How To make Ajvar (Roasted Peppers and Eggplant)
Ingredients

red new mexican chiles, fresh
4
medium
eggplants
3/4
cup
olive oil, or corn oil
1
large
onion, minced
3
cloves
garlic, chopped
2
tablespoons
lemon juice
2
tablespoons
red wine
1
salt, to taste
1
pepper, to taste
1
parsley, for garnish
Directions:
Roast the peppers and eggplant over charcoal or gas flame, or bake in a preheated oven at 475 degrees F until the skins are blistered and black.
Place the roasted vegetables in a paper bag and let them steam in their own heat for 10 minutes. Peel off and discard the burnt skins along with the stems and seeds.
Mash the pepper and eggplant pulp together to form a homogeneous mass, either smooth or slightly chunky, as desired.
Heat 3 tablespoons oil in a large skillet and saute the onion until very soft. Add the garlic and cook 2 minutes longer. Remove from heat and stir in the pepper, eggplant pulp, mixing well.
Slowly drizzle remaining oil into the mixture, stirring constantly to incorporate all the oil.
Add lemon juice and vinegar, salt and pepper to taste.
Transfer to a serving bowl and garnish with parsley.
Serve as an appetizer spread on thick slices of country-style white bread, or flat pita bread, or use as a side dish to accompany grilled or roasted meats.

The ajvar recipe I promised you is here and it's a roasted red peppers and eggplant dip which goes perfectly with cevapi or just on toasted bread. This dip is usually made in large quantities then jarred and can be used for a long time, I didn't jar mine since we were eating it right away. If you do try this out and want to jar it, make sure to use sterilised jars and just before closing them add another layer of oil on top just as a preservative and ajvar is known to be stored like that. Also I chopped them after peeling but if you have no time throw them into a food processor with the garlic and give it a good blitz and you're good to go. AJVAR | Best Summer Dip With Grilled Red Pepper & Eggplant
We are making AJVAR, another delicious spread from two of the blessed summer veggies red peppers and eggplants! With grilling the veggies and bringing all the flavors together it is packed in flavor, surely a wonderful company as a dip or spread for breakfast.
Ingredients For Ajvar:
1 kg. eggplant
1 kg. capia red peppers
2 onion
3 cloves of garlic
about 5-6 tbsp olive oil
about 1-2 tbsp grape vinegar
hand blender or food processor to puree (If you don't have it, make sure to chop it finely after grilling and skinning)
