POPOVERS RECIPE
Makes 6
PRINT RECIPE HERE:
INGREDIENTS:
3 eggs
1 ½ cups of milk
½ teaspoon kosher salt
1 ½ cups all-purpose flour
Vegetable oil for greasing
METHOD:
Place the oven rack on the lowest level. Preheat the oven to 450F.
Allow the eggs and milk to come to room temperature or better yet, for quicker preparation, place the milk in the microwave at :30 intervals until lukewarm. Submerge the eggs in a bowl of warm water for 10 minutes.
Whisk together the eggs and the milk until combined well.
Slowly add the flour a little at a time until combined and smooth. Don't over mix, small lumps are OK.
Grease the popover pan with the oil. Be generous with the oil!
Place the popover pan on a sheet pan, and place it in the oven, empty, in order to preheat the pan, for 15-minutes.
Meanwhile you can transfer the batter to a pitcher for easy pouring of the batter into the pan.
Only fill each well ⅔ of the way up the pan. The less the wells are filled the higher the popovers will rise.
Bake for 20 minutes at 450F, then reduce the heat to 350F and bake for 10-15-minutes more.
Do not open the door while they are baking or they will deflate!
Try to go the full 15-minutes on the second stage of baking for crispier exteriors and easy release! Underbaked popovers will stick to the pan!
Serve immediately!

Blue Cheese Popovers - Food Wishes
Popovers are one of those “too good to be true” recipes. Simple to prep, virtually foolproof to make, and few things coming out of your oven are as visually impressive than a pan of fully puffed popovers. They are also inexpensive to make, and adaptable, so it’s no wonder why I consider this technique a must in any cook’s repertoire. Enjoy!

Chef Notes:
Make-Ahead: These are meant to be eaten as soon as they are baked, but they can be made up to 1 day ahead of time. Reheat them before serving.
How to Reheat: Place the desired number of popovers on a sheet tray lined with parchment paper and bake in the oven at 350° for 3-4 minutes or until hot. You can also cook in the microwave on a microwave-safe plate until hot.
How to Store: Store covered in the refrigerator for up to 3 days. Cover and freeze for up to 2 months. Thaw in the refrigerator for 1 day before reheating.
You do not have to use a popover pan for this recipe, simply substitute with a large 6 or regular 12 count muffin tin.
If you cannot get the batter thin enough when whisking, transfer to a blender and blend on high until it is completely smooth.
You may need to cook these in batches if you only have 1 pan.

POPOVER RECIPE
Prep Time: 5-10 minutes
Cook Time: 30-35 minutes
Total Time: 40-45 minutes
Serving Size: 6 large popovers
INGREDIENTS
4 Eggs, warmed in a bowl of warm water for 10 minutes
1 1/2 cups milk- skim or low fat preferred
1/2 teaspoon salt
1 teaspoon sugar
1 1/2 cups flour
3 Tablespoons melted butter
RECIPE INSTRUCTIONS
Preheat your oven to 450 and make sure the oven rack is near the bottom of the oven. This will prevent the popovers from being too close to the top of the oven. We prefer one up from the bottom. Whisk together the eggs and milk. Add in the salt, sugar, and flour and mix thoroughly. Small lumps are ok. Add in butter and stir to combine. Divide the batter among the wells of your USA PAN® popover pan. Bake them at 450 for about 20 minutes. Then, without opening the oven door, reduce the oven temp to 350 and bake an additional 10-15 min. If you feel the popovers are browning too much on the top, you can place an oven rack at the top of your oven and place a cookie sheet on top to shield the tops. Once done, remove from the oven and slit the tops with a sharp knife to release steam. Serve immediately!!
