Ingredients
1 (8 oz) ball fresh mozzarella
1 (8,5 oz) jar sun-dried tomatoes in oil
1 basil bouquet or a whole tube of basil paste (4 oz)
1 cup + 1/3 cup flour
1 Tbsp baking powder
Salt and pepper to taste
1/2 cup olive oil
1/2 cup milk
3 eggs
Instructions
1 - Preheat oven to 375°F.
2 - Drain the sun-dried tomatoes and cut them into smaller pieces.
3 - Roughly cut the mozzarella in pieces.
4 - Rinse and chop the basil.
5 - Sift the flour over the bowl of a stand mixer. Add the baking powder, salt, and pepper.
6 - Add the oil and milk. Beat until smooth.
7 - Add the eggs one by one beating well between each addition.
8 - Add the sun-dried tomatoes, mozzarella, and basil (or basil paste). Beat well until combined.
9 - Pour batter into a greased and floured loaf pan.
10 - Bake for about 30 to 40 minutes.

Roasted Tomato Grilled Cheese Sandwich Recipe
Grilled cheese sandwiches with gooey melted cheese, summer roasted tomatoes, fresh basil and crispy buttery bread slices. One of the best breakfast or lunch ideas for summer days.

Ingredients
Makes about 4 sandwhiches
Roasted Tomatoes
9 oz (250g) cherry tomatoes, halved
2 garlic cloves, minced
1 tbsp (15ml) olive oil
1/2 tsp (2g) salt
Freshly ground black pepper
For the sandwhiches
1 1/2 cup (150g) cheddar cheese, grated
Butter, room temperature
Fresh basil leaves
8 bread slices
1. Prepare roasted tomatoes. Preheat oven to 375°F (190°C).
2. In a medium bowl, toss together tomatoes, garlic, olive oil, salt and pepper.
3. Place tomatoes to a baking sheet and spread into an even layer.
4. Bake for 25-30 minutes until tomatoes are roasted.
5. Prepare the sandwiches. Heat a nonstick pan over medium high heat. Spread butter on the sides of the bread. With butter side down, top with cheddar cheese, roasted tomato and basil leaves. Top with the other slice of bread, butter side up.
6. Place the sandwich on the pan and cook until the bottom is golden brown, for about 3 minutes. Flip, press with a spatula and cook the other side until crispy, golden brown and cheese is melted.
7. Serve immediately.

Tomato Basil Soup, Garlic Bread

Cooking time - 25mins
Serves 2
Ingredients
Butter - 2 tbsp
Olive oil - 1tbsp
Garlic chopped - 1tbsp
Onion chopped - ¼ cup
Kashmiri Chilli powder - ½ tbsp
Tomatoes - ½ kg
Salt - to taste
Basil leaves - few sprigs
Water - 1lt
Pepper powder - to taste
Sugar (optional) - a pinch
For Garlic Bread
Bread Slices - 3nos
Butter - 3tbsp
Garlic chopped - 1tsp
Tomato Diced - 1cup
Salt - a pinch
Pepper powder - a pinch
Basil chopped - 2tsp
Olive oil - a dash

How To Make Tomato Parmesan Basil Bread
Today I will show you how to make this delicious bread that is full of dried tomatoes, basil, and parmesan cheese. This yummy bread goes well with any soup or pasta dish. It's also great as a sandwich bread. I hope you give this a try and thanks for watching!!
2 1/2 Tsp. Yeast (1/4 oz. Packet)
3/4 C. Warm Water
2 T. Dried Basil ( 1/4 C. Fresh)
1/4 C. Parmesan Cheese
1/2 C. Dried Tomatoes
1 T. Sugar
1 T. Olive Oil
1 Tsp. Salt
1/8 Tsp. Crush Red Pepper Flakes (optional)
2 1/2 C. Flour
-Egg Wash
1 Egg Yolk
Splash Of Water
Combine water, yeast and sugar in bowl and proof for 5 minutes. Next stir in remaining ingredients and mix until well combined. Knead for 5 minutes. Place in greased bowl and let rise for 1 hour. Punch dough down and shape your loaf. Place on greased baking sheet and let rise another hour. Mix egg yolk and splash off water, brush on top of bread. Score a large X on top of your loaf with a sharp knife. Bake at 350 degrees for 30-40 minutes. Cool on a wire rack and enjoy.
