How To make Walnut Cookies
1 c Finely chopped walnuts
1/3 lb Soft butter; half sweet
And half salt 1/4 c Sugar
1 c Flour
2 ts Vanilla
Powdered sugar Recipe by: Square One 1. Lightly toast the walnuts in a low oven and then let cool. Finely grind
the walnuts in a food processor. 2. Cream the soft butter and sugar together. Add the walnuts, flour, and vanilla and mix well. 3. With a plain piping tip, pipe the cookie dough in drops onto a buttered and floured pan or onto parchment paper. 4. Bake in preheated 300 degree oven for 20-30 minutes, or until pale brown in color. When cool, sprinkle powdered sugar over the cookies. 5. Store in an airtight container. The cookie dough feezes well. -----

Chinese walnut cookies (核桃酥)- How to make the Chinese biscuit Hup Toh Soh
My cousin from Hong Kong visited us last week and brought us some Chinese walnut cookies. It has been a long time since I made these cookies.
After taking a bite, it suddenly evoked my memory of the taste of these beautiful cookies. So making some instead of getting more from the Chinese bakery would be a good idea.
Here is my recipe for Chinese walnut cookies.
The authentic recipe uses lard. However, I use butter in this recipe because it is more commonly available and is healthier.
I also use less baking powder as I am sensitive to the metallic taste when using a larger quantity. Therefore it may be less crunchy than those commercially sold walnut cookies. You can add slightly more if you are OK with the taste.

Ingredients A
150g regular flour
1 tsp baking powder
1/8 tsp salt
Ingredients B
40g walnut
Ingredients C
80g butter, unsalted
60g castor sugar,
1/2 egg
more egg wash to burh the surface of the cookies
Method:
- Combine the regular flour, baking powder, and salt. Let it pass through a fine sieve.
- Place the walnut in a pan over medium heat. Roast the walnuts until they become fragrant and turn slightly brown.
- Chop the walnuts coarsely, and reserve some walnut halves for putting on the cookies.
- Cream the butter and sugar until it becomes light and fluffy and the color turns slightly pale.
- Add the egg and continue mixing until homogenous.
- Combine the butter mixture with the flour and crushed walnuts to form a dough.
- Divide the dough into portions of about 30 grams each.
- Roll each portion into a ball by hand and place it on the baking tray lined with a baking sheet.
- Flatten each dough ball slightly by pressing one walnut half on top to make an indentation.
- Brush some egg wash on the surface of each cookie.
- Bake the cookies in the preheated oven, 170°C/340°F, for 25 minutes or until golden brown.
- Remove the cookies from the oven, and let them cool on a cooling rack.

Ingredients
Dough Mixture
4 cups of flour (cale/pastry flour)
1/2 cup to 1 full cup of granulated sugar
1 heaping cup (225g) of yogurt or sour cream
1 cup of butter (225g)
1 egg
2 teaspoons of vanilla extract
2 teaspoons of baking powder
1 pinch of salt
Filling
1 cup of crushed walnuts
1 egg white
1 cup of granulated sugar
1/2 teaspoon of nutmeg
1/2 teaspoon of cinnamon
Instructions
1. In a mixing bowl, place 4 cups of flour, add 2 teaspoons of baking powder and a pinch of salt. Using a grater, shred butter into your flour mixture. Watch video for instructions on how to grate.
2. Combine yogurt in your flour and butter mixture along with 1 cup of sugar and 1 egg. Mix together by hand until dough is formed. Cover your dough with plastic wrap and keep in fridge for 15-20 minutes.
3. For the filling, use a mixing bowl and add 1 cup of sugar, 1 cup of crushed walnuts, 1/2 teaspoon of cinnamon and 1/2 teaspoon of nutmeg. Crack an egg and pour the egg white in your mixture and keep the egg yolk in a seperate bowl.
4. Take your dough from the fridge and cut in half. Dust your working surface with flour and roll your dough. Brush melted butter throughout the dough. Watch video for special instructions.
5. Spread walnut mixture on the dough and roll tightly. Gently press the top of your dough to create a flat surface. Brush along the top of your dough with egg yolk and cut into pieces approx 2 inches.
6. Prepare a baking sheet with parchment paper that’s greased and preheat your oven to 350°F for 30 minutes. Cover your cookies after the first 20 minutes.
7. Remove from oven and serve warm. Dust with powdered sugar (optional). Enjoy!
