How To make Thai Rice Noodles
3 c Water
7 oz Thin rice noodles
2 tb Vegetable oil
1 Garlic clove, minced
1 ts Ginger, minced
2 c Cabbage, shredded
1 c Mung bean sprouts
2 Scallions, finely chopped
2 ts Tamari
1 pn Black pepper
15 Sweet basil leaves
1/4 c Roasted peanuts, chopped
1 Lime, cut into wedges
Bring water to a boil, add noodles & cook until soft, about 4 to 5 minutes. Drain & set aside. In a wok, heat oil for 1 minute over medium-high heat. Add garlic & ginger & stir fry for 1 minute. Add cabbage & stir fry until tender crisp. Add noodles, bean sprouts, scallions, tamari & pepper. Stir fry until heated through. Mix in basil leaves. Garnish with peanuts & lime wedges & serve hot.

Prep time: 15 minutes
Rehydrate time: 1 hour
Cook time: 10 minutes
For the Pad Thai sauce:
5 tablespoons hot water
2 tablespoons palm sugar
3 tablespoons tamarind paste
2 1/2 tablespoons fish sauce
Pinch of salt
For the Pad Thai noodles:
6 ounces dried rice noodles, medium size, rehydrate in water for 1 hour.
1 lime, cut into wedges
¼ cup roasted peanuts, chopped
2 tablespoons dried shrimp, chopped
2 tablespoons chopped sweet preserved daikon radish
2 tablespoons shallots, chopped
4 garlic cloves, chopped
1/4 cup extra-firm tofu, cut into small rectangular pieces
1 cup garlic chives, cut into 2 inches pieces
½ pound shrimp, peeled and deveined
3 tablespoons extra light olive oil, separated
2 large eggs
2 cups bean sprouts, separated

PAD THAI (Stir-fried Thai Noodles)
400 g rice noodles boiled in water for 2-4 mins or until al dente
Sauce:
1/2 c brown sugar
1/2 c patis (fish sauce)
1/2 c lime juice
1-2 tbsp tamarind paste
1 tbsp soy sauce (optional for a darker Pad Thai)
Saute:
Cooking oil
2 red onions, sliced
1/2 cup minced garlic
1/2 cup spring onions
Cilantro roots
250 grams Tofu, cut into cubes
Chicken breast fillet
Shrimps
Bean sprouts
Crushed toasted peanuts
Chili flakes/ fresh red chilies
