How To make Title: Corn Muffins
Servings: 12
2 c cornmeal
1 c whole wheat pastry flour
6 oz tofu
3 c water
1/2 t salt
Mix flours. Crumble tofu into blender. Add boiled water and salt to tofu in blender (carefully) and blend until not quite smooth. (Just a few pulses please). Don't do this in too small blender or without lid like I did once. The goal is muffins, not 2nd degree burns. Add immediately to flour and mix well. Spoon into muffin tins or cast iron stick trays and bake at 400 degrees for about 1/2 hour until golden brown. She suggests you heat oven first and place oiled muffin tins in to heat up beforehand to get a "wonderful crust".
Please note, I have to oil the tins because I don't use Teflon products around by birds, but this might work also.....This is not sweet bread, I serve corn potato chowder with it. The corn sticks are better!

For the corn bread batter (we doubled the recipe)
1/2 cup melted butter
2 cups milk
2 large eggs
2.5 cups yellow cornmeal
2 cups AP flour
1 cup white sugar
2 tbsp baking powder
1 tsp salt
For the filling we used
2 jalapeños diced small
1.5 cups Parmesan (you can use whatever cheese you want)
Then we just cut up hot dogs and placed them right in the middle for a easy corn dog like treat. No deep frying necessary

This jiffy corn muffin hack will leave you wanting for more! It is very moist and rich. You can add either a can of cream style corn or a can of whole kernel corn drained (Do not include the liquid). You will love it ????.

Ingredients Used (makes about 12-14 muffins)
2 boxes of jiffy mix
3 eggs
2/3 cup buttermilk
7 Tbsp Melted butter @ room temperature
1 tsp pure vanilla extract
1 15oz can cream style corn (or 1 15oz drained whole kernel corn)
Bake as directed @ 400F for 15-20 Minutes or until a toothpick inserted comes out dry. *NOTE* It may take longer to bake due to the added ingredients so make sure they cook thoroughly!
For glaze
1Tbsp melted butter
1tsp honey
