Don's Cook Nook: Grilled Shrimp Fajitas
In this video I share my approach to making grilled shrimp fajitas. I hope you enjoy! Please leave a comment with your feedback :-)
Recipe:
1 lb shrimp, uncooked, thawed, peeled and cleaned 4-5 Peppers (any mix of Bell and Poblano) chopped into medium sized strips
Marinade: 1/3 c olive oil fresh juice of 1 lime low sodium Soy Sauce (2-3 tbl) chili powder (1-2 tbl) paprika (~2 tsp) ginger (~1 tsp) cumin (~1 tsp) garlic powder (~1 tsp) freshly grated garlic (2-4 cloves) red pepper flakes (a few dashes) Sriracha (~1 tsp) Salt (1-2 tsp)
Mix all marinade ingredients thoroughly. Coat shrimp with marinade in a plastic bag and let sit in frige for ~30 minutes.
Coat peppers with olive oil and season with salt, pepper, chili powder, and cumin. Arrange peppers in even layer in grill basket and place on grill preheated to medium-high. Cook for ~3-4 minutes per side until peppers begin to char. Remove basket from grill and arrange shrimp in an even layer on top of the peppers. Return to grill and cook shrimp side down for ~2 minutes. Flip and cook for ~1 minute on the other side. Remove from grill and transfer to serving dish. Serve with your favorite warmed tortillas and your favorite cheese, guacamole, and salsa!
