Sweet Potato Cake Recipe | How to Make Sweet Potato Bread
This sweet potato cake is so moist, soft and rich. The recipe is easy to follow and even if you are not an experienced baker You'll easily make that cake.

Ingredients:
1 large sweet potato (400-450g or 14-16 oz)
1 cup (200g) white sugar
1/4 cup (50g) brown sugar
1/2 cup (120 ml) vegetable oil
1/3 cup (80 ml) water
2 large eggs
1 3/4 cups (220g) flour
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
3.5 oz (100g) walnuts
Method:
1. Wrap sweet potato with foil and bake at 450F (230C) until tender, about 1 hour.
2. Unwrap and peel the sweet potato. Transfer to a bowl and mash. Set aside and let cool while making the batter.
3. Preheat oven to 350F (175C).
4. In a large bowl beat eggs, white sugar and brown sugar. Beat for one minute. Add oil, water and beat until combined.
5. In separate bowl stir flour, baking powder, cinnamon, salt and nutmeg.
6. Add dry ingredients to wet and mix. And mashed sweet potato and mix until well combined. Fold in walnuts.
7. Pour into loaf pan.
8. Bake for 70-80 minutes. or until toothpick inserted in center comes out clean. Let cool before serving.
Note: if after 30 minutes in the oven, the bread turns too brown, cover with foil for the rest of baking.

Super Moist SWEET POTATO BREAD ????
Let's make sweet potato bread✨ It's moist, soft and oh-so-satisfying. It's the perfect snack anytime of the day ????
9x5 loaf pan
Coconut Oil 1/2 cup (105 g)
Sugar 3/4 cup (180 g)
Eggs 2
Coconut Milk 1/3 cup (100 g)
All Purpose Flour 1 3/4 cup (290 g)
Baking Soda 1 tsp
Salt 1/4 tsp
Cinnamon 1/2 tsp
Nutmeg 1/2 tsp
Mashed Sweet Potato 1 1/2 cup (14 oz before cooking)
1. Peel and dice the sweet potato. Steam over medium high heat for 20 minutes.
2. Preheat the oven to 350 F. Line a loaf pan with parchment paper.
3. In a large mixing bowl, whisk coconut oil and sugar together. Add eggs and mix; add coconut milk and mix well.
4. In another bowl, combine the dry ingredients: flour, baking soda, salt, cinnamon, and nutmeg, mix well. Check the sweet potato, mash and set aside.
5. Stir the dry ingredients into the bowl of wet ingredients, mix until just combined. Fold in the mashed sweet potato.
6. Pour the batter into a loaf pan, lightly drop the pan on the counter once to force out the air bubbles. Bake for 1 hour. When the loaf is done, insert a toothpick in the center, it should come out clean. Let cool for 30 minutes before slicing. Serve with coffee, or tea, and/or ice cream ????
Substitutions: use any cooking oil or melted butter in place of coconut oil; use milk, heavy cream, plant based milk or even water in place of coconut milk.

2-ingredient Sweet Potato Flatbread (Roti) recipe | Oil-free + Yeast-free Recipe | Vegan Recipe
✿ Veganlovlie Recipes / Yeast-free flatbread recipe: In one of my What I Ate Wednesday videos, I presented this oil-free sweet potato flatbread or roti filled with mashed avocados as what I ate for breakfast on that day ( I have had quite a few requests for the recipe since then. So, I thought I'd share the recipe; it is such an easy one with just two ingredients. Who doesn't like a 2-ingredient recipe?! One important procedure in this recipe is to use the sweet potato while it is hot. The heat makes a much softer roti.
By the way, white sweet potatoes would also work well in this recipe although the dough may require a tablespoon of water added in as white sweet potatoes tend to be a little drier than the orange ones.
These sweet potato flatbreads or rotis also keep well in an airtight container for the next day. Or you can also freeze them. When ready to use, just reheating them on a tawa or skillet and they will come back to their softness. They go well with sweet as well as savoury fillings. I do suggest you pair them with some spicy curry as their subtle sweetness makes a palatable contrast.

Gluten-Free options:
I have experimented with a store-bought gluten-free flour blend but it didn't work well. It had a blend of rice flour, tapioca flour, cornstarch and some gum. Some people have tried with chickpea flour+millet mix and they said they obtained some decent results although they had to do smaller ones because they were a bit more tricky to handle.
Other people have tried with coconut flour and reported that the rotis turned out good enough although they had to keep flouring them when rolling them out.
I suggest if you using one of these gluten-free flours/mix, you try roll then out in between 2 sheets of parchment or wax paper.
I haven't made these with any other gluten-free flour for myself but if I do find a gluten-free blend that works, I will update this.
