How To make White Chocolate Glazed Anisette Biscotti

3 Eggs
1 ts Vanilla extract
1/4 ts Almond extract
2 1/4 c Unbleached all-purpose flour
7/8 c Sugar
2 tb Anise seed; crushed with a
-mortar and pestle 1 ts Baking soda
1/2 ts Salt
3 oz White chocolate chips
Place nuts in a shallow pan. Bake in a preheated 350-degree oven 8 to 10 minutes, or until golden brown. While still warm, rub nuts between a
double layer of paper towels to remove their papery skin. Cool. Chop into halves or thirds. In a small bowl, beat eggs, vanilla and almond extract with a whisk. In a large mixing bowl, combine flour, sugar, anise seed, baking soda and salt. Add egg mixture and mix until blended, about 1 minute. Mix in nuts. Divide dough in half. On a greased floured baking sheet, form 2 logs about 1/2 inch thick, 1 1/2 inches wide and 12 inches long. Space them at least 2 inches apart. Bake in the middle of a preheated 325-degree oven for 25 minutes, or until set and bake through. Transfer from baking sheet to a
wire rack and cook 5 to 10 minutes. Place on cutting board. With a serrated knife, cut 1/2-inch thick slices diagonally at a 45 degree angle. Lay slices flat on baking sheet and return to oven for 10 minutes, turning over once, to dry slightly. Cool on wire rack. To make glaze, heat white chocolate chips over hot water in a microwave oven on Medium power, checking every 30 seconds until chocolate melts. Stir to blend. With a spatula, spread chocolate over entire top surfce of cookies. Cool at room temperature until set. Yield about 3 1/2 dozen. -----

Cranberry, orange, and white chocolate biscotti – Savory
Did you know the name biscotti means ‘twice baked’? It’s a description of the unusual (but easy) technique that makes these cookies so crisp. Bon appetit!
Ingredients
½ stick butter
¾ cup sugar
1 tbsp orange zest
1 tsp vanilla extract
3 large eggs
2 cups flour
1½ tsp baking powder
¼ tsp salt
½ cup dried cranberries
½ cup almonds
1 cup white or dark chocolate chips, or a mixture
Dough
Preheat the oven to 350°F. Cream together butter, sugar, zest, and vanilla with an electric mixer until light and fluffy. Mix in 2 eggs and 1 egg white one at a time, beating well after each addition. Sift together the flour, baking powder, and salt; gradually blend into the creamed mixture. Stir in the dried cranberries and almonds. Spray your hands with cooking spray so the dough doesn’t stick and divide the dough in half. Form each half into a flattish log and arrange logs at least 3 inches apart on baking sheet.
Bake and bake again
Bake for 30 min. in preheated oven, or until pale gold. Cool on baking sheet until cool enough to handle. On a cutting board, cut logs crosswise on a diagonal into 1-inch thick slices. Arrange on baking sheet. Bake for an additional 15 min., or until golden. Transfer biscotti to wire racks and cool completely.
Chocolate dip
Melt chocolate in a microwave-safe bowl by microwaving on medium heat for 20 second increments, stirring thoroughly until chocolate is completely melted. Drizzle the biscotti with melted white or dark chocolate.

Italian Anisette Cookies
These wonderful Anisette Cookie brings back fond memories of my grandmother in her kitchen! She would make them during Christmas and Easter. They are light , sweet and great to enjoy with an Espresso!
Even though there are several steps to making these delicious cookies they are still fairly easy to prepare. Mixing and shaping them will take a small amount of time but it will be well worth your effort ! If you want to save some time just roll them into a ball and place them on the baking tray. This is easier but not as authentic . You may not need to use all of the 3 Cups of flour so be sure to add it in a little at a time. Also some Anisette cookie recipes are made with butter but this recipe uses Canola Oil .
Also, adjust the Anise extract if you want a milder flavor and if you like you can use vanilla extract in the icing.

Ingredients:
3 Cups Unbleached Flour
3 Teaspoons Baking Powder

RECIPE
INGREDIENTS
3 large eggs
3/4 cup sugar
1/2 cup butter melted and cooled
1 vanilla bean OR 2 tsp vanilla
3 cups flour
1 Tbs baking powder
1/4 tsp salt
NOTE: Anise can be substituted for vanilla if desired. Add nuts such as almonds, pistachios, or walnuts if desired
DIRECTIONS
1. Beat the ingredients in the following order:
Eggs for 1 minute @ med high speed
Sugar @ low speed until incorporated
Butter and vanilla* @ med speed for 30 seconds
Flour, baking powder and salt @ med speed until dough forms
*NOTE: If using a vanilla bean: Put the bean on a cutting surface. Using the tip of a paring knife, cut the bean lengthwise. Use the point or edge of the knife to scrape the seeds loose from the pod. Do this on both sides of the split bean. Add scraped seeds to recipe and discard bean.
2. Preheat oven to 325 degrees
3. Divide dough into three equal segments
4. Roll dough into 3 logs on a floured surface
5. Place logs into bake pan 2 1/2 inches apart
6. Bake for 20-30 minutes or until lightly brown. Remove to wire rack to cool.
7. Reduce oven to 275 degrees
8. Let logs cool for 15 minutes, then slice logs diagonally 1/2 wide
9. Bake again 15 min on each side. Let cool on wire rack for 15 minutes
Serve as is or dip some or all half way in melted chocolate. Use semi-sweet chips or any chocolate of your choice.
