2 tb Beef drippings
4 Eggs
2 c Milk
2 c Flour
1/2 ts Salt
Preheat oven to 450. If necessary, add enough oil to drippings to make 2 tb. Spoon drippings into 15-1/2"x10-1/2"x2" roasting pan. Brush drippings over
bottom and sides of the pan. Set pan in oven to get hot before adding batter. In large mixing bowl, beat eggs and milk together. Add flour and salt; if desired, beat in 1/2 ts dried basil, chervil, marjoram, rosemary, or thyme. Beat till mixture is smooth. Pour batter into prepared roasting pan. Bake 20-25 min. or till done. Immediately cut into squares
to serve.

Serves: 12 as a side
Prep time: 20 min
Cook time: 40 min
Ingredients
- 1 cup flour
- 1 cup milk
- 1 cup eggs
- pinch salt
- 300g beef tallow
Method
1. Mix together the flour, milk and eggs in a bowl until it's well combined.
2. Rest the batter in the fridge for at least 2 hour or overnight.
3. Place a muffin tin on a tray into a 210c (410f) oven and fill 1/3 of each cup with the tallow/fat.
4. Place back in the oven for 10-15 min until the fat just starts to smoke, carefully remove the tray from the oven and onto the bench.
5. Pour the batter into the centre of each muffin cup until it’s full then carefully place the tray back into the oven.
6. Bake for 20-25 min or until puffed up and golden brown.
7. Remove the tray from the oven carefully as sometimes the fat pools in the centre.
8. Serve with lashing of gravy with your next Sunday roast.

Ingredients for making Yorkshire pudding recipe:
1 1/3 cups all purpose flour
1/2 tsp sea salt
1 cup whole milk
3 large eggs
Vegetable oil
Instructions for making quick and easy Yorkshire pudding:
- For the batter we started with all purpose flour that we should have sifted into a large bowl
- We then added salt and whisked it together
- This is where we made our next mistake, we didn’t add enough milk so we ended up with a really thick globby batter
- Next we added 3 whole eggs and whisked again
- This wasn’t necessarily a mistake but beating the eggs beforehand would definitely have helped
- As a result, it required a lot of work to whisk the batter until it was smooth and even then there were a few lumps
- The next step is to chill the batter and meanwhile start heating a muffin tin in the oven at 425F
- Next we poured about 1 cm of oil in the bottom of each cup while being really careful not to get burned
- We then returned the tray to the oven for a few minutes to get really hot
- Now is where we encountered our last and most important mistake
- The key to a good Yorkshire pudding is to keep the pan as hot as possible at all times
- Filling the cups with a ladle took waaaaaaay too long and you’ll see that our Yorkshires suffered because of it
- Next time we’ll try filling them with a pitcher instead
- These then went back in the oven for about 15 minutes
- When they came out they had risen slightly but not nearly as high as we wanted
- The texture was also more dense than we wanted but at the end of the day they still tasted good
- We’ll try again soon, so stay tuned for attempt number 2

184 grams of all-purpose flour
1.4 grams kosher salt
236 ml whole milk
59 ml water
28 ml beef drippings per pudding
