Cinnamon apple walnut bread

Ingredients:
190g(1 ½ cup) all-purpose flour
3 M-L eggs
115g (½ cup)firmely packed brown sugar
115ml(1/2 cup)vegetable oil
75g(1/3 cup) greek yogurt
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 ¼ teaspoon baking powder
1 apple(approx 150g),peeled,cored and grated
½ cup walnuts
pinch of salt
DIRECTIONS
Preheat oven to 180ºC/350ºF.
Lightly butter and line with parchment paper a 10 x 4 inches (25cm x 11cm) loaf pan.
Place eggs and brown sugar into a medium size bowl ,beat for about 3-4 minutes until creamy.
Add greek yogurt and vegetable oil,and with a wire whisk mix briefly to combine.
Gently mix in the cinnamon,vanilla extract and salt.
Fold in the flour and baking powder.
Finally, fold grated apple to the batter mix.
Pour the batter into the prepared pan and spread it evenly with a spatula.
Top with walnuts and bake for 45-55 minutes,until lightly brown on top and the toothpick inserted in the center of the cake comes out clean.
Once baked,remove the cake from the pan and let it cool on a wire rack.

75g Butter
125ml (1/2 cup) milk
1 tbsp instant coffee granules
110 grams (1/2 cup) soft brown sugar
35 grams (1/2 cup) roasted walnuts
1 egg
2 small Apples or 1 medium apple
150 grams (1 cup) self-raising flour
1/4 tsp Salt
1/4 tsp Cinnamon
1/4 tsp Nutmeg

TIP #1
I would recommend not grating the apples as it will cause a lot of liquid to come out and loosen the batter too much. If using a grater make sure to use it on the largest hole size and squeeze the excess juice out.
TIP#2
If you don't have apples you could also substitute this out for pears in a similar quantity. Note that cooking times may vary though.
TIP #3
Instead of melting the butter, milk and coffee on the stove top you can also use a heat proof bowl and place it into the microwave. I would microwave for 30 seconds at a time while mixing in between until the butter is fully melted.

Made with Granny Smith apples ( or any apple your wish), raisins, toasted walnuts and spices, this bread is sure to be a crowd pleaser at your next breakfast, brunch other event. I particularly relish the idea of enjoying a slice with some apple butter (see recipe below) while drinking a cup of tea. I encourage you to head to the kitchen and make this delicious and flavorful bread for your friends/guest and family.

354g/ 2 large Granny Smith apples (peeled, cored, shredded)
56g/ 4 tbsp. unsalted butter
75g/ 1/3 cup vegetable oil
128g/ 1 cup granulated sugar
97g/ ½ cup brown sugar
2g/ 1/2 tsp ground nutmeg
4g/ 1 tsp cinnamon
114g/ 2 large eggs
4g/ 1 tsp apple extract
2g/ ½ tsp vanilla
208g/ 1 2/3 cup all-purpose flour
4g/ 1 tsp baking powder
2g/ ½ tsp baking soda
2g/ 1/2 tsp salt
64g/ ½ cup sour cream
77g/ 2/3 cup toasted walnuts (chopped)
96g/ 2/3 cup raisins
62g/ ¼ cup lemon juice (apples)
Preheat oven to 325F/162C
In a separate bowl, peel, and shred apples, add lemon juice cover and set aside.
In a large bowl cream butter, oil, and sugars.
Add eggs, apple extract and vanilla then combine.
In a separate bowl combine flour, baking soda and salt and spices then set aside.
Add dry to wet ingredients and combine.
Fold in apples and sour cream.
Fold in walnuts and raisins.
Transfer batter to a load pan of your choice.
Spray pans with non-stick spray or grease with butter.
Bake 325F/162C degrees for 60-70 minutes until toothpick comes out smooth.
Serve with apple butter or any other jam/jelly you wish.
Apple Butter recipe:
543g/ 3 large Granny Smith apples (peeled and cubed)
97g/ ½ cup brown sugar
4g/ 1 tsp allspice
4g/ 1 tsp cinnamon
2g/ ½ tsp sea salt
118ml / ½ cup water
14g/ 1 tbsp lemon juice or a pinch of lemon zest.
In a saucepan, over medium heat, add all ingredients and combine.
Reduce heat to low and cook for 2 hours or until apples have softened.
Turn heat OFF and blend apples using a blender.
Cover and allow apple butter to completely cool.
Transfer to a container(s) of your choice with lid(s).
Ensure apple butter is cool before transferring to a storage container of your choice.
Refrigerate until ready to use.
I keep my apple butter in the refrigerator for two weeks.
NOTE: Feel free to purchase your apple butter from a grocery store.

INGREDIENTS
1/2 cup packed light brown sugar
1 1/2 teaspoon ground cinnamon
2/3 cup white sugar
1/2 cup butter, softened
2 eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 cup milk
1 large apple, peeled and finely chopped
INSTRUCTIONS
Preheat oven to 350 degrees.
Grease and flour a 9 x 5-inch loaf pan.
Mix brown sugar and cinnamon together in a bowl and set aside.
In a stand mixer, combine white sugar and butter until smooth.
Add eggs and vanilla and continue to beat on medium speed until combined.
Add flour and baking powder, then milk.
Pour half the batter into the prepared pan.
Cover with half of the apples.
Pat apples into batter with the back of a spoon.
Sprinkle with half of sugar and cinnamon mixture.
Pour the remaining batter over apple layer; top with remaining apples and add more brown sugar/cinnamon mixture.
Pat topping into the batter with the back of a large spoon.

2 Tablespoons butter, melted (salted or unsalted is fine)
For apple bread
1 ½ cups finely chopped apples (peeled & cored) (about 2 apples/215g after cutting)
2 ⅓ cup all-purpose flour (290g)
½ cup light brown sugar, firmly packed (100g)
¼ cup granulated sugar (50g)
2 ½ teaspoons baking powder
½ teaspoon baking soda
1 teaspoon ground cinnamon
¾ teaspoon salt
½ cup unsalted butter, melted (113g)
¾ cup sour cream (170g)
¼ cup whole milk (60ml)

00:15 Preheat oven to 350F (175C) and line a 9x5” bread pan with a sling of parchment paper (or lightly spray with baking spray).
00:34 Whisk together granulated sugar and cinnamon for the topping. Set aside. Pour apples in a bowl and sprinkle with 1 ½ Tablespoons of the cinnamon/sugar mixture (save the remaining cinnamon/sugar for later). Stir together apples and cinnamon/sugar and set aside. You will not need the 2 Tbsp of butter yet, but should have it ready.
