How To make Turkey Fajitas
12 corn tortillas
6" in diameter
:
Marinade 1/4 c lemon juice
1 tsp olive oil
1 clove garlic :
minced
1/2 c bell peppers chopped
2 tsps oregano
1 tsp salt
1/2 tsp black pepper
3 c turkey light meat, skinless
cooked and cut into strips :
Onion Relish 1 tsp olive oil
1/2 c onions :
chopped
3 cloves garlic minced
2 tbsps brown sugar
3 tbsps white vinegar
3/4 c water
1/4 c tomato paste
1 tbsp worcestershire sauce
:
Topping---- 1 c fat-free cheddar cheese -- grated
To prepare marinade, combine lemon juice, 1 teaspoon olive oil, 1 clove garlic, bell peppers, oregano, salt, and black pepper in a small mixing bowl. Pour marinade over turkey in a shallow dish and stir to coat turkey. Cover and let stand 2 hours in refrigerator. Meanwhile, to prepare onion relish, combine remaining oil in a skillet over medium heat. Add remaining onions, cloves, and garlic; cook until tender. Stir in brown sugar, vinegar, water, tomato paste, and worcestershire sauce. Simmer for 15 minutes. Keep warm. Take marinaded turkey out of refrigerator and place in a skillet and stir-fry over medium-high heat until hot. Fill tortillas with turkey and top with onion relish. Sprinkle with cheese.

If you read this past #FitFriday's blog about how I stay motivated then, you know getting myself ready before hand is one of the ways I keep myself going and on track. Meal prepping is one of the things that helps me do that. So each week, I make myself something different for lunch. And I am going to try my very best to share my meals with you.
Prepping your meals is pretty easy. You need a veggie, a starch/complex carb, and protein. The more you do it, the easier it gets, and the more creative you become. Like for example this week, I wanted something along the lines of Mexican food. So I tossed together my idea of a fajita.

-Green and red bell peppers
-Onions
-Guacamole
-Fat-free sour cream or Greek yogurt
-Cheese (optional)

Very few plates at a Mexican restaurant grab your attention like a plate of sizzling fajitas. First you hear it, then you smell it…then you wish you ordered that platón instead of the chicken enchiladas.
In this video we’re cooking up Restaurant Style Fajitas. I decided to grab some outside skirts for maximum tenderness, but beware when shopping for them. This particular cut goes fast in stores as restaurants demand such large quantities of it. Either side of skirt will have you eating good either way.
And here is the weekly Pro Tip: Don’t over cook them! Common sense, I know, but you would be surprised how easy these can get away from you. Both the scorching plancha and the sizzling platter can keep the fajitas cooking even more and dry out what would otherwise be delicious and tender meat. Shoot for a medium or even medium-rare before you plate it on skillet to serve.
I always say that BBQ is simple, and although we aren’t on a live fire today the principles still apply. A scorching hot heat source, a great cut of beef and a little technique is all it takes for a dinner that will blow away any one who is lucky enough to chow down.
