Rice noodles are my favourite thing. They check off soooo many boxes in my mind
✅ fun to eat
✅ easy & quick to cook
✅ simple in flavour so I can spice them up how I like
✅ simple ingredients
Here’s how to make this recipe:
( 1 large serving or 2 small ones )
• 1/2 red small / medium onion
• 5 cloves garlic
• 1.5” fresh ginger
• 1/2 red pepper
• 2-3 bokchoy ( cut in half )
• 2 cups red cabbage ( chopped thinly but not shredded )
• 1/2 block tempeh
• 1/2 cup frozen edamame
• 1 cup cilantro ( sub for Thai basil )
• 2 tbsp oil ( for cooking )
Sauce
• 2 tbsp soya sauce
• 1 tbsp maple syrup ( or liquid sweetener of choice )
• 1 tbsp lime juice
• 1 tbsp miso paste
• Sriracha to taste
Heat your pan on medium low, add oil, onion, ginger and garlic. Sauté until translucent and fragrant. Add the rest of your chopped veggies, season with salt cover with a lid and reduce the heat a touch.
Cook your noodles, make your sauce, chop your herb ( cilantro or Thai basil ) and cube your tempeh
Rinse your noodles and feel free to mix 1 tbsp toasted sesame seed oil into them so they don’t stick together
Once the veggies are soft but still crisp add your frozen edamame, herb and tempeh, mix and let the edamame thaw for 1-2 minutes. Add your rice noodles and sauce, mix really well and serve✨

For the Pad Thai sauce:
5 tablespoons hot water
2 tablespoons palm sugar
3 tablespoons tamarind paste
2 1/2 tablespoons fish sauce
Pinch of salt
For the Pad Thai noodles:
6 ounces dried rice noodles, medium size, rehydrate in water for 1 hour.
1 lime, cut into wedges
¼ cup roasted peanuts, chopped
2 tablespoons dried shrimp, chopped
2 tablespoons chopped sweet preserved daikon radish
2 tablespoons shallots, chopped
4 garlic cloves, chopped
1/4 cup extra-firm tofu, cut into small rectangular pieces
1 cup garlic chives, cut into 2 inches pieces
½ pound shrimp, peeled and deveined
3 tablespoons extra light olive oil, separated
2 large eggs
2 cups bean sprouts, separated

Vegetarian Pad Thai Recipe TO MAKE TONIGHT (ผัดไทย)!
LEARN HOW TO MAKE VEGGIE PAD THAI RECIPE AT HOME!
LAY HO MA!! Pad Thai is one of my favourite dishes of all time. It's got the sweet, sour, and spicy flavours packed into one easy to cook noodle dish. There's definitely a good reason why this dish is one of the most popular (if not the most popular) dishes in Thailand. Join me in this episode and learn how to make an easy vegan pad thai recipe right at home. Let's begin
Ingredients:
1/4lb fried tofu
70g broccoli
1/2 carrot
1/2 red onion
35g Chinese chives
1/4lb thin rice noodles
2 tbsp tamarind paste
1 tbsp maple syrup
2 tbsp soy sauce
1 red Thai chili pepper
drizzle of olive oil
50g bean sprouts
2 tbsp roasted peanuts
few sprigs cilantro
lime wedges to serve
Directions:
1. Bring a small saucepan of water to boil for the noodles
2. Thinly slice the fried tofu. Chop the broccoli into bite sized pieces. Thinly slice the carrot into matchsticks. Slice the red onion and chop down the Chinese chives
3. Spread the rice noodles in a pan. Then, pour in the hot water and let it soak for 2-3mins. Stir the noodles occasionally to get rid of the excess starch
4. Make the sauce by combining the tamarind paste, maple syrup, soy sauce, and a thinly sliced red Thai chili pepper
5. Heat up a nonstick pan to medium heat. Drizzle in some olive oil
6. Sauté the onions for a couple of minutes. Then, add in the tofu and broccoli. Sauté for another few minutes
7. Add in the carrots. Give it a stir
8. Add in the noodles, chives, bean sprouts, and the sauce
9. Sauté for another few minutes
10. Plate and sprinkle over some crushed roasted peanuts and freshly chopped cilantro. Serve with some lime wedges

How to make the BEST Pad See Ew at home! The secret? The right sauce, for one. And secondly, cooking the noodles separately to get some nice caramelisation on them before adding the cooked chicken and vegetables back in. Thai Street Food vendors and restaurants don't have to do this 'cause they have fiercely hot burners. Home stoves just don't have enough heat - so you have to separate them otherwise the noodles just stew and never caramelise!

Learn how to make Pad Thai Noodles which is a popular dish in the Thai cuisine.
Pad Thai or Phat Thai is a stir-fried rice noodle dish commonly served as a street food and at casual local eateries in Thailand. It is made with soaked dried rice noodles which are stir fried with eggs and tofu and flavoured with a number of sauces. But, chef Ruchi Bharani has added a vegetarian Indian twist to this Thai recipe. Check it out.
Ingredients:
1 1/2 cup boiled flat rice noodles
1 red chilli, sliced
1 stock of lemon grass, sliced
1 tbsp ginger garlic paste
2 spring onions, chopped
1 tbsp oil
1/2 cup bean sprouts
salt to taste
1 1/2 tbsp red chilli sauce
1 tbsp soya sauce
1 1/2 tbsp brown sugar
3 tbsp roasted peanuts, half crushed
Lemon juice to taste
1/2 green capsicum, cut lengthwise
1/2 red capsicum, cut lengthwise
1 tbsp tamarind paste
Method:
- Soak the rice flat noodles / pad Thai noodles in water for about 10 minutes and then drain out all water before using the noodles.
- Heat oil in a wok.
- Add the ginger garlic paste, lemon grass pieces, green capsicum, red capsicum, bean sprouts and sliced birds eye chilli and saute the ingredients.
- Add the red chilli sauce, soy sauce, tamarind paste and brown sugar and mix everything well.
- Once the sugar melts, add the noodles, some spring onions and the leaves, salt to taste, lime juice and the coarsely ground peanuts and give it a last mix.
- The noodles are ready to plate. Garnish with few spring onion leaves and coarsely ground peanuts.
- The delicious Pad Thai Noodles are ready to be served.
