I'm so excited to share my latest soup obsession with you - this soup is food for the soul! It's a meatball and vegetable soup (very similar to albondigas, which is a Mexican meatball soup).
My meatball soup is packed with homemade, grass-fed meatballs, beef bone broth, cabbage, carrots, zucchini, and lots of delicious spices. I promise you, healthy comfort food has never tasted so good.

MEATBALL & VEGETABLE SOUP RECIPE
MEATBALLS
2 pounds grass-fed ground beef*
2 eggs
1 cup cauliflower rice
1/3 cup cilantro
1 teaspoon sea salt
1/2 teaspoon black pepper
1 tablespoon garlic powder
2 teaspoons onion powder
1 teaspoon dried oregano
SOUP
1 tablespoon extra virgin olive oil
1 onion, chopped
4 cloves garlic, chopped
1 cup diced tomatoes
1 teaspoon dried oregano
8 cups beef broth
4 carrots, peeled and sliced into rounds
1 small cabbage, cut into chunks (8-10 cups)
2 zucchini, cut into quarter moons
*optional (but recommended!)
1/4 cup fresh cilantro
1/2 lime, juiced
MEATBALLS
In a large bowl, combine ground beef, eggs, cauliflower rice, cilantro, salt, pepper, garlic powder, onion powder, and oregano. Add all meatball ingredients to a large bowl and combine well.
Scoop a heaping tablespoon of the mixture into your palms, and roll into 1-2 inch meatballs (I get about 40 meatballs). Set aside.
SOUP
Heat olive oil in a large Dutch oven, add in onion with a pinch of salt, and cook for 5-7 minutes or until softened and translucent. Add in garlic and tomatoes, oregano, and another pinch of salt and pepper and cook for another 4-5 minutes.
Add in broth, bring to a boil and reduce back down to a simmer. Carefully add meatballs and simmer for 12-15 minutes. Add in carrots, cabbage, and zucchini and simmer for 30 minutes or until all the veggies are tender.
Adjust seasonings and finish with fresh lime juice and a big handful of fresh chopped cilantro.

Hearty Meatball Stew
Below is the recipe for Hearty Meatball Stew as well as a link to my video for the Foccacia Bread that I serve with my Stew.
Hearty Meatball Stew:
1 pound Ground beef
make a basic meatballs using:
Breadcrumbs
Eggs
Parmesan Cheese
Chopped Garlic and Onion
Worcestershire Sauce
Italian seasoning
Parsley
Salt and Pepper and any other spices to your taste
When your forming your meatballs:
Have some cubed up chunks of Cheddar Cheese
Place 1 cube of cheese in each meatball (roll)
and bake in the oven 350*
Approx. 30minutes or until done.
In the meantime in a large pot:
Saute in Olive Oil
1 Small chopped onion..then add chopped garlic
cook until onion start to get a nice color
1 can Tomato Soup
Add 2 cups water
1-2 tsp of Beef Base
Simmer to dissolve Beef Base
Add:
Thyme
Italian Seasonings
Parsley
Salt & Pepper
Add Baby Carrots
And Meatballs
Bring to a boil..lower to a simmer.,,.20 minutes
Add Cut up Potatoes
Adjust the seasoning to your taste
Also adjust the water and beef base.. if you use more potatoes or extra veggies you will need to add more liquid. Turn down to a simmer and cook until all the veggies are done.
Sometimes I will add celery, chopped fresh tomato's, zucchini, green beans- basically add any veggie that you like and cook until all veggies are tender.
Serve with fresh Parmesan cheese.
I also make my Foccacia bread with this..Any hardy bread will do. ENJOY!!

Hello lovelies, in this week's video we are making this easy, quick and full of flavour minced beef stew. It's one of my family's favorite and can either be served with rice, chapati or ugali.

Ingredients:
-400grms minced beef
-1 large onion, chopped
-1tbsp garlic/ginger paste
-1 large potato, cubed
-1 carrot, cubed
-1/2cup green peas
-1 large tomato, chopped
-1tbsp tomato paste
-1tsp cumin powder
-1/2tsp black pepper
-1/2tsp salt
-1 beef cube
-1 cup water
-oil
EASY Italian Chicken MEATBALLS with Zucchini Tomatoes
Easy Italian Chicken Meatballs with Zucchini Tomatoes is a quick and easy dinner to make. The Chicken Meatballs are moist and juicy pairing with the garden vegetables of zucchini and tomatoes. Finishing the dish off with a burst of freshness with fresh lemon juice and parsley. The bonus of easy clean up as it is all baked in the oven on a sheet pan.
EASY Chicken Meatballs
Meatball Ingredients
1 lb Chicken, ground
1 Egg
½ cup Parmesan cheese
½ cup Bread, cubed
¼ cup Water
¼ cup Parsley, chopped
1 Garlic clove, chopped
1 teaspoon Oregano, dried
½ teaspoon Salt
¼ teaspoon Pepper
Vegetable Ingredients
4 Zucchini
4 Tomatoes
1 Purple onion
1 Garlic clove, chopped
2 Tablespoons Olive Oil
1 teaspoon Oregano, dried
½ teaspoon Salt
¼ teaspoon Pepper
Garnish
Parsley, rough chop
Lemon, cut into wedges
Olive Oil
Preheat oven 350 degrees
1. In a large bowl, add cut up vegetables, seasoning, toss in olive oil and set aside.
2. In another large bowl add all the meatball ingredients and mix until incorporated.
3. Take a small amount of meat and shape into a ball and place on a rimmed baking sheet. Note: If you find that the meat is sticking to your hand you can either wet your hands with water or coat your hands in olive oil.
4. Once all the meatballs are all rolled out onto the baking sheet, surround the vegetables around all the meatballs.
5. Place vegetables and meatballs in the oven for 30 – 40 minutes or until the meatball reach an internal temperature of 165 degrees.
6. Place cooked meatballs and vegetables on a platter. Drizzle with a bit of olive oil, squeeze of lemon juice, and garnish with fresh parsley.
