How To make Toasted Mushroom Rolls
1/2 lb Mushrooms
1/4 c Butter
3 tb Flour
1/2 ts Salt
Garlic ( a pinch ) 1/2 ts Marjoram
1 c Light Cream
2 ts Chives (minced)
1 1/2 ts Lemon juice
1 pk White Bread
Finely chop mushrooms. Saute for 5 minutes in butter. Blend in flour, salt, garlic and marjoram. Stir in cream. Cook util thick. Add chives and lemon juice. Cool. Remove crust from bread and roll each slice flat. Spread mixture on bread and roll up. Cut each roll in 3 sections. Place on baking sheet; toast both sides in 400F oven for 10 to 15 minutes. NOTE: May be frozen. Defrost before serving.

Ingredients
Bacon
Enoki mushroom
2 Tbsp oyster sauce
3 Tbsp Brown sugar
1 Tbsp Soy sauce
1 tsp lemon or calamansi extract
Procedure
1. Wrap the bacon with enoki mushroom.
2. Make the sauce by mixing the oyster sauce, brown sugar, soy sauce and lemon extract.
3. Grill the bacon rolls and brush with the sauce.

PORK BELLY ENOKI MUSHROOM ROLL (五花肉卷)
I am using leftover shabu shabu pork belly from Chinese New Year (CNY) for this recipe.
This is one packet of enoki mushroom. Roll the pork belly with some enoki mushroom.
This is 3 cloves of chopped garlic.
Pan fry the pork belly roll in a hot pan until brown. Turn over and do the same for the other side. Fry in batches.
In the same pan, saute the garlic.
Add one tablespoon of shaoxing wine and one tablespoon of oyster sauce. Add one bowl of water. When the sauce comes to a boil, add the pork belly roll. Add another 2-3 tablespoons of shaoxing wine and simmer for 5 minutes.
The sauce is reduced after 5 minutes. Add one teaspoon of sesame oil and this is ready.

Mushroom chicken roll: the perfect idea for a special dinner
INGREDIENTS
For the mushrooms paste:
200g of sauté mushrooms
Salt
Pepper
For the roll:
700g of chicken breasts
Salt
200g of speck
150g of smoked cheese
Olive oil
Rosemary
For the sauce
Cooking liquid (filtered)
7g (1 tbsp) of flour
Vegetable oil
300g of mushrooms
Salt
Pepper
METHOD
1. Add the sauté mushrooms, salt, and pepper into the food processor and mix until all become a paste.
2. On the baking tray covered with parchment paper arrange the chicken breasts in two rows and cover them with one sheet. Roll out with the rolling pin to flatten them and bring together them well.
3. Arrange speck and smoked cheese on top. Spread the prepared mushrooms paste and level it up with a spoon.
4. Roll it out with the help of the parchment paper and tie it well with the cooking string on all sides. Transfer the roll to the baking tray and pour the olive oil on top. Add the sprigs of rosemary and transfer to the oven and bake at 180°C/360°F for 50 minutes.
5. Filter the cooking liquid from the roll and mix it with the flour. Pour a drizzle of oil into a pan, add the mushrooms and fry until they are soft. Add the cooking liquid, season with salt and pepper, and mix to combine all.
6. Remove the parchment paper and cooking string and transfer the roll to the plate. Pour the prepared mushrooms sauce over. Cut on slices and serve.
