I call this creamy lemon pie magic pie. The filling contains just 4 ingredients (only 3, if you count the lemon zest and juice as one!) and has no eggs or gelatin. Yet, it magically sets up into a sliceable pie with an luscious filling that I DREAM about. It gets served in an easy press-in almond crust that perfectly complements the lemon flavor. You guys have have got to try this!

Do you have leftover Melomakarona after the Holidays that you don’t want to throw away? Then my VERY-OWN unique recipe for a delectable Lemon pie will revamp them and bring you a new, exciting new dessert, very easy to make.
During the festive season, I usually make 2 portions i.e. more than a 100 Melomakarona for family and friends. I end up with about 10 pcs after the end of the festivities. So I experimented and made this lemon pie to celebrate my son's Yiannis’ nameday on January 7th.
This pie has a wonderful creamy texture and that little extra tang from the addition of lemon juice & zest and Greek yoghurt. Its crust is crunchy and of course sweet and very aromatic due to the Melomakarona with Greek honey! It really makes a great combo and contrast to combine the sweetness of Melomakarona with the sour lemony taste of the filling! I can vouch that it is so good that it’s worth saving a few Melomakarona just to prepare this luscious pie that everyone will enjoy!!
Suitable for lacto-ovo vegetarians.
INGREDIENTS:
Ingredients for the crust:
320 gr/ 11 oz/ 1.5 cups / 375 ml Melomakarona crumbles, about 10 pieces!!
60 gr/ 2.1 oz / 60 ml unsalted Butter, melted
Ingredients for the filling:
1 can / 397 gr / 14 oz sweetened condensed Milk
125 ml/ 0.5 cup fresh Lemon juice (about 3 medium lemons)
4 large Egg yolks only, at room temp.
120 gr / 4.2 oz / 120 ml / 0.5 cup plain Greek Yoghurt (strained)
2.5 tbsp. grated Lemon zest
Extra Ingredients to decorate the pie:
1 Lemon cut in slices
Optional: Mint leaves
Whipped cream

Έχετε Μελομακάρονα που σας περίσσεψαν μετά τις Γιορτές και δεν θέλετε να τα πετάξετε; Η ολοδική μου, μοναδική συνταγή-δημιουργία για απολαυστική, πανεύκολη να φτιαχτεί Λεμονόπιτα θα τους δώσει νέα ζωή και θα σας προσφέρει ένα καινούργιο, συναρπαστικό νέο επιδόρπιο.
Κατά τη διάρκεια των Γιορτών, συνήθως φτιάχνω 2 δόσεις Μελομακάρονα, δηλαδή περισσότερα από 100 κομμάτια για την οικογένεια μου και για φίλους. Καταλήγω με περίπου 10 κομμάτια περίσσεμα μετά το τέλος των γιορτών. Έτσι λοιπόν, έκανα πειράματα και έφτιαξα αυτή τη Λεμονόπιτα για να γιορτάσω την ονομαστική γιορτή του γιου μου Γιάννη που είναι στις 7 Ιανουαρίου.
Αυτή η πίτα έχει μια υπέροχη κρεμώδη υφή και λίγη επιπλέον ξυνάδα από την προσθήκη χυμού λεμονιού & ξύσματος και από το ελληνικό γιαούρτι. Η βάση της είναι τραγανή και, φυσικά, γλυκιά και πολύ αρωματική λόγω των μελομακάρονων με Ελληνικό μέλι! Είναι πραγματικά ένας υπέροχος συνδυασμός και αντίθεση, η γλυκύτητα των μελομακάρονων με την ξινή γεύση του λεμονιού στη γέμιση! Μπορώ να σας εγγυηθώ ότι είναι τόσο καλό που αξίζει να φυλάξετε μερικά μελομακάρονα μόνο και μόνο για να ετοιμάσετε αυτή την πλούσια Λεμονόπιτα που όλοι θα απολαύσουν!!
Κατάλληλο για χορτοφάγους.
ΥΛΙΚΑ:
Υλικά για τη βάση:
320 γρ. / 11 oz / 1,5 φλ. / 375 ml Μελομακάρονα θρυμματισμένα, περίπου 10 κομμάτια!
60 γρ. / 2,1 oz / 60 ml Βούτυρο, λιωμένο
Υλικά για τη γέμιση:
1 κονσέρβα Ζαχαρούχο Γάλα 397 γρ. / 14 oz
125 ml / 0,5 φλ. φρεσκοστυμμένος χυμός Λεμονιού (περίπου 3 μεσαία λεμόνια)
4 μεγάλοι Κρόκοι Αυγών μόνο, σε θερμοκρασία δωματίου
120 γρ. / 4,2 oz / 120 ml / 0,5 φλ. Ελληνικό Γιαούρτι (στραγγιστό)
2,5 κ.σ. Ξύσμα λεμονιού
Επιπλέον υλικά για τη διακόσμηση της πίτας:
1 Λεμόνι κομμένο σε φετούλες
Προαιρετικά: Φύλλα μέντας
και Σαντιγύ

GRAHAM CRACKER PIE CRUST, Standard 9” size.
1/2 CUP CHOPPED PECANS, (TOASTED)
Toast pecans whole in a 350-degree oven for 7 min. Chop pecans and set aside.
1ST LAYER:
4 OZ. CREAM CHEESE (ROOM TEMP)
1/2 CUP POWDERED SUGAR
1 CUP WHIPPED TOPPING
LEMON ZEST
Mix cream cheese & sugar together until creamy, then add 1 cup of whipped topping- mix well. Mix in the chopped pecans and place in pie shell. Spread evenly. Zest your lemon over this cream cheese layer. (Reserve zest for topping)
2nd LAYER PUDDING:
3.5 OZ BOX LEMON INSTANT PUDDING MIX
1 CUP MILK
JUICE OF 1/2 LEMON, MEDIUM SIZE
Mix pudding with milk. Add lemon juice and mix. pour pudding over the cream cheese layer, then top with rest of whipped topping. Garnish top with lemon zest.
Note: In the video tutorial I put pecans on crust then spread on cream cheese. The crust wanted to break up underneath the nuts so in this recipe I have you add the pecans in with the cream cheese layer.
OPTIONS: You can use different flavors of pudding and change up this pie if you would like! Just omit the lemon juice and zest.
