide it into three equal batches, sealing two in separate plastic bags to give to friends.
Step 4: Add oil, eggs, milk, and vanilla
Preheat your oven to 330 degrees Fahrenheit and add the oil, eggs, the remaining 1/2 cup milk, and vanilla extract to the bowl. Mix it thoroughly and set the bowl aside.
Tip
Instead of 1 cup oil, you can use 1/2 cup oil and 1/2 cup applesauce.
Step 5: Mix the batter
Mix the remaining flour, 1 cup of sugar, the baking powder, 2 teaspoons of cinnamon, the salt, baking soda, pudding, and nuts in a separate, non-metallic bowl. Add the mixture to the starter, stir it until everything is combined, and then divide it between the two loaf pans.
Tip
You can substitute almonds for walnuts.
Step 6: Sprinkle cinnamon and sugar over batter
Mix the remaining sugar and cinnamon and sprinkle it evenly over the batter. Transfer the pans to the oven and bake the bread for one hour. Let the loaves cool for 15 minutes, remove them from the pans, and enjoy your Amish friendship bread.

Day 1: The day you make the starter. If you already have the starter do nothing but consider it day 1.
Day 2: Do nothing!
Day 3: Stir
Day 4: Do nothing!
Day 5: Do nothing!
Day 6: Add 1 cup flour, 1 cup sugar, 1 cup milk. Stir.
Day 7: Do nothing!
Day 8: Stir
Day 9: Do nothing!
Day 10: Baking day!!
Separate the mixture into 3 bowls. You should have approximately 1 cup in each bowl.
Set two of them aside to either use for your next batches of bread or give to a friend with the recipe!!
In a large bowl combine:
One of the cups of starter
1 cup vegetable oil
1/2 cup milk
3 eggs (beaten)
1 tsp vanilla extract
Stir these ingredients together and set aside.
In a smaller bowl combine dry ingredients:
1 cup flour
1 cup sugar
1 1/2 tsp baking powder
1 TBS cinnamon
1/2 tsp salt
1/2 tsp baking powder
Two packages of 3.4 oz instant vanilla pudding (or 1 large package)
Add dry ingredients to wet ingredients in thirds, mixing between additions.
Grease 2 large loaf pans. Split the batter between the two pans and sprinkle the top with a mixture of 1 TBS sugar and a few shakes of cinnamon.
Bake in a preheated 325 degree oven for 1 hour. (I start checking at 50 minutes. When a toothpick inserted in the center comes out clean the bread is done!)

Amish Friendship Bread
A wonderfully moist, yeast baked cake or bread, made with starter dough. The starter dough can also be shared with friends, hence the name. It takes 10 days to make the cake, but it is so worth it.
