How To make Yam Chili (Vegan)
1 40-oz can yams/sweet
Potatoes 1 29-oz can tomato puree
1 To 2 cup dried beans (*)
1/4 c Barbecue sauce
1 tb Dehydrated onion
1 ts Black Pepper
1 tb Chili powder
1/2 ts Cinnamon
Cook up the beans normally (soak, boil, simmer). Pour yams into pot, including liquid. Smash lightly. Add tomato puree, stir through. Add spices, stir through. Add cooked beans, stir through. Simmer for for a few minutes to mellow out. (*) Beans: I keep a 'bean bucket' of mixed beans, usually including pea beans, black-eyed peas, pinto beans, split peas, lentils, navy beans, pinto beans; often including great northern beans, roman beans, pink beans, chili beans, barley, and others. Whenever there's room in the bucket I pour in a bag of something that seems underrepresented. This would probably be better with fresh yams and tomatoes, but the canned yams were on sale half price the day after Thanksgiving... Posted by "Aliza R. Sweet potato vegan chili
Ingredients for 6 people :
1 tbsp olive oil
1 onion, chopped
2 garlic clove, peeled and crushed
1 tbsp chili powder
1 tsp smoked paprika
1 tbsp cumin powder
2 medium sweet potatoes, peeled and cut into half inch cubes
1 15oz can low sodium petite diced tomatoes
1/3 cup dried quinoa
2 cups water
1/2 tsp salt
1 15oz can low sodium dark red kidney beans
1 tbsp dried oregano
1 avocado
1 lime
1 small bunch of coriander
Heat a saucepan over medium-high heat. Pour in the olive oil, add the onion and cook until the onion starts to soften, about 5 minutes. Add the crushed the garlic, cook for 1 minute and then add the chili powder, cumin and smoked paprika. Saute for 2 minutes. Add the sweet potato cubes and cook for 3 minutes.
Add the tomatoes, water and quinoa and salt and bring to a simmer. Lower the heat, cover and cook for 20 minutes, stirring occasionally.
Drain and rinse the red beans and add them to the chili along with the dried oregano. Mix and continue cooking, covered, for 10 minutes.
Serve with a squeeze of lime juice, avocado cubes, and fresh cilantro.

So I decided to do an E-Book focused on using Walnuts & Cauliflower as plant-based meat. Sounds fun?!
Check out this easy Walnut Chili Recipe.
Ingredients:
1 - 1 1/2 chili seasoning packets (Chili mix)
12 oz can diced tomatoes
2 cups vegetable broth
½ cup onion, diced
1 jalapeño, diced (or more, if you like it spicy)
2 cups walnuts
½ cup cauliflower, chopped enough to fit into food processor
1 Tbsp chili oil or olive oil
12 oz tomato paste
1 cup of corn
2 tsp minced garlic
2 x 15.5 oz cans kidney beans
1. Add walnuts & cauliflower to a food processor and pulse for 20 -30 seconds (No need to soak the walnuts)
2. Sauté onions & garlic in chili oil
3. Add walnut & cauliflower crumbles to pan and cook until the crumbles are browned
4. Add 4 Tbsp tomato paste, 1/4 cup vegetable broth, and half of the chili seasoning packet to pan. Cook on medium for 5 minutes. Mix well and place to the side
5. In a large pot, combine the remaining tomato paste, diced tomatoes, kidney beans, corn, jalapeño, and vegetable broth. Cook on medium for 5 minutes
6. Add your crumbles and cook for 5 more minutes or until warm throughout
7. Enjoy with your favorite chili toppings
