2 lbs Sweet Potatoes
1/2 cup white sugar
1/2 cup brown sugar
pinch of salt
pinch of nutmeg
1 teaspoon cinnamon (season to taste)
1 tsp lemon zest
2 tbsp all purpose flour
1/2 tsp vanilla extract
1/4 tsp butter extract
4 tbsp butter
2 beaten eggs
Topping:
1 Cup crushed pecans
5 tbsp melted butter
1/2 cup all-purpose flour
1 cup brown sugar
salt and cinnamon to taste

Easy Sweet Potato Casserole | No mashing involved!
Sweet potato casserole is a classic recipe when it comes to Thanksgiving. With chunks of big sweet potato, a pecan streusel topping, and a quick caramel sauce, it’s a combination of both sweet and savory. Even for those who don’t love the traditional casserole, this will be a winner!

INGREDIENTS
For the potatoes:
- 5 lb sweet potatoes, peeled and cut into 1/2-inch pieces
- 3 1/2 tbsp all-purpose flour
- 1/3 cup light brown sugar
- 1 tsp salt
- 1/2 cup maple syrup
- 1 cup heavy cream
For the pecan streusel
- 1 1/2 cups chopped toasted pecans
- 2 tbsp all-purpose flour
- 1/4 cup light brown sugar
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp ground nutmeg
- 4 tbsp unsalted butter, cut into 1/2-inch cubes
INSTRUCTIONS
- Place the peeled and chopped potatoes in a large stock pot, and fill with cold water and 1 tbsp salt, covering the potatoes by 1 inch. Bring the water to a boil over medium heat, reduce it to a simmer, and cover. Cook the potatoes until they are tender but not mushy. You want a slight texture since they will cook in the oven, 15-20 minutes.
- Preheat oven to 350°F.
- Once the potatoes are cooked, drain them and place in a greased 9×13 baking dish. Sprinkle the potatoes with brown sugar, flour, and salt. Pour over the maple syrup and heavy cream.
- In a small bowl, combine the chopped pecans, brown sugar, flour, salt, cinnamon, and nutmeg. Mix to combine. Work the pieces of the butter into the dry mixture until it resembles coarse sand. Sprinkle the streusel over the prepared potatoes.
- Bake in the preheated oven until the liquid is bubbling throughout the center and the streusel is browned, 55-60 minutes.

Its not your grandmas canned yam and marshmallow casserole.
I use fresh white and orange sweet potatoes.. and its not too sweet. The pecan streusel topping is such a great compliment to the potatoes. Give it a try as a side dish for your next dinner..You will thank me later!!!
Ingredients:
2 1/2 lbs sweet potatoes (I liked combo of white and orange)
1/2 cup heavy cream or half and half
1/3 cup pure maple syrup
1 large egg
1/2 tsp cinnamon
1/8 tsp nutmeg
1/4 tsp salt
zest of a small orange
Topping:
1 cup chopped pecans
1/2 cup all purpose flour
1/2 cup dark or light brown sugar
4 Tbsp soft buttter
1/2 tsp cinnamon

What is the difference between Sweet Potatoes and Yams?
In America the terms Sweet Potato and Yam are used interchangeably and refer to that potato looking thing with the red skin and orange flesh. Yet, you have probably seen something else in the grocery store labeled sweet potato with a light yellow skin, while your orange flesh variety is labeled yams. Guess what? Both of them are sweet potatoes!
The kind of sweet potatoes you think of as yams are simply dark skinned sweet potatoes. You won't commonly come across true yams in an American grocery store. True yams have brown or black skin and the flesh is either red, purple, or off white. Crazy, huh? You thought you've been eating yams all these years!
How to Make The Best Baked Sweet Potato Casserole
INGREDIENTS
SWEET POTATO CASSEROLE:
4 large dark skinned sweet potato, peeled and cubed
1/2 cup white sugar
2 eggs, beaten
1/2 teaspoon salt
4 tablespoons butter, softened
1/2 cup milk
1/2 teaspoon vanilla extract
PECAN STREUSEL TOPPING:
1/2 cup packed brown sugar
1/3 cup all-purpose flour
3 tablespoons butter, softened
1/2 cup chopped pecans
INSTRUCTIONS
1. Preheat oven to 325 degrees.
2. Fill a large pot with water. Bring to a boil. Add cubed sweet potatoes. Return to a boil and reduce heat to low. Simmer sweet potatoes until tender (15-20 minutes). Drain.
3. Meanwhile, in a large bowl, mix together sugar, eggs, salt, butter, milk and vanilla. Add in cooked sweet potatoes and use a hand mixer to mix until smooth. Transfer to a 9x13 inch baking dish.
4. In medium bowl prepare the streusel topping. Mix the sugar and flour together. Cut in the butter until the mixture is coarse. Stir in the pecans. Sprinkle the mixture over the sweet potato mixture.
5. Bake in the preheated oven for 30 minutes.
