How to Make A Moist 7UP CAKE from a BOX CAKE MIX with a Homemade LEMON GLAZE using Easy baking hacks

Bump up that yellow cake mix into a soft, moist and airy 7UP lemon box cake. This makes a delicious homemade cake, drizzled with a homemade lemon glaze as well!

Ingredients Used
1 yellow box cake mix
1 (3.4 oz) pack of instant Lemon pudding
4 eggs @ room temperature
2/3 cup vegetable oil
1 cup cold 7UP
1 tsp fresh lemon zest
1 -2 tsp freshly squeezed Lemon juice
1 tsp pure vanilla extract
For the glaze
1 cup powdered sugar
1 Tbsp freshly squeezed lemon Juice
1-2 Tbsp cold whole milk
1 tsp pure vanilla extract
Mix all ingredients and follow the box instructions for mixing. Bake at 350 F for about 35-36 minutes if using a bundt pan like I do. A toothpick inserted should come out clean!
Allow cake to cool down completely. Mix ingredients for the glaze and drizzle the yummy glaze all over the cake. Allow it to set before serving. Enjoy!

7 Up Pound Cake
Ingredients I used:
1-1/2 cups butter, softened
3 cups sugar, (Domino)
5 large eggs, room temperature
2 tablespoons lemon juice, room temperature
1 teaspoon pure vanilla extract & pure lemon extract
3 cups Gold Medal all-purpose flour, sifted
3/4 cup 7-UP soda, room temperature
Baker’s Flour Cooking Spray
For Glaze:
1-1/2 cups confectioners' sugar
1 tablespoon lemon or lime juice,
1 to 2 tablespoons 7UP soda
1/2 teaspoon grated lemon or lime zest, optional
Preparations:
Preheat oven to 350°. Grease and flour (or use Baker’s Joy cooking flour spray), in a 10-inch fluted or plain tube pan. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in lemon juice, vanilla extra and lemon extract. Add flour alternately with 7UP, beating well after each addition. Transfer batter to prepared pan. Bake until a toothpick inserted in center comes out clean, 65-75 minutes. Check after 55 minutes because ovens may vary. Cool in pan 20 minutes before removing to a wire rack to cool completely.
For glaze, in a small bowl, mix confectioner sugar, lemon juice and enough 7UP to reach desired consistency. Add more confectioner sugar if you like glaze thicker. If desired, stir in zest of a lemon. Drizzle over cake.

My grandmother gave me this recipe for 7-Up Cake with Pineapple Topping back in the 1980's. It is such a refreshing and delicious cake and SO easy to make. 7-Up Cake with Pineapple Topping:
1 box pineapple or yellow cake mix (I prefer pineapple)
3 large eggs
3/4 c vegetable or canola oil
1 box instant vanilla pudding mix (small)
1 bottle(7 oz size) 7-up
Note: since I'm unable to find this size, I just measure out 7 ounces, which is 1cup minus 2 tablespoons.
TOPPING:
1 can(s) crushed pineapple (20 oz) undrained
2 Tbsp flour
2 large eggs
1 1/2 c sugar
1/2 c butter
1 cup flaked coconut (optional)
