How To make Almond Tea Jelly
4 oz (1/2 cup) ground almonds
2 tb (2 1/2 T) ground rice
1/2 pt (1 1/4 cup) milk
2 tb (2 1/2 T) sugar
1 ts Gelatin
Here are a couple of recipes for almond pudding. There are lots of variations of this dish some using dairy products, some using gelatin and some using agar agar and some combining them. It IS good! This first one is more "from scratch". The second uses almond extract. Mix the almonds and rice in a bowl with 2 pints (5 cups) cold water, cover and leave for 2 hours. Strain through a fine muslin into a large bowl. Add milk and mix well. Stand the bowl in a large saucepan with enough boiling water to come halfway up the sides of the bowl. Cover and simmer for 2 hours, stirring occasionally. Add the sugar, stir well and leave to cool slightly. Mix the gelatin with 2 tablespoons (2 1/2 T) hot water until dissolved. Stir into the milk mixture when almost cold. Mix well and pour into a shallow serving dish. Leave until set. Coffee Jelly for Bubble Tea & Desserts | made with Starbucks VIA packets
Here's how to make coffee jelly 2 ways. It's an easy recipe if you want to have coffee jelly for bubble (milk) tea drink add-ins or as a plain dessert. Coffee jelly in drinks are very popular in Asia and can be used instead of BOBA.
Ingredients:
-2 Starbucks VIA coffee packets
-2 cups of boiling water
-3 Tablespoons, brown sugar
-2 packets of Knox Gelatin
I recommend using DECAF coffee so you don't stay up all night ; )

Ingredients:
1 tea bag Prince of Peace American Ginseng Root Tea
⅔ cup hot water
2 ½ tbsp white grass jelly powder
1 ¼ tbsp granulated sugar
⅓ cup almond milk
Directions:
1. Add 2/3 cup hot water to 1 tea bag of Prince of Peace American Ginseng Root Tea in a cup and let steep for 5-6 minutes.
2. Transfer the tea to a pot and bring to a boil.
3. Once it is hot, add in white grass jelly powder and granulated sugar and stir until dissolved.
4. Pour mixture into a heat resistant glass and cool for 10 minutes, then place the glass in the refrigerator.
5. Leave the jelly in the refrigerator for 4 hours or overnight.
6. When you are ready to serve, take the jelly out of the fridge and add in ⅓ cup of almond milk.
7. Stir to break the jelly into smaller pieces and enjoy with a straw or spoon.
Special Note:
1. If you don’t have white grass jelly powder, you can substitute it with Gelatin powder. However, the texture will be different.
2. You can use any kind of milk, but I find that almond milk is most suitable as it has a slightly nutty taste without overpowering the ginseng flavor.
3. If you would like something sweeter, feel free to increase the amount of sugar in the jelly.
4. Please use heat and shock proof glassware and prevent thermal shock.
