How To make Zucchini Bread (Emeril)
1 1/2 c flour
1/2 ts baking soda
1/4 ts baking powder
1/4 ts salt
1 ts cinnamon
1/4 ts nutmeg
1 c sugar
1 c grated zucchini
1 egg
1/4 c vegetable oil
1/4 ts chopped lemon zest
1/2 c chopped walnuts
Preheat oven to 350 degrees. Grease an 8 by 4 by 2-inch loaf pan. In a mixing bowl combine flour,
baking soda, baking powder, salt, cinnamon and nutmeg. In another bowl combine sugar, zucchini, egg, oil and lemon zest and mix well. Add flour mixture and stir until just combined. Stir in walnuts. Pour batter into prepared pan. Bake for 55 to 60 minutes. Cool for 10 minutes and remove from pan. For best results, wrap and store overnight before cutting. Not too sweet, and easy to modify. A versatile recipe in which you can make it vegan-friendly by using coconut oil as a substitute for eggs. Or gluten-free by substituting the flour with gluten-free flour. Be sure to use overripe bananas that will keep your bread super moist.

Banana Bread Recipe
SERVES 4
INGREDIENTS:
½ cup plus 2 tsp. unsalted butter, softened, divided
1½ cups all-purpose flour, plus more for dusting a pan, divided
1 very ripe banana, peeled
½ cup light brown sugar
4 large eggs
½ cup granulated sugar
1½ tsp. vanilla extract
2 tsp. ground cinnamon
½ tsp. ground nutmeg
½ tsp. salt
½ tsp. baking soda
¼ tsp. baking powder ⅔ cup chopped pecans
DIRECTIONS:
1. Grease a standard-size loaf pan with 2 tsp. butter. Lightly dust the interior of the pan with flour and then tap out any excess flour. Reserve the prepared loaf pan.
2. Combine the banana with the light brown sugar and the rest of the butter in a medium-size bowl and use the back of a spoon to mash together.
3. Add the eggs, granulated sugar, vanilla extract, cinnamon, nutmeg, and salt to the bowl and whisk briskly to incorporate. Sift in the baking soda, baking powder, and ¾ cup flour and stir until just combined. Fold in the pecans and pour the batter into the prepared loaf pan.
4. Select the Bake setting (325° F/165° C). Set the cooking time to 40 mins. Press the Start Button to begin the cooking cycle. Let the Power AirFryer 360 preheat. Then, slide the Pizza Rack into Shelf position 5. Place the loaf pan on the Pizza Rack. Cook until a wooden skewer or cake tester inserted into the banana bread’s center comes out clean.
5. Remove the loaf pan from the Power AirFryer 360, invert the loaf, remove the pan, and turn the banana bread right side up. Slice and serve warm.
