How To make Sweet Potato and Ham Hash
1 md Sweet potato (about 1 lb)
1 lb Ham
1/2 ts Ground white pepper
1 ts Salt
6 tb Butter or margarine
8 Poached eggs
4 tb Sour cream
PREHEAT OVEN TO 250F. Wash but don't peel the sweet potato. Shred potato on fine blade of a shredder or food processor. Place in mixing bowl and set aside. Finely chop ham; pulse using puree blade of food processor. Add ham to the shredded potato. Add salt and pepper and mix well. Heat 1 tablespoon butter in a non-stick 6-inch skillet over medium heat. Add one-quarter of the potato-ham mixture. Cook about 4 minutes, pressing down gently to compact the hash as it cooks. Flip the hash patty and cook another 5 minutes. Add more butter if necessary. Repeat with remaining mixture; add more butter to skillet as needed. As each hash patty is done, transfer to oven to keep warm. Place 2 poached eggs on each serving. Garnish with a dollop of sour cream.

INGREDIENTS
1 medium to large sweet potato cubed
1/4 red onion finely diced
1/4 yellow onion finely diced
1/8 orange & yellow pepper diced
Smoked Paprika
Salt & Pepper
Olive Oil * substitute butter, coconut oil, or cooking oil preference
INSTRUCTIONS
1. Cube sweet potato and toss w/ olive oil & smoked paprika
2. Finely dice red & yellow onions
3. Dice orange & yellow pepper
4. Saute onions & peppers in olive oil until translucent (toss w/ Salt & Pepper)
5. Set saute veggies to the side
6. Using the same skillet coat the bottom w/ Olive Oil and fry sweet potatoes
7. Cover for 15 - 20 minutes(until potatoes are tender but not mushy)
8. Add sauteed veggies to fried potatoes cook for 3 -5 minutes until mixed well
9. Serve hot

sweet Potato hash recipe
Ingredients:
2 large sweet potatoes
1 yellow onion
1/8 tsp. fresh grated nutmeg
1/4 tsp. ground cinnamon
salt and pepper to taste
1 - 2 Tbsp. olive oil
Directions:
Place a large frying pan over medium high heat and add the olive oil. Once it shimmers, add the onion and sauté for 3 to 5 minutes.
Once the onion are starting to brown up and caramelize, add the sweet potato. Stir to coat the potatoes.
Cover the pan and cook for 7 to 10 minutes or until the potatoes are soft when a fork is inserted into it. Stir the potatoes every 3 minutes or so.
Season the potatoes with salt, pepper, nutmeg and cinnamon and any other spices you like. Stir again to combine.
Leaving the lid off, continue to cook an additional 2 to 3 minutes and serve with eggs, ham or bacon for breakfast.
This recipe also makes a great side dish for lunch and dinner and it freezes well. So make a big batch and freeze some for future meals. It's a great time saver.

Sweet Potato Hash Recipe
Delicious sweet potato (or yam) hash. This awesome, vibrant dish is great for breakfast, lunch, dinner, or as a side or snack. Basically, I would eat it any time of any day. Thank you to sweet potato soul for introducing me to fennel! However, if you're not a fan of licorice you may want to omit it, or use less to start out with. Enjoy!
Ingredients:
1 Sweet potato, chopped
½ onion, finely diced
¼ bell pepper, finely diced
3 mushrooms, finely chopped
Handful of spinach, roughly chopped
1/4 tsp + Paprika
1/4 tsp + Chilli spice
1/4 tsp + Fennel
1/4 tsp + Cayenne
Salt and pepper
Method:
Steam sweet potato (or use leftovers)
Pan steam (or fry) onion, mushrooms and bell pepper, adding water as it evaporates.
Add spices.
Add sweet potato/yam and spinach. Cook until spinach is wilted. Taste, and add more spices if necessary.
Recipe makes a huge serving for one person, or a side dish for 4-5.
