Gluten-Free Triple Chocolate Mousse Cake

Bottom Layer
Ingredients:
150g Bittersweet Chocolate
1/2 cup butter
4 eggs
1/3 cup sugar
1/2 cup Cocoa powder
Method:
Combine chocolate and butter in a heatproof bowl. Melt in the microwave for 50 to 60 seconds.
Mix until combined and melted. Let it cool down.
Add eggs and sugar to a different bowl and whisk until combined.
Sift cocoa powder whisk until just combined, then add chocolate mixture and stir to combine.
Pour batter into the pan and bake in the middle of the oven. Bake at 190 °C for 25-30 mins, or until the top has formed a thin crust.
Set aside to cool completely.
Remove the parchment paper and put the cake back in the pan.
Middle Layer
Ingredients:
250g Bittersweet Chocolate
300ml cold whipping cream
Pinch of salt
1 tbsp sugar
2 tbsp cocoa powder
Method:
Melt the chocolate in the microwave for 50 to 60 seconds, and whisk until smooth.
Add whipping cream, salt, sugar and cocoa powder to the bowl.
Whip until soft peaks form.
Add chocolate little by little into the whipped cream and fold with a spatula until no white streaks remain.
Spread the chocolate mousse onto the cooled bottom layer and spread evenly.
Refrigerate for 30 mins.
Note: If your cake is not cooled completely, keep the chocolate mousse in the fridge.
Top Layer
Ingredients:
300ml cold whipping cream
1 tsp Agar Agar
200g white chocolate
Method:
Mix the 100ml cold whipping cream and Agar Agar.
Microwave for 60 seconds and mix until the chocolate is smooth.
Whip 200ml cold whipping cream until soft peaks have formed. Add the chocolate mixture to the whipped cream and fold with a spatula.
Pour the mixture into the cooled middle layer and spread evenly.
Place into refrigerator until set (about 2-3 hours).
Decorate as desired.
Slice the chocolate mousse cake with a hot knife.

-Hot water 1 Cup
-Instant coffee 2 tsp
-Maida (All-purpose flour) 2 & ½ Cups
-Cocoa powder ¾ Cup
-Baking powder 1 & ½ tsp
-Baking soda ½ tbs
-Namak (Salt) ½ tsp
-Bareek cheeni (Caster sugar) 1 & ½ Cup
-Anday (Eggs) 3 (room temperature)
-Doodh (Milk) 1 Cup (room temperature)
-Cooking oil ½ Cup
-Sirka (Vinegar) ½ tbs
-Vanilla essence 2 tsp
-Makhan (Butter) soft
Prepare Chocolate Syrup:
-Cocoa powder ½ Cup
-Bareek cheeni (Caster sugar) ½ Cup
-Water hot 1 Cup
Prepare Chocolate Frosting:
-Chocolate semisweet 400g
-Whipping cream 300ml
-Vanilla essence ½ tsp
-Cocoa powder 2 tbs
Directions:
Prepare Chocolate Cake:
-In hot water,add instant coffee,mix well & set aside.
-In a bowl,place sifter,add all-purpose flour,cocoa powder,baking powder,baking soda,salt & sift together.
-Add caster sugar & mix well.
-Add eggs,milk,cooking oil,vinegar,vanilla essence & beat until well combined.
-Now add dissolved coffee,beat well & set aside.
-Grease 8” round pan with butter & line with butter paper.
-Pour the batter in greased baking pan & bake in preheated oven at 180 C for 40 minutes.
-Take out cake pan from oven and let it cool down.
Prepare Chocolate Syrup:
-In a small jug,add cocoa powder,caster sugar,hot water,whisk well & set aside.
Prepare Chocolate Frosting:
-Place a bowl on double boiler & add semisweet chocolate,whipping cream & whisk well until smooth.
-Add vanilla essence,cocoa powder & whisk until well combined.
-Let it cool,cover & refrigerate for 1 hour.
-Place the bowl on ice bath & beat until soft peaks form (approx. 10 minutes) then transfer to a piping bag.
-Remove cake from baking pan and with the help of the cake knife,horizontally cut three layers of cake.
-Place first layer of cake on cake strand,apply prepared chocolate syrup with the help of brush.
-Now add & spread prepared chocolate frosting with the help of spatula.
-Place another layer of cake and apply prepared chocolate syrup with the help of brush.
-Now spread prepared chocolate frosting & repeat the same process for top layer of cake and cover the sides of the cake with frosting.
-Decorate & chilled until serve!

