WE MAKE TURTLE BARS FOR CHRISTMAS
Vlog 49-TRAVELS IN MY CHAIR with Denise. In this video, my daughter helps to make Turtle Bars, which are an old recipe from the eighties. It gets us in the mood for the Christmas season and keeps my mind focused since I had to have a CT scan at the start of December. The waiting game is always a stressful time, especially since my left hip has been hurting lately.
Heres's the recipe for TURTLE BARS
In the video, we doubled the recipe so it might be a bit confusing. Also, in this recipe, we increased the size of pan to a 9X13, because we like a thinner crust. Here goes!
TURTLE BARS (a crowd favourite)
us a 8X8 pan for a thick crust or a 9X13 for the perfect thickness of crust
1 1/2 cups oatmeal
1 cup all purpose flour
1 cup brown sugar (we use demarra)
1/2 cup room temp. butter
This is the base Mix up and pat down into an ungreased baking pan
1 cup roughly chopped pecans. Sprinkle on top.
Turn oven on to 350 degrees
In a saucepan and on medium heat only, heat
2/3 cup butter
1/2 cup brown sugar
boil for one minute stirring constantly so it doesn't burn.
REMEMBER, IN THE VIDEO WE DOUBLED THE RECIPE AND USED TWO 9X13 GLASS BAKING DISHES
Pour butter and sugar over the base and bake for 15 to 17 minutes at 350.
As soon as you remove the pan from the oven, sprinkle ONE CUP DARK CHOCOLATE CHIPS on top.
Cool slightly, then score or cut into small squares. Refrigerate until cold before you remove the deliciousness from the pan. Yumm.

Ooey-Gooey Turtle Bars | Valentine's Day Recipe | Easy Turtle Bar Cookie Recipe
Ingredients:
1roll (16.5 oz) refrigerated Pillsbury Sugar Cookie Dough
1bag (12 oz) semisweet chocolate chips (2 cups)
3cups chopped pecans (NOTE: I used 2 cups of pecans)
1/2cup butter
1/2cup packed light brown sugar
1jar (12.25 oz) caramel ice cream topping (NOTE: I used a 14oz jar)
1cup graham cracker crumbs (16 squares)
Steps:
Heat oven to 350°F (325°F for dark or nonstick pan). Press cookie dough evenly in bottom of ungreased 13x9-inch pan. Bake 10 minutes.
Sprinkle 1 cup of the chocolate chips and 1 1/2 cups of the pecans over partially baked crust. Set aside.
In 2-quart saucepan, melt butter over medium heat. Stir in brown sugar, caramel topping and graham cracker crumbs. Heat to boiling, stirring constantly. Pour over crust in pan; spread evenly. Sprinkle with remaining 1 cup chocolate chips and 1 1/2 cups pecans.
Bake 25 to 32 minutes or until edges are deep golden brown and pecans are lightly toasted. Cool on cooling rack 30 minutes; loosen sides from pan, but do not cut. Cool completely, about 3 hours longer. (For firmer bars, let stand an additional 2 hours.) For bars, cut into 6 rows by 4 rows.
