Christmas Cake Recipe - Easy Fruit Cake that's beautifully moist!
An easy Christmas cake that turns out perfect every time. No creaming, beating or soaking of fruit required! Plus tips on storage and feeding your Christmas cake.
Feeding your fruit cake in the weeks leading up to Christmas helps to build and intensify the flavour of the cake, and will ensure it's beautifully moist.
Oven Temp:
Bake in the oven at 150C/300F (fan) for 45 minutes, then 140C/275F (fan) for a further 60-75 minutes - until an inserted skewer comes out clean.
Alcohol-free Christmas Cake:
For a non-alcoholic version, you can replace the alcohol with cold tea, fresh orange or apple juice.
You can then feed the cake with either:
1. Cold tea
2. Fresh orange or apple juice
3. Ginger cordial mixed with water (2 tsp mixed with 2 tbsp water)
4. Rum flavouring mixed with water (⅛ tsp mixed with 2 tbsp water).
If you do this, don’t make the cake any earlier than November, as juice (as opposed to alcohol) could start tasting funny after more than a couple of months.

The easy fruit cake ingredients:
3/4 cup (175g) unsalted butter, chopped
1 packed cup (210g) light brown muscavado sugar
2 + 2/3 cups (400g) mixed dried fruit
1 cup (200g) glacé cherries roughly chopped
1 cup (100g) dried cranberries
Zest and juice of 1 orange
Zest of 1 lemon
1/2 cup (120ml) cherry brandy
1/2 cup (85g) ground almonds (coarsely ground - not the type that is like flour)
3 large eggs lightly whisked
1 + 2/3 cup (200g) plain/all-purpose flour
½ tsp baking powder
1 tsp ground mixed spice
1 tsp ground cinnamon
¼ tsp ground allspice
To feed the Christmas cake:
Cherry brandy (1-2 tbsp per week)

To try and put right my part in all of this I was compelled to overcome my fear of being filmed for YouTube and television, appearing on the radio and more recently public speaking. On a spiritual level, I've come to realise that my fellow man too is suffering. If I won't see harm come to a chicken I've never met then why would I be unkind to my brothers? If someone is being aggressive or unkind toward me, surely the suffering inflicted on them in the past is simply spilling over? Do I want to add to that, or can I step out of my ego long enough to forgive them and maybe break the cycle of negativity? This former, quick to anger meat-head bouncer has been on one transformative journey!

Learn how to bake the best eggless whole wheat fruit cake using dates & jaggery(instead of sugar), coconut oil(instead of butter/refined oil), wheat flour(instead of refined flour) & all this without using any oven. Eggless fruit cake is a must for party, Christmas recipe and even as a New year eve recipe.
INGREDIENTS:
Black raisins- 1 tbsp
Dried black currant-1 tbsp
Dried cranberries-1 tbsp
Prunes-1 tbsp
Tutti Frutti- 1 tbsp
Apricots- 1/4 cup
Dried orange kiwi mango- 1 tbsp
Fruit juice- 1/2 cup
Deseeded Dates- 1 cup
Coconut oil- 1/3 cup
Cloves-4
Nutmeg-very small piece
Cinnamon- 1 inch stick
Cardamom-1
Dry ginger powder- 1/8 tsp
Milk- 1 cup
Vinegar- 2 tsp
Jaggery- 1 tbsp
Water- 3 tbsp
Wheatflour- 1 cup
Baking powder- 1 tsp
Baking soda- 1/2 tsp
Corn flour- 1 tsp
Almonds- 1/8 cup
cashews- 1/16 cup
walnuts- 1/4 cup
Vanilla essence- 1 tsp
Cherries, prunes & almonds for decoration
|| RECIPE ||
STEP 1: SOAK DRIED FRUITS - soak dried fruits of your choice and whatever is available. I have shown all the possible dried fruits you can use. Soak them in 1/2 cup fruit juice for 2 hours. Again, you may use any fruit juice of your choice. I have used mixed fruit.
STEP 2: PREPARE SPICED DATES MIX- Make dates mushy by heating them in a pan with half cup milk. Put this in a mixer jar, then put 4 cloves, a very small piece of nutmeg(as it has a very strong flavour), 1 cinnamon stick, 1 cardamom and 1/8 tsp dry ginger powder. Blend to make paste.
STEP 3: CARAMELIZE JAGGERY- take a pan and heat up 1 tbsp jaggery and keep adding little water to form caramelized syrup which will be of dark brown color.
STEP 4: CURDLE MILK: Add 2 tsp vinegar to 1/2 cup milk and keep aside for atleast 10 minutes.
STEP 5: PREPARE CAKE BATTER- Now take the spiced dates mix and add the soaked dry fruits, then add the caramelized syrup. Through a sieve, add 1 cup wheat flour, 1 tsp baking powder, 1/2 tsp baking soda, and 1 tsp corn flour. Sift and then add nuts of your choice and finally 1 tsp vanilla essence. Mix well.
STEP 6: GREASE, DUST, POUR & DECORATE- Take any cake mould, preferably 6 inch wide, grease with coconut oil, dust with wheat flour, pour the batter and tap the mould to set it evenly. Top it with some cherries, nuts or any dried fruits of your choice.
STEP 7: PREHEAT & BAKE- Place a steel stand in any big vessel and preheat for 10 minutes on low flame. Then place the mould on stand, cover it for 60 minutes. Keep the flame on low at all times.
STEP 8: TRANSFER TO A PLATE & ENJOY- Please don’t forget to truly enjoy the healthiest and the yummiest cake you have ever made :p

