How To make Title: Corn Meal Muffins
Servings: 4
1 c unbleached flour
4 t baking powder
2 T sugar
1 t salt
1 c cornmeal
2 large egg
1/4 c vegetable oil
Grease 12 2 1/2-inch muffin cups. Heat oven to 425 degrees F. Sift flour, baking powder, sugar and salt into medium-sized bowl. Add cornmeal and stir to mix well. In small bowl, beat eggs with fork. Add milk and oil. Add all at once to dry ingredients. Stir mixture only until dry ingredients are moistened. Batter will be lumpy. Drop batter from a tablespoon into the prepared muffin cups, filling each cup 1/2 to 2/3rds full. Bake 15 to 20 minutes, or until golden brown. Remove and serve hot with butter, bacon and eggs.

Honey Cornmeal Muffin
Including honey as an ingredient in a traditional cornmeal muffin enhances the flavor profile and complexity of the finished product.
It’s another family favorite – cornmeal muffins
These are so fast to make and ready to eat 5 minutes out of the oven. The cornmeal makes them crunchy and so satisfying. We hope you love these as much as we do!! Recipe origins unknown but I believe from a pamphlet I got in the 1980s!!
Ingredients:
1 cup or 120g all-purpose flour
¾ cup or 117g cornmeal
3 tablespoon sugar
1 tablespoon baking powder
1 teaspoon table salt
1 egg
2/3 cup milk
1/3 cup or 75g butter, melted
Method:
Preheat oven to 425 degrees F
Spray muffin tin with cooking oil
In small bowl mix first 5 ingredients
In medium bowl mix together remaining ingredients
Add dry ingredients to the wet ingredients and mix only until moistened
Put into muffin tins
Bake 20 minutes
Cool in pan on rack for 5 minutes
Remove from pan to rack and ready to eat immediately
These keep a few days at room temperature in a zip lock or you can freeze them for a couple of months but they never last that long for us!
