How To make Sweet Sour Kraut and Chops
4 md Baking potatoes, peeled and
-thinly sliced (4-cups) 1/2 c Chopped onion
6 ea Pork chops, 3/4" thick
2 tb Cooking oil
1 cn Sauerkraut, rinsed & drained
- (27-oz.) 1 cn Crushed pineapple (20-oz)
2 tb Brown sugar
1/2 ts Salt
ds Pepper In a 12 x 7 1/2 x 2-inch baking dish combine potato slices and onion. Add 1/4 cup water. Bake covered, at 350 till nearly tender, 45-minutes.
Meanwhile, in a skillet brown pork chops on both sides in hot oil. In a bowl combine sauerkraut, undrained pineapple, and brown sugar. Spoon over potato mixture. Place chops atop. Season with salt and pepper. Bake, covered, 45 minutes longer.

Today I’m sharing a classic New Year’s Day dish—Pork & Sauerkraut! Some say that because pigs “root forward,” the pork represents moving forward into the new year. Additionally the sauerkraut (fermented cabbage) represents increased wealth due to its green color. Whether or not you believe the superstition, this easy, flavorful, crockpot Pork & Sauerkraut is absolutely worth making. Happy New Year!

LOGAN FAMILY FARMS:
Pork & Sauerkraut
3 lb. boneless pork pot roast (or pork shoulder)
2 lb. bag of sauerkraut
2 gala apples
1 large sweet onion
salt, pepper, garlic powder
1 Tbsp. brown sugar
Peel and dice the apples. Peel and thinly slice the sweet onion. Spray the inside of a slow cooker with baking spray to prevent sticking. Place the pork pot roast inside the slow cooker. Season with salt, pepper and garlic powder. Pour the sauerkraut and its liquid all over the surface of the pot roast. Place the onions and apples evenly over the sauerkraut. Sprinkle the brown sugar over top. Cover and cook on LOW for 8 hours. Use two forks to shred the meat and mix everything together. Serve by itself, on sandwich buns, over mashed potatoes or egg noodles. ENJOY!

Cast Iron Cooking: Pork Chops with Apples and Sauerkraut
Ingredients:
4 thick pork chops
Salt, pepper, garlic powder to taste
1 TBSP. vegetable oil
3 large apples, peeled and cut into wedges
1 15-oz. can of sauerkraut, drained
2 TBSP. white wine (optional)
1/2 cup light brown sugar
Method:
Preheat the oven to 300F. In a cast iron skillet over medium high heat, add the vegetable oil and sear your seasoned pork chops for 3 minutes on each side. Set them aside and turn off the burner.
Mix together the sauerkraut, wine, and brown sugar in a large bowl. Add the apple wedges to the skillet, then place the pork chops on top of them. Cover everything with the sauerkraut mixture, top with some freshly ground black pepper and bake for 45 minutes.
Plate the pork chops and then mix the sauerkraut and apples well to make sure you get all of the brown sugar and juices from the bottom of the skillet. Serve with mustard and boiled potatoes or nice crusty bread and butter.
