Ricotta Cookies - How to make ricotta cookies at home.
Ingredients and dircetions for making Ricotta Cookies below.
Ingredients for the cookies (Serves -54 to 58 cookies):-
4 cups of all-purpose flour (500 grams).
1 1/2 sugar (300 grams).
15oz whole milk Ricotta (400 grams).
2 sticks softened unsalted butter (224 grams).
2 eggs room temperature.
Zest of a lemon.
1/2 tsp of almond extract.
3 tsp baking powder.
2 tsp of vanilla extract.
Ingredients for the Glaze:-
2 plus cups confectionery sugar .
3 plus tablespoons of milk .
Sprinkles optional to decorate.
Directions for the cookies:-
Step#1- Cream the butter and sugar until light and fluffy.
Step#2- Add the eggs one at a time with the vanilla and almond extract.
Step#3- Add the ricotta and lemon zest. Continue beating so it’s light and fluffy.
Step#4- Spoonful at a time add the flour mixed with the baking powder.
Step#5- Once it’s all incorporated you’ll have a fluffy and a little sticky mixture.
Step#6- With an ice cream scooper scoop cookie balls and place them on a cookie sheet lined with parchment paper.
Step#7- Bake at 350 for about 15-18 degrees or until the bottom is lightly golden.
Step#8- Let the cookies cool before glazing.
Direction for the glaze:-
Step#1- In a bowl mix the confectionery sugar and milk one tablespoon at a time.
Step#2- Stir until a smooth thick glaze is formed. You can also add 1/2 tsp of almond extract for extra flavor.
Step#3- Dip the top of the cookie in the glaze and immediately add your sprinkles otherwise they will no stick.
Step#4- Let them dry and enjoy!

My Italian Grandma’s Ricotta cookies recipe has a bit of a story attached to them.
My birthday is 2 days after Christmas and every year growing up, my family would travel up to Albany to visit my grandma (on my Dad’s side) to celebrate my birthday. When we’d arrive, we were always greeted with Rigatoni and Meatballs and these amazing ricotta cookies. When she passed, all she left in terms of a recipe was this list of ingredients, no directions. For years mom would try to make them but they never turned out the same. So over the past few years, my brother has been trying to reverse engineer the cookies to taste just like grandma used to make. Below is the recipe we found tasted just like grandma’s.

Ingredients
Cookie dough:
125 g butter, melted
200 g sugar
1 egg
1 tsp vanilla sugar
10 g red food color (gel)
300 g all - purpose flour
35 g cacao powder
0,5 tsp bicarbonate of soda
Filling:
100 g white chocolate
125 g cream cheese
1 tbsp all - purpose flour
0,5 tsp vanilla sugar
1 tbsp lemon juice

Instructions
Prepare the filling: melt white chocolate, add vanilla sugar, lemon juice, flour , cream cheese. Mix all together. Form 12 balls and chill in the freezer for 30 minutes or more until balls harden.
Prepare the batter: Combine flour and sugar, egg, vanilla sugar, bicarbonate of soda, cacao powder, melted butter, red food color. Mix until smooth. Preheat oven to 180 C/ fan. Take filling balls from the freezer. From the cookie batter form 24 balls. Form cookies by layering cookie ball, filling ball and cookie ball on top. Roll balls in the sugar. Bake for 15 minutes until cookies harden. Cool before serving. Enjoy!
