Making Damson Jam/Jelly
So this weekend we decided to make some damson jam with the damsons my mum brought over with her.
This is easily my favourite jam and I love it's sweet yet sharp taste.
I'd love to hear what your favourite jam is and how you make it. I know that many people on the other side of the pond like to water bath it after it's made, but with this content of sugar it's just not worth it (also it doesn't last very long in this house I can tell you!

Jam Thumbprint Cookies Recipe
Ingredients:
1 C butter (softened)
1 C brown sugar
1 egg yolk
2 C flour
1-2 egg whites
½ - 1 cup chopped pecans

영국식디저. Homemade custard with delicious jam roly-poly, a traditional English dessert. This is an easy desert to make and comforting to eat. The custard could be served with a variety of desserts, for example, apple strudel or bananas.

Ingredients
Jam roly-poly
125g flour
75-80ml cold milk
125g strawberry jam (you could use other flavors)
50g butter (frozen)
1tsp baking powder
1tsp vanilla powder or extract or pod if you can get one.
Custard
600ml milk
1tsp vanilla powder (extract)
3 egg yolks
25g sugar
2tsp cornflour
1. First, get your oven pre-heating 180c. Into the bottom fill a tray with boiling water.
* be careful when you open the oven as there will be hot steam!
2. Sift your flour into a bowl and add your vanilla powder.
3. I put my butter into the freezer 5 min before I prepare that way it is cold enough to grate, using the cheese grater. Add your butter to the flour mixture and mix with a knife.
4. Add your milk, a little bit at a time, until your dough becomes sticky.
5. Place your dough onto a flat surface and roll out into a rectangle.
6. Spread your jam over, then roll it up.
7. Place onto your baking paper, seam down. Then loosely wrap it up, and tie off the ends, then place it into the foil and fold the ends. It will expand during cooking, so it is important not to wrap too tightly.
8. Place into your oven and allow to cook for 1hour at 180c.
9. Once getting it out of the oven allow it to sit for 5min. When you do open be careful as there might be some steam as you open the ends.
10. Cut into thick slices and serve with ice cream, cream or custard. I recommend custard.
11. Sit down and enjoy a traditional English dessert.
Custard
1. Heat the milk with the vanilla powder until just boiling.
2. Mix together the egg yolks, sugar and cornflour in a bowl to get a smooth paste.
3. Take a little of the milk from the pan and mix/ dilute with your paste.
4. Then add your mixture to your milk and stir well.
5. Stir constantly, on medium heat until the custard thickens.
