How To make Turkey Enchiladas
1 10 oz can enchilada sauce
1 15.5 oz can dark red kidney beans
8 6-inch corn tortillas
1 cup shredded cooked turkey
1 cup shredded taco-flavored cheese
Place foil handles in Crock-Pot. Place 1 corn tortilla in bottom of Crock-Pot. Spoon small amount of enchilada sauce, beans, turkey and cheese over tortilla . Continue layering process until tortillas are gone. Make sure that last lay er is the cheese layer. Cook on Low 6 to 8 hours or on High 3 to 4 hours. Pul l out by foil handles and slice into pie shaped wedges for serving.

Ground turkey never tastes so good. These turkey enchiladas are stuffed with ground turkey, cheese, peppers, onions and diced tomatoes then covered in enchilada sauce with more cheese for extra cheesy goodness.
This is a dinner that the whole family will love and the fun part is that you can customize these with your favorite toppings.

Healthy Turkey Enchiladas, Easy Weeknight Dinner
These are the best ground turkey enchiladas filled with black beans, red enchilada sauce and southwest spices. ????????CLICK FOR THE RECIPE????????

INGREDIENTS
2 tablespoons avocado oil or olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
2 teaspoons chili powder
1 1/2 teaspoons ground cumin
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon kosher salt
1/4 teaspoon pepper
1 (15 ounce) can black beans, drained and rinsed
1 (14.5 ounce) can fire roasted tomatoes
1 1/2 cups can red enchilada sauce (we like Siete) or you can make your own
8-10 corn, grain free or flour tortillas
2 cups shredded Mexican cheese, or try my vegan cashew queso
INSTRUCTIONS
1️⃣ Preheat the oven to 350°F and spray a 9x13 inch casserole dish with cooking spray and set aside.
2️⃣ Heat the oil in a deep saute pan over medium heat. Once it’s hot add the onion and cook, stirring frequently, until softened. Add the garlic and cook for another minute, until fragrant.
3️⃣ Add the ground turkey, chili powder, cumin, paprika, oregano, salt and pepper and cook to break up the turkey until no pink remains, about 5 minutes. Add the fire roasted tomatoes and black beans and stir to combine then remove the mixture from the heat.
4️⃣ Place the tortillas on a microwave safe plate and cover them with a damp paper towel. Microwave them on high for 30 minutes then flip the stack over and microwave for another 30 seconds to make them softer and more pliable to work with.
5️⃣ Spread 1/4 cup of the enchilada sauce in the bottom of the prepared baking dish. Fill each tortilla evenly with the ground turkey mixture and 1 cup of the shredded cheese then roll them up tightly and arrange them in a line on top of the enchilada sauce in the baking dish.
6️⃣ Pour the remaining 1 1/4 cups of enchilada sauce evenly over the enchiladas and top with the remaining cup of shredded cheese. Bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly. If you're using vegan queso. Omit it before baking and pour it over enchiladas before serving.

Turkey Enchiladas
After the holidays we always have leftover turkey. After Christmas I decided to make Turkey Enchiladas with the leftovers. Here is a quick and easy way to use leftover turkey as a yummy main dish. Its always a favorite with our family.
The ingredients are just ones we love to add to our enchiladas. You can add whatever you would like to eat in them. My mom uses sour cream inside the turkey filling, I like to use cream of mushroom. I would have never thought to use that, but a friend mentioned we try that and it is actually quite tasty.
We heat the oven to 325 for 25-30 minutes. We cover our dish with foil and uncover the dish with 10 minutes to spare so the cheese on top is melted to our satisfaction.
Here is the list of ingredients we used in our tasty entrée:
approx. 4 cups of cooked and cubed turkey
Flour tortillas/corn -it's up to you
2-3 cans of enchilada sauce
1 container of sour cream
1 can of black olives
1 avocado
1-2 bundles of small green onions
1/2 of a sweet white onion
dash of Himalayan salt or sea salt
dash of oregano
1 can of cream of mushroom
a splash of green salsa
16 oz of mozzarella cheese or cheddar for the filling and for the top of the dish.
You will want to wake at least 10-15 minutes before plating up your entrée.
