How To make 1995 3rd Place: Christmas Rocks
3 c All-purpose flour
1 tb Unsweetened cocoa
3/4 ts Baking soda
1 ts Cinnamon
1 ts Mace
1 ts Nutmeg
1/2 ts Ground ginger
1/2 ts Allspice
1/4 lb Candied pineapple
1/4 lb Citron
1/4 lb Candied orange peel
1/4 lb Pitted dates
1/4 lb Figs
1/4 c Dried or candied cherries
1 lb Chopped pecans
1 c Raisins
1/2 c Dried currants
1 c Unsalted butter, softened
1 1/2 c Sugar
3 Eggs
1 tb Cold, strong coffee
1. Heat oven to 350 degrees. Have ready ungreased or parchment-lined
baking sheet(s). Sift together the flour, cocoa, baking soda and spices. Cut candied fruits, dates and figs into small pieces and toss with a small amount of the flour mixture. Combine in a large bowl with the pecans, raisins and currants. Set aside. 2. Beat butter and sugar in large bowl of electric mixer on high
speed until light, about 2 minutes. Add the eggs, one at a time, mixing well after each addition. Mix in the coffee. Stop the mixer and add the flour mixture. Mix on low speed just until combined. Using a wooden spoon, fold in the fruit and nut mixture to coat all the pieces. 3. Drop batter onto baking sheet in walnut-size mounds leaving about
2 inches between each cookie. Bake until set and tops are lightly
browned, 14 to 16 minutes. Transfer to a wire rack to cool. Store in an airtight container, with a small wedge of apple to keep them soft. INGREDIENTS
1 STICK OF ROOM TEMPERATURE SALTED BUTTER (100GM)
1/2 CUP SUGAR (100GM)
1 TSP BAKING POWDER
1/2 TSP VANILLA EXTRACT
2 CUPS OF ALL PURPOSE FLOUR
1/2 CUP OR AS REQUIRED MILK TO KNEAD A SOFT DOUGH
RED COLOR TO DYE DOUGH
YOU WILL NEED 23 LARGE SOFT DATES
FOR EGG WASH YOU NEED 1 EGG YOLK
ADD 3 TSP WATER AND MIX IT
PREHEAT OVEN AT 350˚F (180˚C)
BAKE IT FOR 15 MINUTES
DATE ROLLS MAY BE SOFT WHEN YOU TAKE OUT FROM OVEN BUT
ONCE COOL THE OUTER COVER WILL TURN HARD

Recipe Test: Holiday Dinner Rolls
Jill’s rolling in the dough today! Pun intended. She’s testing a no-knead bread recipe and hoping it produces tender dinner rolls you can make this holiday season. Cross your fingers and come cheer her on. :D
RECIPE SHE’S TESTING:
Holiday Dinner Rolls
Makes ? dozen rolls
3 cups lukewarm water
1/2 cup sugar
1 tablespoon active dry yeast
2 1/2 teaspoons sea salt
5 1/4 cups all-purpose flour
1 cup potato flakes
1/4 cup tapioca starch or cornstarch
In a 6-quart container mix all the ingredients together with a spoon or your hand until no patches of dry flour remain. Cover loosely with lid. Leave it on the counter for 2 hours, then store in the fridge until ready to use it.
On baking day, you can divide the dough to shape into a Challah braid, knot-rolls, or round, smooth rolls.
Bake in a preheated oven at 350ºF (177ºC) for 35 minutes, or until golden brown.
When you pull them out of the oven, use a pastry brush to spread them with your favorite vegan buttery spread. This keeps the crust tender.
If you want an oil-free crust with a slightly salty taste, make the following oil-free wash.
1/2 cup water
1 teaspoon tapioca starch or cornstarch
1/2 teaspoon sea salt
Bring to a boil on the stovetop, constantly stirring, until water is no longer cloudy. Allow cooling slightly. Use a pastry brush to brush wash onto hot rolls as soon as you pull them from the oven.
