How To make Tirami Su"Pick Me Up Cake"
2 ea Egg yolks
1/2 c Sugar
1 c Mascarpone Cheese
1 pt Whipping cream, chilled
1 t Vanilla
1 ea Genoise (sponge cake) sliced
Into 3 layers 1/4 c Sugar
3/4 c Espresso or Strong Coffee
1 oz Rum
2 tb Cocoa powder
The first set of ingredients is for the filling. 1) Whisk egg yolks and 1/4 cup of sugar together.
Whisk in the Mascarpone cheese. 2) In a seperate bowl, whip the cream, the rest of the sugar and the vanilla until almost stiff - no peaks. 3) Fold the Mascarpone cheese mixture in to the whipped cream and continue to whip, until stiff. Set aside. 4) Make a fully dissolved syrup with 1/4 cup sugar, 2 tbs water, espresso and rum. 5) Brush a layers of sponge cake with the espresso mixture. with a spatula, smooth about a 1/2 inch thick layer of the mascarpone cheese mixture on top. Brush the second layer with espresso, and place it espressso side down on the first layer. Brush the top with espresso. Spread on another 1/2 inch of the mascarpone cheese mixture. repeat the procedure with the third layer of cake. Cover the top and sides of the cakes with thin layer of the mascarpone filling. 6) With a sieve and a spoon, sprinkle the top of the cake with cocoa powder. Cover the sides of the cake with chocolate shavings. Refrigerate at least three hours. This cake does not hold up well when exposed to any heat, so keep it cool. Tiramisu Ice Cream Log
Please read the full recipe before attempting it. I’ve listed them in easy to follow steps and the ingredients are listed under each step. ????????
Step 1
Ingredients
Vanilla Ice Cream
Leave the ice cream out for about ten minutes to soften. Spray a loaf pan with cooking spray and line with parchment paper making sure that it overlaps the top of the pan. This makes it easy to lift it out once frozen and slice into serving portions. Make sure to mould the paper well into the corners so that the ice cream takes the shape of the loaf pan nicely. Add the vanilla ice cream and smooth it out so that it’s level. Freeze for about an hour.
Step 2
Ingredients
1 1/2 tablespoons instant coffee (make it stronger if you like a rich coffee flavour)
1 1/2 cups hot water
2 tablespoons sugar
Mix and set aside to cool.
Step 3
Ingredients
Ladyfinger biscuits
Dip into cold coffee and place over the frozen vanilla ice cream layer. Freeze again.
Step 4
Ingredients
Chocolate or Coffee Ice cream
If you can’t find coffee ice cream mix some cocoa into softened vanilla ice cream or use chocolate ice cream. Be careful how this is done, we want to avoid lumps of cocoa in the ice cream. Sift a little at a time and mix making sure it’s well blended after each addition. Add this as a third layer over the ladyfinger biscuits. Freeze until solid.
Step 5
Ingredients
Cocoa
1 or 2 Flake chocolate bars
Ladyfinger biscuits
Once the coffee ice cream layer is frozen solid add another layer of ladyfinger biscuits dipped in coffee, dust a light layer of cocoa over, then gently crumble the flake bars and sprinkle evenly covering the top layer. Slice then serve immediately. Enjoy.
Variations
If you can’t find ladyfinger biscuits try using biscotti or sponge cake. The biscotti will have to be soaked for a little longer than ladyfinger biscuits. Be sure to soak them evenly all around before placing them over the ice cream layer. If using sponge cake, drizzle coffee over, evenly before placing over the ice cream.
Tips
Adjust flavour to your preference, this was a medium mild coffee flavour taste and it was very much the way I preferred it. I made my own coffee ice cream by dusting cocoa powder and blending it thoroughly into vanilla ice cream, here again adjust the flavour to your liking. Chocolate ice cream will work well too. I like a creamy rather than super sweet ice cream, so this turned out to be just the way I liked it, not overwhelmingly rich and super sweet but soothing and satisfying, perfect enough to ease that desire for a delightful dessert to satisfy your sweet tooth craving.
