- 1/2 cup basil or cilantro (oregano or thyme)
- 1 bunch green onion (approx. 1 cup)
- 8 garlic cloves or cubes
- 16 oz sour cream
- 16 oz plain yogurt
- 2 tablespoons salt
- 1 tablespoon pepper
**Other Ingredients to Elevate the Flavor** ????????????️
- 4 oranges & 2 lemons, grated peel divided and juice
- 4 halved limes or lemons
- 1 tablespoon red pepper flakes
- ¼ cup slivered almonds
- ½ tablespoon salt
- ½ cup of coconut milk (homemade or thick from a can)
???? **Day 1:** Let the Flavors Unite!
1️⃣ Create your Seasoning Mix: Process parsley, cilantro or cilantro, garlic, salt, and pepper. Add yogurt and mix until it's a delectable blend of flavors.
2️⃣ Lavishly season your turkey with the aromatic seasoning mix, ensuring it reaches between the skin and meat, into the cavities, and all over the skin.
3️⃣ Refrigerate your turkey for 1 to 3 days to let the magic happen.
**Cooking Day:** A Feast of Citrus Awaits!
1️⃣ Begin by preheating your oven to 375°F, then reduce the temperature to 300°F once the turkey is ready to go in.
2️⃣ Place your defrosted turkey on a rack over a baking pan, allowing it 30 minutes to prepare for its culinary journey. Stuff the turkey's belly with citrus fruit and sprinkle half of the grated peel over the breasts. Top it off with red pepper flakes, salt, and slivered almonds.
3️⃣ Add fruit juice and water to reach a 1/2 inch of cooking liquid in the pan.
4️⃣ Your turkey takes center stage in the oven!
????️ Reduce the temperature based on your turkey:
- For a Stuffed Turkey: Bake @ 325°F for a regular oven or 300°F for convection ovens, following the rule of 25 minutes per pound.
- For a NOT Stuffed Turkey: Bake @ 325°F for a regular oven or 300°F for convection ovens, with 20 minutes per pound.
6️⃣ As the grand finale, remove the fruit from the turkey's belly and add it to the pan drippings. Mix this flavorful concoction, pass it through a sieve, skim off any excess fat, and simmer until you have a lusciously concentrated sauce, about ½ or ¾ cup. Add citrus peel and ½ cup of coconut milk, mix it in, and serve alongside your turkey for an unforgettable meal!
