How To make Toll House Crumbcake
Combine and set aside: 2 c Flour
1 ts Soda
1 ts Baking powder
1/2 ts Salt
Combine & beat until creamy: 1 Margarine (stick) softned
1 c Plus 2 tblsp. sugar
1 ts Vanilla
3 Eggs
Topping: 4 tb Margarine (softned)
2 tb Flour
1 c Brown sugar
1/2 c Chocolate chips
1 c Walnut chips
To be used later----- 1 c Sour cream
1/2 c Chocolate chips
For the topping, mix margarine, flour, and brown sugar with fork until crumbly. Stir in the 1/2 cup of chocolate chips and nuts. Gradually add flour mixture alternately with sour cream to mixture. Fold in the other 1/2 cup chocolate chips. Spread into greased 13" x 9" pan.Sprinkle topping evenly and bake at 350~ for 45-50 minutes. Source Given to my by Peggy Weseman 7-1-95 -----

Ingredients:
Topping:
2 1/2 cups all purpose flour
1 cup light brown sugar, firmly packed
2 1/2 tsp ground cinnamon
1/2 tsp ground all spice
2 sticks of butter, melted
Cake:
1 1/2 cups all purpose flour
1/2 cup granulated sugar
2 1/4 tsp baking powder
1/2 tsp salt
2/3 cup milk
1 egg
2 Tbs vegetable oil
2 1/2 tsp vanilla extract
2 Tbs powdered sugar, to garnish
Directions:
Preheat oven to 325 degrees F. Prepare your 8x8 pan by lining it with parchment paper. Spray cooking spray between layers of parchment.
Start off by making the topping.
Mix all the topping dry ingredients until thoroughly combined.
Make a well and pour in the melted butter. Mix until fully combined and is crumbly and loose. Set aside and start on cake batter.
Mix all cake dry ingredients until thoroughly combined.
In a separate bowl, whisk together all of the cake wet ingredients.
Combine the cake dry and wet ingredients and stir until just combined.
Pour the cake batter into the prepared pan, and spread evenly from edge to edge.
Add crumb topping evenly across the cake batter. Make sure to use all of the crumb topping.
Lightly press the crumb topping into the batter.
Bake for 35-40 minutes or until the cake rises and the crumb topping cooks into the dough. You can also test for doneness with by inserting a toothpick in the center and having it come out clean.
After removing from the oven, let cool slightly.
Dust with powdered sugar. Cut into pieces, and enjoy!

***RECIPE, MAKES 9 SLICES***
For the cake:
1.5 sticks (170g) butter
2 eggs
2.25 (270g) cups flour
2 teaspoons baking powder
1 cup (140 mL) buttermilk (can use equal parts regular milk and yogurt or sour cream instead)
vanilla
1 cup (200g) brown sugar (or white sugar + dab of molasses)
1/2 cup (60g) malted milk
1/2 teaspoon salt (if using unsalted butter)
For the streusel:
1/2 stick (60g) butter
1/2 cup (60g) flour
1/2 cup (100g) sugar
1/2 cup (60g) malted milk
1 tablespoon ground cinnamon
1/2 teaspoon salt (just a pinch if using salted butter)
Take out two sticks of butter (130g, total), the two eggs and the buttermilk and let them all come up to room temperature. If you don't want to weight, you can at least warm up the butter on very low power in the microwave until it's just soft, but not melted.
Heat oven to 350ºF/180ºC, reduce 10-15 degrees if using convection.
Combine all the ingredients for the streusel in a bowl and mix them roughly with your fingertips — it should be a heterogeneous crumb.
Use some of your remaining softened butter to grease the inside of a cake pan — I used a 9 inch (23 cm) square pan, but you could use something a little smaller.
Get a mixing bowl for the batter and whip the butter and sugar for a few minutes until fluffy. Beat in the eggs one at a time, followed by the buttermilk and as much vanilla as you want (I use at least a tablespoon). Beat in the dry ingredients a little at a time until everything is in.
Pour all the batter into the pan and smooth it out. Sprinkle on the streusel and bake until a skewer or knife to the center comes out clean, maybe 50 minutes. The crumb on top will be crunchy when fresh-baked, but will soften up considerably in a day.