200 g Dried Cranberries
100 g Dried Sour Cherries
200 g Brown Sugar
175 g Vegan Butter or Margarine
Zest and juice of 1 Orange
Zest of 1 Lemon
120 ml Tea
cook for 5 minutes✅
let cool for 20 minutes☝
150 ml aquafaba
250 g plain/all-purpose flour
1/2tsp Baking Powder
1tsp Cinnamon
1tsp Ginger Powder
1tsp Cardamom
????then bake in the oven at 150C????/300F???? for 50-55
minutes ⏳ until an inserted skewer comes out clean
To feed the easy fruit cake ????
juice of 1 Orange +1 dessert spoon brown sugar (cook for 5 minutes)

Christmas Fruit Cake Recipe:
INGREDIENTS:
100g glazed cherries
60g dates
100g apricots
40g cranberries
450g mixed dried fruit (sultanas/raisins)
150g fresh orange juice
300ml water
100ml cooking alcohol (rum/ whisky or you could use orange juice if you don’t want to use alcohol)
100g vegan butter/margarine (plus extra to use for sticking the parchment to the cake tin)
200g dark brown sugar (I like to use half soft brown sugar and half molasses)
1tsp baking soda
Egg replacer equal to 2 eggs
400g of whole-wheat or wholemeal flour
½ tsp salt
1 tsp cocoa powder
2 tsp baking powder
½ tsp cinnamon
½ tsp ginger
½ tsp nutmeg
½ tsp mixed spice
The zest of a lemon and orange
8”/20cm square cake tin
Parchment/ baking paper
METHOD:
1. Put all your fruit - 100g glazed cherries, 60g dates, 100g apricots, 40g cranberries, 450g mixed dried fruit (sultanas/raisins), (roughly chop the bigger fruit) in a large cooking pot.
2. Add to the cooking pot of dried fruit - 200ml hot water (boiled in kettle), 100ml alcohol and 150ml of fresh orange juice.
3. Soak for 24 hours.
4. The next day – add 100g vegan butter, 100ml water, 200g brown sugar and 1 tsp baking soda to the pot of soaked fruit.
5. Bring to the boil and then simmer for 10mins.
6. Cool for 1-2 hours. Then add the egg replacer equal to 2 eggs.
7. Pre heat oven to 140 degrees and line baking pan (square 8” pan) with parchment paper.
8. In a large bowl put in your dry ingredients – 400g wholemeal flour, ½ tsp salt, 1 tsp cocoa powder, 2 tsp baking powder, ½ tsp cinnamon, ½ tsp ginger, ½ tsp nutmeg, ½ tsp mixed spice, and mix together.
9. Add the zest of a lemon and orange to the dry ingredients in the bowl, then mix this into the pot of wet ingredients, MIX WELL.
10. You are now ready to put your cake mix into the cake tin and smooth out.
11. Pop your cake in the oven with a sheet of parchment placed on top with a hole cut out of the centre – this stops the cake burning but still lets the moisture out.
12. Bake at 140 degrees for 1 hours, then turn your oven down to 120 degrees and bake for another 2 ½ hours. Finally turn off your oven and leave your cake for another 20mins in the remaining heat.
13. Remove cake from oven, cake tin and remove parchment.
14. Leave to cool and wrap in parchment overnight.
15. When completely cool, store in Tupper wear until you are ready to decorate.
