Step by Step Christmas Cake Recipe - 2020 Edition / Plant Based Vegan Recipe.
This Recipe is my FAVOURITE VEGAN CHRISTMAS CAKE to make.

Christmas Fruit Cake Recipe:
INGREDIENTS:
100g glazed cherries
60g dates
100g apricots
40g cranberries
450g mixed dried fruit (sultanas/raisins)
150g fresh orange juice
300ml water
100ml cooking alcohol (rum/ whisky or you could use orange juice if you don’t want to use alcohol)
100g vegan butter/margarine (plus extra to use for sticking the parchment to the cake tin)
200g dark brown sugar (I like to use half soft brown sugar and half molasses)
1tsp baking soda
Egg replacer equal to 2 eggs
400g of whole-wheat or wholemeal flour
½ tsp salt
1 tsp cocoa powder
2 tsp baking powder
½ tsp cinnamon
½ tsp ginger
½ tsp nutmeg
½ tsp mixed spice
The zest of a lemon and orange
8”/20cm square cake tin
Parchment/ baking paper
METHOD:
1. Put all your fruit - 100g glazed cherries, 60g dates, 100g apricots, 40g cranberries, 450g mixed dried fruit (sultanas/raisins), (roughly chop the bigger fruit) in a large cooking pot.
2. Add to the cooking pot of dried fruit - 200ml hot water (boiled in kettle), 100ml alcohol and 150ml of fresh orange juice.
3. Soak for 24 hours.
4. The next day – add 100g vegan butter, 100ml water, 200g brown sugar and 1 tsp baking soda to the pot of soaked fruit.
5. Bring to the boil and then simmer for 10mins.
6. Cool for 1-2 hours. Then add the egg replacer equal to 2 eggs.
7. Pre heat oven to 140 degrees and line baking pan (square 8” pan) with parchment paper.
8. In a large bowl put in your dry ingredients – 400g wholemeal flour, ½ tsp salt, 1 tsp cocoa powder, 2 tsp baking powder, ½ tsp cinnamon, ½ tsp ginger, ½ tsp nutmeg, ½ tsp mixed spice, and mix together.
9. Add the zest of a lemon and orange to the dry ingredients in the bowl, then mix this into the pot of wet ingredients, MIX WELL.
10. You are now ready to put your cake mix into the cake tin and smooth out.
11. Pop your cake in the oven with a sheet of parchment placed on top with a hole cut out of the centre – this stops the cake burning but still lets the moisture out.
12. Bake at 140 degrees for 1 hours, then turn your oven down to 120 degrees and bake for another 2 ½ hours. Finally turn off your oven and leave your cake for another 20mins in the remaining heat.
13. Remove cake from oven, cake tin and remove parchment.
14. Leave to cool and wrap in parchment overnight.
15. When completely cool, store in Tupper wear until you are ready to decorate.

7 inch Cake Pan and 3.5 inch deep
(If you are using a different size of cake pan then adjust the baking time accordingly. For example with a bigger wider pan will need less baking time)
▶️ INGREDIENT LIST:
1 + 1/2 Cup (225 g) All Purpose flour (PLEASE NOTE - This is the correct quantity of the All Purpose Flour - The cup quantity measurement that I have provided in the video is incorrect)
2 Teaspoon Baking powder
1/4 Teaspoon Baking Soda
1/8 Teaspoon Salt
1 Teaspoon Ground Cinnamon
1 Teaspoon Ground Nutmeg
1 Teaspoon Ground Cloves
1 Cup (250 ml) Almond Milk OR regular Milk for non-vegans
3/4 Cup (175 ml) Olive Oil OR Oil of Choice OR melted coconut Oil OR melted butter (for non vegans)
1 Cup (200g) Coconut Palm Sugar OR Dark Brown Sugar
2 Tablespoon Ground Flaxseed
2 Tablespoon Lemon Juice
Zest of 2 Lemons OR Oranges
▶️ Dried Fruits & Nuts:
1/2 Cup (70 g) Ground Almonds OR Almond flour
1 Cup (150 g) Dates (Finely chopped)
1/2 Cup (100 g) Raisins (Finely chopped)
1/2 Cup (100 g) Candied Fruits & Peels OR Tutti Frutti (Optional) (finely chopped)
1/2 Cup (50 g) Walnuts (Finely chopped)
1/2 Cup (50 g) Cashew Nuts (Finely chopped)
3 Tablespoon Brandy OR Rum OR Whisky (OPTIONAL)

