1 sm Chopped onion
3 Garlic cloves
1 ts Olive oil
1 sm Can chopped green chiles
1/4 c Taco seasoning (packet)
1 cn Chopped tomatoes (14.5oz)
4 cn Chicken broth (14.5 oz)
2 c Chopped turkey
1/2 c Fresh cilantro
Tortilla chips Grated cheese Saute first three ingredients in a 4 quart sauce pan until the onions are tender. Add next six ingredients and allow to simmer for 15 minutes. Put 1/2 oz. cheese and 1/2 oz. chips at the bottom of the bowl and spoon soup over cheese and chips. Makes eight 1.5 cup servings. 1/2 B, 1P, 1V, and 20 optional calories.

- 4oz (113g) bacon
- 1 lb (16oz) chicken thighs, boneless & skinless
- 1 medium onion
- 5 cloves of garlic, finely chopped
- 2 Serrano chilies
- 2 teaspoons (2g) ground cumin
- 1 teaspoons (1g) ground coriander
- 1 teaspoons (1g) smoked paprika
- 1/2 teaspoons (1g) cinnamon
- 2 dried guajillo chilies, de-seeded
- 1 dried ancho chili, de-seeded
- 4 cups (960ml) chicken stock
- 2 ears of corn
-1/2 28 oz can crushed tomatoes
- salt to taste
- cilantro for garnish
- 2 avocados, diced
- 3 limes
- 1 piece Oaxaca cheese
-1 cup shredded cheddar
Fancy:
- 3-4 fried corn tortillas
- 3-4 Chicken skins
- 100ml cream
- 150ml soup
- 35g tomato paste
- salt to taste

Everything is to your taste... use as little or as much as you like. If you like spicy, use Chipotle peppers in adobo sauce to add extra heat! Dice up one or 2 and add with veggies in the pot!! ????????
Also, top with avocado slices for a garnish. ????

Hi guys, Holiday season is here. I love cooking and eating holiday foods. However, leftovers can be a lot to handle. In order to not waste food, I came up with an idea of making this leftover turkey tortilla soup. It is absolutely delicious so give it a try! You can also use fresh chicken for this recipe, you know it does not need to be leftover lol

The pot that I used in this video is a 6qt Dutch oven.
Ingredient List:
1 chopped onion
3 cups of shredded turkey (2 chicken breast)
2 tsp of chili powder
2 tsp of cumin
Adobo all purpose seasoning ( or salt and pepper)
2 Chopped bell peppers
2 chopped fresh tomatoes (I used 2 medium size)
1 tbs of tomato paste
2 chipotle peppers in adobo sauce (or 1 can of la costeña chipotle sauce/ 2tsp of smoked paprika)
1 can of diced green chili peppers (I used the one with diced tomatoes and green chili from Aldi)
1/4 cup of roughly chopped cilantro
14 oz of crushed tomatoes
1 can of black beans
28 oz of water
2 tsp Knorr chicken broth mix (Taste the soup to adjust the saltiness)
To make your own Tortilla Strips you will need:
Corn tortillas
Oil Spray
Salt
Toppings
Tortilla strips (you can eat the soup with tortilla chips which I have done a bunch of time)
Shredded Cheddar Jack cheese
Avocados
Chopped cilantro
Lime

Today, we're going to work up everybody's cold-weather favorite: hot soup! This is one of my favorite recipes. The seasonings would be excellent with any game bird...but it's a wonderful way to make left-over turkey into a spectacular lunch! In a soup pot, bring a quart of chicken broth to a boil. Add 2 cloves of garlic...a half-cup each of chopped onions and sliced carrots...one chopped jalapeno...a cup and a half of your choice of green, yellow or red peppers...and a half cup of rice. Continue boiling until the rice is tender, about 20 minutes. When the rice is done, add a pound of cooked turkey or other game bird meat... lime juice...cumin...cilantro...and diced tomatoes. Cook until the tomato is slightly soft. Serve the soup with grated cheese, tortilla chips and a wedge of lime. It's the perfect recipe for a rainy-day lunch or a light supper in front of a fire...and it's so easy to make!
