HUEVOS A LA MEXICANA | Mexican Scrambled Egg Breakfast ❤
RACHEL COOKS WITH LOVE VIDEOS
HUEVOS A LA MEXICANA is a delicious Mexican breakfast recipe that is nutritious and very easy to make. Because this dish is prepared with tomatoes, onions and green chilis that mirror the colors in the Mexican flag, it was given the name Huevos a la MEXICANA. This dish reminds me so much of my childhood, my mom made it often and she served it with delicious refried beans and the best salsa made in her molcajete and her famous flour tortillas. I have continued the tradition by preparing it for my family ad well when serving it to people who don't like hot chilis in their food you can totally remove the seeds to make it a delicious mild breakfast and before serving it you can fold in some chopped cilantro which is optional too. This dish is easy and hearty and is sure to please.

Your New Favorite Casserole HUEVOS RANCHEROS for Holidays or Any day ❤️
This will definitely be one of your favorite casseroles, all in one HUEVOS RANCHEROS. This casserole always comes to mind when we have family or friends over during the holidays, because it’s delicious, easy and quick to prepare. Everyone I know loves Huevos Rancheros so I never go wrong with it, and the best part is you can change it and make it your own. I have substituted the bacon for chorizo or breakfast sausage, and I’ve also prepared them without meat because simple meatless Huevos Rancheros is a winner all on its own. This casserole is always a winner in my house, and I know you will love it, I hope you give it a try. ❤️

Tamale Casserole Recipe
Ingredients. Tender cornmeal bag. Pork with empellitas. Pasta sauce spiced Great Value. 4 tablespoons very full of garlic and crushed red pepper. About three tablespoons of oil. Salt to taste. Chicken broth 1lata Great Value and a cup of milk. One or two cups of water.
Saute entreveraditas carnitas or that so we tell the fat meat. Separate them and leave the fat in the pan where it will cook the flour, season with garlic and chili sauce, saute a little and add the broth and let it cook a bit. Add flour and stir to mix match the mass start cooking immediately absorbing the broth so add milk if the flour was acidic or more broth or water, so you must try the salt if you need more. Keep a low to medium heat feeling go if grain flour gradually becomes soft. Actually this is not difficult, because its creaminess musma to try and tell us that is finished and ready to serve.
Served hot to take the figure of the plate where it serves and hardens when cooled and then serve it must split, of course it will always be smooth.
For grinding scratch cobs or corn kernels than likes because flour bag strain recommend throwing away half and peel the skin or because grains are unpleasant in the mouth and hardening the mass + + + + + +

Huevos Rancheros
2 white onions
4 Roma tomatoes, cored
2 jalapenos
2 serrano peppers
6 garlic cloves (divided)
2 guajillo chiies finely chopped
Bacon grease or fry oil
Corn tortillas
Eggs
Shredded cheese, for sprinkling
Slice the onion in half, but be sure to keep the root ends intact.
Begin by preparing the vegetables: Core the tomatoes, slice the stems off the jalapeno and serrano peppers and remove the seeds, if desired to reduce the spiciness. Slice the onions in half, but keep the root intact.
Fill a large saucepan about halfway with water. Add all the vegetables and 4 of the garlic cloves. Bring to a boil for about 10 minutes or until the tomatoes are tender, adding more water if needed.
Remove the vegetables with a slotted spoon and let cool. Peel the outer skin of the tomatoes off and discard (soaking them in cold water beforehand, will release the skin easier). Cut the stems off the jalapeno and serrano peppers, and remove the seeds, if desired. Remove the root of the onions.
Add all the vegetables, along with the remaining 2 garlic cloves to a blender, and diced guajillo peppers and Salt and pepper, to taste. Blend until smooth.
Pour the contents in a saucepan to a boil. Reduce the heat to a simmer, cover and continue to cook for 10 minutes, stirring occasionally.
Meanwhile, heat about 1 tablespoon of bacon grease or oil in a cast iron skillet. Add the tortillas and flip to coat with grease on both sides. Cook until they bubble up slightly and warm through on both sides. Be sure not to overcook until crispy.
Return to the skillet, adding more grease if needed, and add the egg(s). Fry until over-easy.
Take the tortillas and top with the egg followed by some sprinkled cheese and then the sauce. Top with more cheese. Serve immediately.
