Today I want to share with you how to make the best Mexican chicken tortilla soup or also known as sopa azteca , The flavors on this soup is like no other, it’s soooo delicious and it’s perfect to enjoy on any day, any occasion, specially now that its cold!!!! This soup is not spicy at all the chiles just add a good amount of flavor, if you want it to be spicy, add Chile chipotle or arbol! So I hope you all enjoy it! Old recipe found here ????????

5 New Mexico or guajillo Chile pods
1 chile ancho
Handful of cilantro

1 tbsp whole black pepper

Turkey Tortilla Soup recipe
Today, we're going to work up everybody's cold-weather favorite: hot soup! This is one of my favorite recipes. The seasonings would be excellent with any game bird...but it's a wonderful way to make left-over turkey into a spectacular lunch! In a soup pot, bring a quart of chicken broth to a boil. Add 2 cloves of garlic...a half-cup each of chopped onions and sliced carrots...one chopped jalapeno...a cup and a half of your choice of green, yellow or red peppers...and a half cup of rice. Continue boiling until the rice is tender, about 20 minutes. When the rice is done, add a pound of cooked turkey or other game bird meat... lime juice...cumin...cilantro...and diced tomatoes. Cook until the tomato is slightly soft. Serve the soup with grated cheese, tortilla chips and a wedge of lime. It's the perfect recipe for a rainy-day lunch or a light supper in front of a fire...and it's so easy to make!

10 quarts Water
Leftover Turkey Bones And Pieces
4 Carrots
Leftover Grilled Vegetables Or Other Vegetables
1 ½ TBSP Kosher Salt
Turkey Tortilla Soup Ingredients
4 quarts Turkey Stock
1 TBSP Olive Oil
1 TBSP Minced Garlic
½ Medium Onion Chopped
1 cup Celery Chopped
16 oz Green Salsa
2-3 cups Chopped Turkey Meat
Juice Of One Lime
2 Roma Tomatoes Chopped
Salt & Pepper To Taste
Tortilla Chips
Diced Avocado
Grated Cotija Cheese

Now that the Holiday Season is here it is likely that we may have the opportunity to make good use of a turkey carcass or two. One of our favorite ways is to make roasted bone broth and then use that broth for making turkey tortilla soup for pressure canning. We love having quarts of this delicious soup in our food storage when we need to whip up a meal in a moment's notice!

Traditional:
- 4oz (113g) bacon
- 1 lb (16oz) chicken thighs, boneless & skinless
- 1 medium onion
- 5 cloves of garlic, finely chopped
- 2 Serrano chilies
- 2 teaspoons (2g) ground cumin
- 1 teaspoons (1g) ground coriander
- 1 teaspoons (1g) smoked paprika
- 1/2 teaspoons (1g) cinnamon
- 2 dried guajillo chilies, de-seeded
- 1 dried ancho chili, de-seeded
- 4 cups (960ml) chicken stock
- 2 ears of corn
-1/2 28 oz can crushed tomatoes
- salt to taste
- cilantro for garnish
- 2 avocados, diced
- 3 limes
- 1 piece Oaxaca cheese
-1 cup shredded cheddar
Fancy:
- 3-4 fried corn tortillas
- 3-4 Chicken skins
- 100ml cream
- 150ml soup
- 35g tomato paste
- salt to taste
