How To make White Cake with Sticky Brownie Base
brOWNIE BASE: 50 g unsalted butter
plus extra for greas
75 g caster sugar
40 g dark muscovado sugar
50 g plain chocolate
2 tsp golden syrup
1 egg
1/2 tsp vanilla extract
25 g plain flour
1/4 tsp baking powder
ICE CREAM: 300 g white chocolate :
broken into pieces
300 ml double cream
400 g bought vanilla custard
TO DECORATE 50 g plain chocolate
cocoa powder -- for dusting
oven to gas 4. Lighlly grease 20cm/8in springform in. In small non-stick pan gently heat butter, sugars, chocolate, syrup, stirring until chocolate melted, mixture smooth. Remove from heat, leave to cool. In a bowl, beat egg and vanilla, add to cooled mixture. Sift in flour and baking powder, mix well. Pour into the tin, bake 15 minutes until outside of the brownie is crisp and beginning to shrink away from sides but centre soft to the touch. Leave to cool. Make ice cream - melt chocolate. Whip cream until it just holds its shape, then whisk in the cold custard. Stir in chocolate until mixture is thick, smooth, well blended. Pour onto cooled brownie, tilt tin to level top. Melt plain chocolate, with a tsp drop 12 neat blobs onto the ice cream 3 cm from edge. Open freeze 4 hours. Remove, dust with powder.

So today, I wanted to try making white chocolate brownies ( blondies) again. I've tested so many different recipes and proportions when it comes to white chocolate brownies that I gave up on it for a while lol.
Brownies to me are moist, chewy and sometimes dense but never dry lol. I think I made the white chocolate brownie of my dreams!
INGREDIENTS USED:
110g Flour
100g - White Chocolate
155g Butter
300g Sugar
200g (4) eggs
5-10 g (1/2 )tbsp Vanilla extract
1/4 tsp salt
METHOD:
1. Melt butter & chocolate together. 30sec intervals using a microwave, be careful not to burn the white chocolate with too much heat. Stir constantly after each interval.
2. Add melted chocolate mixture to sugar and stir.
3. Sift flour into sugar mixture and stir.
4. Add eggs gradually 1 by 1, and stir until incorporated.
5. Pour in prepared pan ( spray and line pan with parchment)
6. Bake at 350F for 20-25 or at lower temperature to prevent browning too quickly.
THINGS TO NOTE:
1. You may have to bake it longer than 25 minutes depending on your oven.
2. Use parchment paper for easy removal ( don't be like me)
3. The center takes longer to cook. I have a raised center because I shifted my pan during baking.
4. The top actually crackles when you touch/eat it (brownie heaven)
The blondies ( white chocolate brownies) are a bit heavy, super moist, chewy and gooey ( is that a thing lol)

The original recipe does not call for baking soda or baking powder because these are intended to be dense, fudgy, and chewy. If you need a little more lift in your blondies, add 1/2 to 1 teaspoon of baking powder
The one thing to keep in mind when baking blondies or brownies is that they will continue cooking after being removed from the so make sure you allow them to cool completely in the baking pan before removing them and cutting them into squares. This cooling time helps the middle to set correctly.

-Namak (Salt) ¼ tsp
-Cocoa powder ¼ Cup
-Instant coffee 2 tsp
-Vanilla essence 1 tsp
-Bareek cheeni (Caster sugar) ½ Cup
-Brown sugar ½ Cup
-Anday (Eggs) 5 (room temperature)
-Maida (All-purpose flour) 1 Cup
-Dark chocolate semi sweetened chunks 100g or as required
Directions:
-On a double boiler,add dark chocolate,butter & mix well until chocolate melts.
-Add salt,cocoa powder,instant coffee,vanilla essence & whisk until well combined.
-Let it cool.
-In a bowl,add caster sugar,brown sugar,eggs & whisk well.
-Add chocolate mixture & whisk until well combined.
-On a bowl,place sifter,add all-purpose flour,sift well & fold until well combined.
-Grease 9 x 9-inch baking pan with butter,line it with butter paper & again grease with butter.
-Pour brownie batter & tap few times.
-Add dark chocolate & bake it in preheated oven at 180C for 15 minutes.
-Take out from oven,tap few times & bake again for 10 minutes or until skewer comes out clean.
-Let it cool.
-Cut into pieces & serve!

Fudge Brownie Recipe:
- 260 gr Butter ( 2 1/4 STICKS )
- 350 gr Chocolate 70% cocoa ( 13 Ounces)
- 1 or 2 tbsp unsweetened Coffee depending on your preference
- 4 Large Eggs
- 150 gr All Purpose Flour ( 1 cup + 2 tbsp)
- 30 gr Unsweetened Cocoa Powder ( 3 tbsp )
- 1/2 tsp Salt
- 400 gr Sugar ( 2 cups )
NOTE: If your brownie toppings start to brown too much, cover with aluminum foil.
■ Brookies/ Cookie Brownies:
- 50 gr Butter ( 3 1/2 tbsp)
- 60 gr Sugar ( 4 1/2 tbsp)
- 1 tbsp Milk
- 1/2 tsp Vanilla
- 70 gr Flour ( 8 1/2 tbsp)
- 1/4 tsp Baking Powder
- 1/4 tsp Baking Soda
- Pinch of Salt
- Chocolate Chips
■ Cream Cheese Brownies:
- 60 gr Philadelphia Cream Cheese ( 2 ounces)
- 1 1/2 tbsp Sugar
- 3/4 tbsp Egg White
- 1/2 tbsp Flour
- 1/2 tsp Vanilla
■ Peanut Butter Brownies:
- 60 gr Peanut Butter ( 2 ounces )
- 1 tbsp Sugar
- 1 tbsp Flour
- Salted Peanuts
- Caramel ( optional after they've done baking)
■ Double Chocolate:
- Chocolate chips/ or chopped chocolate