-Bowl ko ice bath per rakh dein aur soft peaks form hunay tak ache tarhan beat ker lein (approx. 10 minutes) phir piping bag mein transfer ker lein.
-Cake ko baking pan sa nikal lein aur cake knife ki madad sa horizontally three layers mein cut ker lein.

This 2-ingredient chocolate cake recipe is so quick and easy to make. All you need is chocolate and eggs and you have fudgy chocolate cake! This cake is gluten free (flourless), dairy free (n butter and no milk) and can make it with your favorite chocolate brand. So whether you are lazy or just don’t have enough ingredient at the moment, you should give this easy chocolate cake a try!

5 Large eggs or 6 medium eggs, separated
315g (11oz) Semi-sweet chocolate
For topping (optional):
Powdered sugar
Ice cream/whipped cream
Directions:
1. Preheat oven to 325F (160). Grease 7-inch (18cm) round cake pan with butter, line the bottom with parchment paper. Grease the parchment as well. Set aside.
2. Chop the chocolate, place in a heatproof bowl. Set the bowl over a pot with simmering water (double boiler) and melt completely. Also you can melt in 20 second pulses in the microwave. Remove the bowl from heat and let cool slightly.
3. In a separate bowl, beat the egg whites until soft peaks form.
4. Add the egg yolks, one at the time to the chocolate and stir until combined.
5. Fold 1/3 of the egg whites into the chocolate mixture, then, repeat two more times.
6. Pour the batter into prepared pan.
7. Bake for 30 minutes.
8. Let cool, dust with powdered sugar and serve.
Notes:
• For extra airy cake add 1 more egg white.
• If this cake is too bitter, you can add few tablespoons of white/brown sugar.
• Store the cake at room temperature up to 5 days.

-Brown sugar ½ cup
-Yogurt ¾ cup (room temperature)
-Vanilla essence ½ tbs
-Vegetable Oil ½ cup
-Doodh (Milk) warm 1 Cup
-Sugar 2 & ½ tbs
-Hot water 3 tbs
-Cream 200ml
-Makhan (Butter) 1 tbs
-Milk chocolate 300g
-Instant coffee ½ tbs
-Warm water 1 tbs
Directions:
-In a bowl,add all-purpose flour,cocoa powder,baking soda,baking powder,salt,instant coffee and whisk well & set aside.
-In another bowl,add eggs,caster sugar,brown sugar and beat well.
-Add yogurt,vanilla essence,vegetable oil,milk and beat for 1 minute.
-Gradually add dry ingredients and beat well after each addition.
-Grease 10” round baking pan with cooking oil and place butter paper.
-Now pour batter in prepared baking pan and bake in preheated at 170 C for 45-50 minutes.
-Remove the cake from the oven and run a knife around the edges to loosen them from the sides of the pan.
-Transfer the cake to the wire rack and let it cool.
-In bowl,add sugar,hot water and mix until sugar is dissolved & set aside.
Chocolate Ganache:
-In double boiler,add cream,butter,milk chocolate and let it melt.
-In warm water,add instant coffee and mix well.
-Now add dissolve coffee and whisk well.
Assembling:
-With the help of the cake knife,horizontally cut top layer of the cake.
-Pour prepared chocolate ganache all over the cake and let it set for 30 minutes.
-Decorate and cut into desire slices and serve!

-Cake ko oven sa nikal lein aur cake ki sides per knife dal ker ghooma lein ta ka pan ki sides lose ho jayein.
-Cake ko wire rack per rakh dein aur thanda ker lein.
-Bowl mein cheeni aur hot water dal dein aur cheeni ghul janay tak ache tarhan mix ker lein & side per rakh dein.

-Double boiler mein cream,makhan aur milk chocolate dal dein aur melt ker lein.
-Warm water mein instant coffee dal ker ache tarhan mix karein.
-Ab dissolve coffee dal ker ache tarhan whisk ker lein.
Assembling:
-Cake knife ki madad sa cake ko do horizontally layers mein cut ker lein.
-Cake ka upper tayyar chocolate ganache pour karein aur 30 minutes kliya set hunay kliya chor dein.
