How To make Wild Rice Baked Chicken
2/3 c Wild Rice (uncooked)
4 Stalks, sliced
1 md Green pepper diced
1 1/3 c Water
2 ts Chicken bullion granules
1 ts Salt
2 ea Whole chicken breasts
Soy sauce In bowl, thoroughly wash Wild Rice, drain in strainer. In buttered 2-qt casserole or baking dish. mix Wild rice, celery, green peppers,
water, bullion, and salt. Skin and half chicken breasts and place on top of rice mixture; brush with soy sauce. Cover dish, bake in 350 degree oven for 1 1/2 hours or until wild rice is tender. (To order Wild Rice write; Ray Leinbach, Rt 1, Blackduck, MN, 56630)

This chicken wild rice casserole is a perfect family meal. With minimal prep, this dish comes together quickly and easily and can be made ahead of time. Creamy, full of flavor and a great freezer meal recipe.

INGREDIENTS:
1/3 cup salted butter
1 teaspoon minced garlic
1 small yellow onion diced
2 cups sliced mushrooms
1/3 cup flour
2 teaspoons chicken bouillon powder
1 can 14-1/2 ounces low sodium chicken broth
1 cup half-and-half cream
4 cups chicken cooked and cut into 1 inch cubes
4 cups cooked wild rice
1 cup shredded mozzarella cheese
1/3 cup slivered almonds
1 bag croutons crushed
2 tablespoons butter melted

Chicken and Wild Rice Casserole

In today’s video I'm sharing an easy one dish meal...Answer the age all question. What's for dinner? This is a perfect cozy recipe for a fall evening sitting by the fireplace.
This recipe has a 10 minute prep time, and is ready in about an hour and a half.
2 cups chicken stock
2 cups cream-of-mushroom soup or cream of chicken
Boneless skinless chicken thighs (about 4- 6)
1 teaspoon paprika
kosher salt and black pepper, to taste
2 tablespoons unsalted butter
2 teaspoons minced parsley
Directions
Heat the oven to 375°F.
Mix the chicken stock, mushroom soup, and rice together in a 9-inch-by-13-inch casserole dish.
Season the chicken all over with the paprika, salt, and pepper and place skin-side up, on top of the rice.
Dot with the butter and bake, covered, for 50 minutes.
Remove the cover and bake until the chicken is golden and the mixture is thick, 25 to 30 minutes more. Sprinkle with the parsley and cheese and serve.
