How To make Tagalong Cheesecake
CRUST: 1 Box GS Tagalong Cookies
CAKE: 2 lb Cream cheese
1 1/4 c Sugar
2 T Flour
4 Whole eggs
2 Egg yolks
1/3 c Cream
1 t Vanilla
1 1/3 c Peanut butter
GLAZE: 8 oz Semi sweet chocolate
1 c Cream
1 t Vanilla
1 c Chopped peanuts
CRUST: Crush cookies in food processor. Press crumbs into bottom of 10" spring form pan. CAKE: Preheat oven to 425F. Beat cream cheese until smooth. Add sugar, flour, whole eggs, egg yolks, cream and vanilla. Beat until very smooth, scraping sides frequently. Pour filling over cookie crust. Bake for 15 minutes at 425F. Reduce oven temperature to 225F and bake for 50 minutes. Increase temperature to 350F and bake for 7 minutes. Place hot cake in refrigerator to cool overnight. GLAZE: Heat chocolate, cream and vanilla in microwave on high for 1-1/2 minutes. Whisk to blend completely. Place cake on serving plate. Ice top and sides of cake with glaze. Press chopped peanuts into sides for decoration.

If you are looking for a Japanese Cheesecake that is fluffy but really really moist then you found it here. I made one before (see my video list under bread and baking) baked at a high temperature consistently for a full hour but I did not achieve the dome, the top cracked and I find the top a bit dry. This time, I adjusted the temperature and achieved the dome I like, it didn't crack and it's really moist and fluffy.

✔️Be careful when separating the eggwhites & yolks....use an oil free mixing bowl (glass or aluminum)
✔️make sure to beat the eggwhites properly
✔️use the right pan, NON GREASE aluminum pan (dont use nonstick pan)
* I am using a 10 x 10 round pan in this video.
✔️ Let it cool completely UPSIDE DOWN for at least 20 minutes or more (should not be hot to touch) before removing to the pan
✔️ baking time varies from each oven... it takes around 55 to 60 minutes more or less on how big, wide or tall your baking pan, be cautious????

Ingredients:
6 eggs
1 cup sugar
1 tsp lemon juice
¹⁄₂ cup oil
(Dont substitute “oil” with melted butter)
1 cup milk
1 ³⁄₄ cup AP flour or cake flour
3 tsp baking powder
1 tsp salt
* you can add 1 tsp vanilla as well

Matcha Green Tea Cheesecake Recipe! - How to Make New York Style Cheesecake
NY Style cheesecake has to be one of my favorite all time, ride or die desserts. Its decadent, rich mouth feel is such a pleasurable experience, but once you get off that high, you realize you may have eaten a whole days worth of calories in a single bite! While I personally believe dessert should be an occasional treat that no one should feel guilty of, it's still fun to challenge yourself by experimenting with different ingredients. This cheesecake is made with Neufchatel cheese which is generally 30% less saturated fat compared to its regular full fat cousin. But based on the ultra creamy and silky texture, no one would no the better! Let's not overlook the matcha as well which adds a level of cool hipster-ness to this cheesecake, and is an underrated partner to chocolate. Try it at home and let me know what you think!
Makes 1- 9 inch (23 cm) cheesecake.
Chocolate Graham Cracker Crust
48 individual graham crackers (6 sheets or 2 packages)
4 tablespoons unsweetened cocoa powder
1/4 cup (50 g) granulated white sugar
8 tablespoons melted butter
pinch of salt (if using unsalted butter)
Preheat oven to 350 F (180 C).
Process ingredients in a food processor until finely ground and consistency of wet sand. Press into springform pan and bake for 12-15 min. or until firm to the touch. Set aside while you make the cheesecake filling.
Lower oven temperature to 325 F (160 C).
Matcha Cheesecake Filling:
32 oz. (4 packages) Neufchatel cheese
1 cup (200 g) granulated white sugar
3 large eggs + 2 egg yolks
1/2 cup (8 oz.) sour cream (reduced fat or full fat)
6 tablespoons matcha powder
1 teaspoon pure vanilla extract
Blend ingredients until smooth in a food processor. Pour into slightly cooled crust and bake for 50-55 min. or until just firm to the touch and wiggles slightly in the center when shaken. Use a small paring knife to go around the edge of the cake so it doesn't stick to the edges of the pan as it cools and contracts. Cool completely in the turned off oven with the door slightly ajar. Once cooled, cover with foil and refrigerate preferably overnight. Enjoy!
