3 pt Vanilla ice cream; softened 6 tb Limeade concentrate; thawed 3 dr Green food coloring For crust, take 11 of the wafers and trim 1/4" from one end of each; set aside trimmed wafers. Crush remaining 12 wafers along with trimmed 1/4" pieces. Combine crumbs with melted butter; press onto bottom of 9" pie plate. Stand trimmed wafers upright around edge of pie plate. Freeze until crust is firm, about 1 hour. For filling, spread 1 pint vanilla ice cream over frozen crust. Combine limeade and food color. Drizzle 2 tbls mixture over ice cream. Return to freezer until firm, at least 1 hour. Repeat twice. Freeze completed pie several hours or overnight. If freezing longer, wrap pie in freezer paper. Remove from freezer and let stand 15 minutes before serving. :

This recipe for Margarita Pie is one of my favorite spring/summer Weight Watcher desserts. It is light and refreshing and tastes just like a margarita in a pie form. 6 ounces limeade, slightly defrosted 2 Tbsp light margarine 2 1/2 ounces pretzels 1 Tbsp sugar zest of lime low fat vanilla frozen yogurt 1 1/2 ounces or one shot tequila 1/2 ounce or 1 Tbsp cointreau
Blend up pretzels in food processor until fine chunks. Add in sugar, mix again. Add margarine and mix again. While the food processor is running on low, add 2 Tbsp of limeade. Press crust mixture into pie pan. Bake crust at 375 for about 5 minutes. Add 4 cups of frozen yogurt to food processor and blend. pour in remaining limeade, tequila and cointreau and mix until just blended. Put the mixture in fridge to keep cool. Once crust is baked and cooled (I put mine in the freezer to speed up the process) pour filling in crust. Add zest of lime to the top of pie, cover and freeze for at least 3-4 hours before serving.