11/2 cups apple sauce
2 cups brown sugar
1 cup cherry
1 cup raisen
1 cup mix fruit
6 tbsp vegetable shortening
6 tbsp coconut oil
1 tbsp baking powder
1 tbsp vanilla
1 tsp salt
1 tsp nutmeg
1 tbsp cinnamon powder
1 tsp mix spice
1 tsp ginger powder
1 tsp orange ????/???? lemon zest
1/4 cup rum
1/2 cup wine
Baked @370 for 1 hour( 10 mins as needed )

INGREDIENTS:
#1 Vegan Spekulatius (Spiced Winter Cookies)
1 ½ cups spelt flour (180g)
¼ cup + 1 tbsp raw sugar (70g)
¼ tsp salt
spices: 1 tsp cinnamon, ½ tsp dried ginger, ¼ tsp cardamom, ¼ tsp allspice, a pinch of cloves
¼ cup + 2 tbsp vegan butter, cold and cut into cubes (70g)
2 tbsp unsweetened apple sauce
1-2 tbsp non dairy milk
more flour for the surface
Bake for 12-16 minutes
170 C
*makes about 20 cookies (2 baking trays)
#2 Layered Cherry, Cookies and Cream Dessert
Part 1: Cream
¾ cup cashews, boiled for 1 hour (+ if you have the time let them soak in water for a few more hours or overnight) (95g)
Juice of 1 lemon
3/4 cup plain vegan yogurt (200g)
a pinch of salt
3 tbsp raw sugar, or other sweetener
Part 2: Cookies
12 spekulatius cookies (substitute with recipe #1 or basic vegan cookies + 1 tsp gingerbread spice)
Part 3: Cherries
2 cups cherries, frozen (300g)
1 tbsp cornstarch
¼ cup water (60ml)
2 tbsp raw sugar (more if needed)
*cinnamon for the top
*serves 4-6 (6 mini desserts though)
#3 Gingerbread Bites
10-12 dates (I used deglet noor), soaked in water for 15+ min
⅓ cup hazelnuts, ground (35g)
⅓ cup almonds, ground (35g)
¾ cup oats (65g), a bit more if the dough is too wet
2 tbsp candied orange peel (orangeat)
*sub for 1 tsp orange zest
¼ cup of non dairy milk (60ml)
1 tsp cinnamon
½ tsp gingerbread spice (or pumpkin pie spice)
1/3 cup dark chocolate chips (55g) - or more if needed
1 tsp coconut oil
*makes about 15 bites
#4 A Christmas Cake
2 cups spelt flour (240g)
2 tsp baking powder
¼ tsp salt
2 tsp vanilla
1 1/2 tsp cinnamon
½ tsp dried ginger
½ tsp gingerbread spice
2 tbsp unsweetened apple sauce
⅓ cup vegan yogurt (70g)
the juice of ½ lemon
½ cup raw sugar (125g)
⅓ cup + 2 tbsp melted vegan butter (80ml + 2 tbsp)
1 cup non dairy milk (250ml)
100g candied orange peel (3.5 oz)
100g candied lemon peel (3.5 oz)
1 cup raisins (150g)
⅓ cup chopped nuts, optional (40g)
1 tbsp melted vegan butter for greasing the baking tin
THE FROSTING:
1 cup cashews, boiled for 1 hour (letting it sit for a few more hours after that) (125g)
Juice of ½ lemon
⅓ cup vegan yogurt, plain (70g)
¼ tsp salt
¼ cup raw sugar (60g)
*yields 1 8×8 or 9×9 springform pan

250 g Raisin
200 g Dried Cranberries
100 g Dried Sour Cherries
200 g Brown Sugar
175 g Vegan Butter or Margarine
Zest and juice of 1 Orange
Zest of 1 Lemon
120 ml Tea
cook for 5 minutes✅
let cool for 20 minutes☝
150 ml aquafaba
250 g plain/all-purpose flour
1/2tsp Baking Powder
1tsp Cinnamon
1tsp Ginger Powder
1tsp Cardamom
????then bake in the oven at 150C????/300F???? for 50-55
minutes ⏳ until an inserted skewer comes out clean
To feed the easy fruit cake ????
juice of 1 Orange +1 dessert spoon brown sugar (cook for 5 minutes)
