6 Lbs. LEAN GROUND BEEF
2 Tsp. SAGE
3 Tsp. SALT
1 1/2 Tsp. FRESHLY GROUND BLACK PEPPER
1 Tsp. CAYENNE
3 C. brEAD CRUMBS
4 Tbsp. PARSLEY -- CHOPPED
2 BEATEN EGGS
1 C. WATER
MIX ALL INGREDIENTS THOROUGHLY AND STUFF INTO HOG CASINGS. PUT INTO BOILING WATER, BEING SURE TO COVER COMPLETELY WITH WATER, AND BOIL FOR ABOUT 1/2 HOUR. TAKE FROM POT AND ALLOW TO COOL, THEN REFRIG- ERATE. TO SERVE, CUT MEAT INTO THIN SLICES AND brOIL SLOWLY UNTIL brOWN ON ALL SIDES.

Homemade Sausage - MUST Know Beginner Tips BEFORE You Mix & Stuff
Know these tips before making homemade sausage!
Getcha Some APC BBQ Rubs Here:
1. Make sure your workspace faces a TV if its game day lol
2. The right tools make the job much easier and quicker
3. Freeze the grinder parts for at least 20 minutes to an hour
4. Cut the meat into small chunks that fit the grinder throat
5. Drop meat and fat intermittently for a better blend
6. Weight the meat and use the right amount of seasoning
7. Natural hog casings are better than collagen casings
8. Lubricate the barrel before putting casings on it
9. Run water through casings and soak the for at least an hour
10. Twice each consecutive link opposite
11. Patience and pay attention
12. Cutting in-between links makes for easier storing

In this video we make what the book calls a traditional fermented American style Cervelat also knows as a traditional American Summer Sausage. In the book it says this sausage can go by many names summer sausage Cervelat or Thuringer.
This version of the recipe is missing some of the staples we see in fully cooked summer sausage mainly the yellow mustard seed. Overall great sausage though.

Most BBQ joints make the same old boring jalapeno cheddar sausages. Maybe we can change this.
