MOCK APPLE PIE | Zucchini Filled Pie (Tastes Just Like Apple!)

Replace apple with ZUCCHINI! We dare you to tell the difference!
6 cups zucchini
1 cup sugar
1/2 cup brown sugar
1 1/2 teaspoons cinnamon
1 1/2 teaspoons cream of tartar
2 tablespoons cornstarch
1/2 teaspoon salt
2 pie dough/crust
Butter for topping
Peel zucchini and cut lengthwise to remove seeds. Slice into small chunks, 1/4 inch thick. Pour into pot and cover with water. Boil until tender, drain and let cool. Combine zucchini with remaining ingredients until smooth and pour into pie crust. Top with other crust, and brush with butter. Bake at 450 degrees for 10 minutes, then reduce the heat to 350 degrees for 45 minutes.

How to Make a Caramel Apple Pie | The Pioneer Woman - Ree Drummond Recipes
I have lots of pie recipes to share with you in the future, but among my very favorites is this absolutely delicious apple pie, adapted from a recipe given to me several years ago by a friend named Sissy. Make this, she said to me one day as she handed me a simple piece of white paper. You won't be sorry. I made it the next day. And my soul praised the state of Washington for the Granny Smiths that made the whole thing possible. I’m getting this apple dessert recipe up late, so rather than cause your eyes to roll into the back of your head by rattling on for twenty minutes about what's IN the pie, what's ON the pie, and why the pie is so dadgum good, let's just make the sucker, shall we?
Do I need to cook apples before putting them in a pie?
Nope! Some recipes will have you par-bake apples before adding them to the pie, but that's not necessary for this one. By the time this pie comes out of the oven, the apples are soft, and the pie isn't overly juicy.
What're the best apples to use for caramel apple pie?
Of all the different types of apples, I like Granny Smith. There's brown sugar in the crumb topping and who knows how much in the caramel topping, so a tart apple balances the whole thing out. If you ask me, they're one of the best apples for apple pie because they're firm enough to stay intact when they're baked so your apple pie doesn't turn to mush.
Do you use homemade or store-bought pie crust for caramel apple pie?
That's up to you. I'm not one to deny my love of a store-bought convenience product but let me tell you: homemade pie crust is truly divine! I use my friend Sylvia's Perfect Pie Crust recipe. You could do an all-butter pie crust, too.

Ingredients
FOR THE FILLING:
6 c. peeled and sliced Granny Smith apples.
Juice of 1/2 lemon
1/2 c. sugar
6 tbsp. flour
1/4 tsp. salt
FOR THE TOPPING:
3/4 c. butter
1/2 c. flour
1 c. brown sugar
1/2 c. quick oats
1/4 tsp. salt
1 pie crust
1/2 c. pecans, chopped.
1/2 jar (or more) caramel topping
Directions

Preheat the oven to 375°F.

For the filling: In a large bowl, combine the apples, lemon juice, sugar, flour, and salt. Set aside.

For the crumb topping: In a medium bowl, cut the butter into the flour using a pastry cutter, then cut in the brown sugar, oats, and salt.

Add the apples to the prepared pie shell and top with the topping. Cover the edges of the crust with aluminum foil and bake for 30 minutes. Remove the foil and place back in the oven until the edges are bubbling, 30 to 45 minutes. When 5 minutes remain, sprinkle the pecans over the pie. Finish baking. Quiver with anticipation.

Remove the pie from the oven and pour ½ jar (or more, if you’re feeling dangerous and naughty) of caramel topping over the top. Allow to cool slightly before serving, or don’t if you can’t wait. Eat. Enjoy. Smile. Cry. Then smile again.
