How To make Tex Mex Pork Stew
WOMAN'S DAY; 2/1/94:
BASIC STEW:
1 1/2 pounds Boneless pork shoulder
1 cup Stock
3/4 cup Onions chopped
1/2 tablespoon Garlic cloves :
crushed
THIS VARIATION:
16 ounces Corn NOT thawed
15 ounces Black beans; canned :
drained
4 ounces Green chiles -- chopped
1/2 teaspoon Chili powder
1/2 teaspoon Oregano leaves
8 ounces Tomato sauce
1 tablespoon Flour
You may substitute lamb shoulder or beef chuck for the pork. Use beef stock for beef, chicken stock for pork or lamb. Basic stew: Trim meat of fat and cut into 1-1/2" chunks. Bring all ingredients to boil in 4-qt pot, cover tightly, reduce heat, and simmer 2-1/2 hours, until meat is tender. Crockpot directions: pile all ingredients into crockpot and cook all day on LOW. When done: skim off and discard fat. It takes less than 8 minutes to assemble this stew. Then you can pay it little or no attention as it simmers for about 2-1/2 hours. Make multiples of the basic stew, then divide stew into 4-serving portions; refrigerate or in airtight containers for up to 5 days, or freeze for up to 3 months. Thaw in microwave-safe container on defrost or in refrigerator for 24 hours. To assemble: bring basic stew, vegetables, and herbs to boil in 3-qt pot over medium-high heat. Meanwhile, whisk tomato sauce with flour until blended. Stir into stew and simmer, uncovered, 5-7 minutes, stirring occasionally, until gravy is slightly thickened. This especially easy stew is also good made with beef. Because it's prepared with pantry staples, it's perfect when you don't have time to shop or chop. Nutritional information per serving: 469 calories, 42 g protein, 44 g carbohydrate, 15 g fat, 29% of calories from fat, 114 mg cholesterol, 1396 mg sodium. ingredients: adobo sauce is good for up to 10lbs of meat
5 lbs pork shoulder/butt
2 lbs pork ribs
3 pasilla/chile ancho
20-25 New Mexico or guajillo chile pods
8 oz beer
8-10 cups of water
1 orange
1 Mexican chocolate disk
1 bolillo bread
1 tsp oregano
1 tsp marjoram
1 tsp thyme
1 tsp ground cumin
2 bay leaves
3 garlic cloves
Salt u used 6 tsp
Black pepper I used 1 tbsp

Asado Mexican Pork Stew
Asado is braised pork stew with roasted ancho chiles and smoky Mexican spices. Make this easy pork asado recipe for a tasty dinner or Cinco de Mayo meal!

Ingredients
3 pounds boneless pork shoulder cut into 2″ cubes
1 tbsp kosher salt (more if needed)
2 tbsp bacon fat or vegetable oil
1/2 cup chopped cilantro
Warm flour tortillas for serving
Chili Puree
16 ancho chiles seeded and stemmed
1 large white onion quartered
10 cloves garlic
1 tbsp dried Mexican oregano
1 tbsp ground cumin
1/2 tsp ground allspice
Toppings for Serving
Crumbled cotija cheese
Chopped cilantro
Instructions
Add the dried chiles to a large saucepan and add enough water to cover them by an inch. Bring to a boil, place lid on pan, turn heat to simmer and steam for 10 minutes. Drain and place in a blender along with the onion, garlic, oregano, cumin and allspice. Puree with 1 cup of water. Set aside.
In a bowl, toss the pork with salt. Preheat oven to 350°F (if baking).
In a large oven safe pot or Dutch oven heat the bacon fat or oil over medium high heat. Add the pork and brown on all sides, in batches if needed. Pour the chili puree over and stir to coat and mix thoroughly.
Cover the pot and either simmer on low for 2 hours or bake in oven at 350°F for 1 1/2 hours. Season to taste with salt if needed.
Serve garnished with cotija cheese crumbles and cilantro along with warm tortillas.

This is a delicious and hearty meal we love to eat at home and it is also another one of my mom’s specialties – so she’s gonna oversee me a bit in this video to make sure I cook it just like she does. What I love about this recipe and about Tex-Mex or Mexican recipes in general is that they’re really pretty easy to make if you have a good recipe. Here is what we use:
1 ½ lb Cubed Sirloin
2 Russet Potatoes
½ an onion
⅓ green bell pepper
1 roma tomato
1 bay leaf
2 garlic cloves
2 tbsp of tomato sauce
3c chicken broth
APC OG & Comino to Taste

THINGS YOU’LL NEED:
2 pounds green chili peppers of choice I used a variety – see the discussion above
2 tablespoons olive oil + more as needed
1 1/2 pounds pork shoulder cut into bite sized pieces (chuck roast is good, too)
2 tablespoons chili powder
1 tablespoon paprika
1 teaspoon cumin
Salt and pepper to taste
1 medium onion chopped
4 cloves garlic chopped
6 cups chicken broth beef broth is good, too
1 pound yellow potatoes cut into small cubes
2 medium carrots peeled and cut into small cubes
1/4 chopped cilantro or to taste (+ more for garnish)
