How To make Tirami Su "Pick Me Up Cake"
2 ea Egg yolks
1/2 c Sugar
1 c Mascarpone Cheese
1 pt Whipping cream, chilled
1 ts Vanilla
1 ea Genoise (sponge cake) sliced
Into 3 layers 1/4 c Sugar
3/4 c Espresso or Strong Coffee
1 oz Rum
2 tb Cocoa powder
The first set of ingredients is for the filling. 1) Whisk egg yolks and 1/4 cup of sugar together. Whisk in the Mascarpone
cheese. 2) In a seperate bowl, whip the cream, the rest of the sugar and the vanilla until almost stiff - no peaks. 3) Fold the Mascarpone cheese mixture in to the whipped cream and continue to whip, until stiff. Set aside. 4) Make a fully dissolved syrup with 1/4 cup sugar, 2 tbs water, espresso and rum. 5) Brush a layers of sponge cake with the espresso mixture. with a spatula, smooth about a 1/2 inch thick layer of the mascarpone cheese mixture on top. Brush the second layer with espresso, and place it espressso side down on the first layer. Brush the top with espresso. Spread on another 1/2 inch of the mascarpone cheese mixture. repeat the procedure with the third layer of cake. Cover the top and sides of the cakes with thin layer of the mascarpone filling. 6) With a sieve and a spoon, sprinkle the top of the cake with cocoa powder. Cover the sides of the cake with chocolate shavings. Refrigerate at least three hours. This cake does not hold up well when exposed to any heat, so keep it cool. Yield: 6 Cake
Eggless Coconut Cake
Pan Size: 6”
200g (1-1/2 cup) all purpose flour
2.5g (1/2 tsp.) baking soda
4g (1 tsp.) baking powder
1.5g (1/4 tsp.) salt
60g (1/2 cup) unsweetened coconut flakes
160g (2/3 cup) yogurt
125g (1/2 cup + 2 tbsp.) sugar
80g (1/3 cup + 1-1/2 tsp.) vegetable oil
15g (1 tbsp.) vanilla
120g (1/2 cup) coconut milk
Bake preheated 350F oven 50-55 minutes, or until golden brown and toothpick comes out clean. Time may vary depending on your oven.
Eggless Lemon Curd
100g (1/3 cup + 1-1/3 tbsp.) lemon juice
85g (1/3 cup + 1-1/2 tbsp.) sugar
13g (1-2/3 tbsp.) cornstarch
1-1/2 tsp. lemon zest
100g (1/3 cup + 1-1/3 tbsp.) milk
28g (2 tbsp.) unsalted butter
1/4 tsp turmeric, or as desired
5g (1 tsp.) vanilla
Lemon Cream
40g (2-2/3 tbsp.) cold water
6g (2 tsp.) gelatin
420g (1-3/4 cup) cream
40g (1/3 cup) icing sugar
10g (2 tsp.) vanilla
2 tsp. lemon zest
110g lemon curd
Garnish
60g (1/2 cup) toasted coconut
quartered lemon slices
lemon balm or mint

TIRAMISU
Ingredients :
Coffee - 2 tbsp
Hot Water - 1/2 cup
Unsalted Cheese - 200gm
Breakfast Sugar - 2 tbsp
Tiramisu Essence - 2 tsp
Fresh Cream - 200gm
Lady Fingers Biscuits - 1 packet
Cocoa Powder - as much needed to cover the top
Method :
•Take a small bowl
•Add 2 tbsp Coffee Powder
•1/2 cup of Hot Water
•Mix it and keep a side
•Take medium sized bowl
•Add 200gm of Unsalted Cheese
•2 tbsp Breakfast Sugar
•2 tsp Tiramisu Essence
•Mix it together with the help of blender
•Then take a Big size bowl
•Add 200gm of Fresh Cream
•Blend it till it gets fluffy
•Then add Cheese mixture in Fresh Cream
•Mix it together
•Take a Lady Finger biscuits
•Dip them into espresso (coffee mix with hot water )
•Place them into flat surface bowl
•Cover the whole bowl with biscuits
•Then spread Cream - Cheese mixture on it
•Then again put the biscuits layer
•And then Cream - Cheese layer
•Dust some cocoa powder on top
•Cover the bowl with clean wrap
•Keep it in fridge for 2 to 3 hours
•Then cut it into square pieces
•And serve it
