Directions:
SYRUPS: There is life beyond maple. Start with 2 cups maple syrup. Add the grated rind of half an orange and 1/3 cup orange juice; or 1/3 cup orange juice and 1 tsp ground ginger or 2 tbsp. lemon juice and the grated rind of half a lemon.
FLAVORED BUTTERS: Take 1 cup softened butter or margarine and add the flavor of your choice. Consider dates and walnuts, dried apricots and pecans, honey and ground macadamia nuts or the suggestions that follow.
HONEY-PECAN BUTTER: Toast pecans in a 350 degree oven for 8 minutes and cool, then chop. Beat 1/2 cup butter until fluffy, then add 1/4 cup honey. Mix in 1/3 cup pecans.
AUTUMN BUTTER: Beat 1/4 cup firmly packed brown sugar or honey, 1 teaspoon pumpkin-pie spice and 1/4 cup whipping cream into 1 cup softened butter.
YOGURT DRESSING: Whisk 3 parts yogurt with 1 part honey, molasses or maple syrup.
BLUEBERRY SAUCE: Put 2 tbsp. of water in a small, non-reactive saucepan. Throw in a generous helping of fresh or frozen blueberries. Cook, partially covered, until they release their juice. Too tart? Add a dash of sugar and lemon juice. Serve chunky, or puree in a blender. Strawberry, blackberries and raspberries work well, too.
APPLE-BANANA compote: Slice 1 small tart apple and 1 banana. Melt 2 tbsp. of butter in a skillet. Saute the fruit until mushy. Serve with maple syrup on top of pancakes.
APPLESAUCE DELIGHT: Puree in a blender 1 1/2 cups unsweetened applesauce, 3 tbsp. unsulfured molasses and 1 tbsp. sugar. Transfer the sauce to a small saucepan. Heat and serve.
OTHER TOPPINGS: Top pancakes with toasted pecan halves, sliced bananas or berries, a cup of whipped cream flavored with 1 tbsp of maple syrup, or 1/2 cup of sour cream with 1 tbsp of jam or preserve.

Strawberry Compôte:
Serves 4-6
750g strawberries (tops removed, cut into quarters)
70g caster sugar
100g water
2 tsp balsamic vinegar
Pinch of salt
Squeeze of lemon juice
1. Add all of the ingredients into a pan, bring to a bubble and reduce for 15-20 mins until you have a nice, thick compôte. Make sure to keep an eye on this whilst reducing, stirring every now and again to prevent the sugars from burning. Set aside ready to use as a topping later on.
Buttermilk Pancakes:
Makes 16 thick and fluffy pancakes
650g plain flour
2 tsp baking powder
1 tsp fine sea salt
1.1kg buttermilk
200ml whole milk
4 eggs (separate the yolks from the whites)
125g unsalted butter (melted)
3.5 tbsp caster sugar
1. Mix together all of the dry ingredients in a bowl, expect for the sugar.
In a separate bowl, mix together the buttermilk, milk, egg yolks and melted butter. Tip into the dry mix and fold it in to combine (don't ovemix, lumps are fine).
2. In another bowl, whisk the egg whites with an electric hand whisk until starting to look a little foamy. Start to stream in the sugar and continue to whisk util soft peaks form. Tip this into the rest of the batter and gently fold to combine. Don't overmix - if the batter is a little lumpy this is perfectly fine.
3. Pre-heat (important) a non stick pan to a medium heat, then gently spray with a thin coating of oil and tip the pancake batter into the preheated pan. Cook for 3-5 minutes on each side until golden and cooked through. Don't overcrowd the pan - cook the pancakes in batches. Set aside the cooked pancakes onto a plate and cover with a kitchen towel to stay warm. Plate the pancakes up with your toppings of choice. Enjoy!
Other Toppings:
Mint - finely chop this and sprinkle over the compôte topping
Bacon - cook in an oven of 180C until crispy (10-15 mins)
Pecan nuts - toast in a dry pan for a few minutes before crumbling up in your hands

How to make Fluffy Mini Pancakes | 1 Recipe 6 Different Toppings
This easy recipe makes pancakes that are light and fluffy and only calls for a few ingredients you probably have in your kitchen right now. So get up, and let’s do this !
Easy Fluffy Pancakes Recipe :
Ingredients :
1 ½ cup (200g) Plain Flour
2 tbsp Sugar
1 tbsp Baking Powder
½ tsp Salt
1 ¼ cup (300g) Milk
4 tbsp Oil
1 Egg
Methods :
1. Whisk flour, sugar, baking powder and salt in a medium bowl
2. Combine milk, butter and egg in another bowl
3. Make a well in the center of the flour mixture, add in the milk mixture
4. Stir until batter is smooth and well combined
5. Lightly brush skillet with oil
6. Spoon batter onto skillet. When edges look dry and bubbles start to appear and pop on the surfaces of the pancake, turn over. Cook for another 1 minute
7. And pancake is done. Serve with butter and maple syrup
